Ingredients2 shallots2 garlic clovesA glass (about 300ml) of white wine4 heaped tablespoons of crème fraîcheEnough linguini for two people12-16 asparagus spears (depending on thickness)SaltBlack pepper1. Simmer the linguini in boiling salted water2. While the linguini is cooking finely chop the shallots and crush the garlic and fry them in a knob of butter for a few minutes3. Add the white wine and allow to sizzle so that the alcohol burns off4. Stir in the crème fraîche and simmer until it thickens and reduces by about half5. Snap the woody ends off of the asparagus and slice each spear into bite sized pieces. Add the asparagus to the sauce, put on a lid and cook for just a couple of minutes until the asparagus is cooked6. Once the linguini is cooked drain it and stir it into the sauce. It's asparagus season and time to make this wonderful vegetable part of your diet. But what if you buy too much and want to freeze it? Or what if your local store has a sale on asparagus and you want to buy a lot and freeze it to use all summer? First, wash the selected spears. Remove the scales from the stalks with a knife and cut off any tough ends. Cut into lengths to fit your container. Next you'll want to blanch the asparagus in boiling water for different lengths of time depending on the size of the spears. Small spears need to be blanched for about 2 minutes, medium spears for 3 minutes, and large spears for 4 minutes. Take out of the water immediately and cool by placing in ice water. Once they are cool, drain and dry the spears well. Place into freezer bags or other airtight freezer containers. This meal is quick to make and very light and healthy, makes for a great summertime dinner that you can have on the table in 30 Min's, so a great after work recipe. I used veal scallops and did 4 per person, about 200g in weight for each person. I know this cut can be quite expensive so feel free to make this with veal cutlets of similar weight, taste just as good but kinder on the wallet. When my mom visits me (which she is currently doing), I love to cook meals for her that she would normally never make for herself. Being that it is supposedly spring (it was 50 degrees in Baltimore on Thursday despite the fact that it was 75 degrees on Tuesday…what is going on???), I decided to make a spring risotto. I had bought a few pounds of asparagus a few days ago in a fit of spring fever, so some of it was definitely going into the risotto. I had bought lots of beautiful asparagus from Russo's last week and needed to use it before it went bad. When I saw this Martha Stewart recipe that involved asparagus AND goat cheese, I automatically decided to make it. I really enjoy making pasta dishes, especially near the end of the week. They always give me lots of leftovers, making it easy to grab a quick meal before going out on a Friday or Saturday night. It was really quick and easy to make and involves very few ingredients. First, put the asparagus on a pan with a teaspoon of butter sprinkled around.Bake it at 450 degrees for 10-15 minutes, until it's nice and tender. Meanwhile, boil your pasta until it's al dente. The recipe called for cavatappi, but I used fusilli because I thought it was prettier (and a little less macaroni salad-ish). When you drain your pasta, be sure to save about 1 1/2 cups of the water. Easter is almost here, which means my mind is on Becky?s Easter Asparagus.Becky is my brother?s godmother, and my parents are godparents to Becky?s son Matthew. Further, Becky divorced and remarried my godfather (who had also divorced). I guess that makes Becky my step-godmother? Once removed? It's tricky. Oh, those crazy Episcopalians.Anyway, Becky is a dear family friend (our families spent a lot of time camping together; there?s something about living in tents and being grungy that brings you closer), and every year she hosts a post-church, potluck Easter lunch at her beautiful, brown-shingled house nestled in the Berkeley hills.I haven?t been to Becky?s party for many years (my parents still go, though), but I have fond memories of those Easters past. 1 1/2 pounds asparagus*1/2 teaspoon salt1/4 cup butter or margarine1/2 cup grated Gruyère or Parmesan Break off touch ends of asparagus as far down as stalks snap easily. Wash asparagus. Arrange in single layer in ungreased 11 x 7-inch dish. Sprinkle with salt. Cover with aluminum foil and bake at 350 degrees F until tender, about 25 minutes. Heat butter over low heat until light brown. Drizzle over asparagus; sprinkle with cheese. Place in oven just until cheese softens, 5 to 8 minutes. * 2 (10 ounce) packages frozen asparagus spears can be substituted for the fresh asparagus. Rinse asparagus under running cold water to separate; drain. Cover and bake for about 35 minutes.
