Glazed Grilled Salmon & Easy Baked Risotto
2008-05-06 18:18:00 I know that fall and winter holidays are touted as the ideal time for cooking and entertaining, but the pressure and the presents, not to mention the dark, cold days, make the prospect daunting, the tasks overwhelming. But give me some sunshine, flip-flops and a grill, and I?m ready for a great time, anytime, with little to no planning (and similarly, little to no housekeeping?I just herd everyone and everything outside). As the days stretch longer and the breezes blow warmer, I can think of few things better than impromptu get-togethers, to cook lavishly or simply, and welcome in the budding new season and usher out the old. It's the end of the semester here, so as good a time as any to let the summer grilling festivities begin (despite mountains of grading). I mentioned on Sunday that a friend brought back fresh salmon from Central Market in Houston this weekend, so we?ve been eating like middle-class royalty for the past few nights.I decided not to mess around too much, and stuck...

Cheerful tray-baked chicken
2008-04-29 23:05:00 I love how bright and colourful this dish is, it looks fantastic and best of all it's really easy. As it's finally warming up a bit now (at last!) I felt like cooking something summery, I had some chicken in the fridge, yet more leftover pesto which seems to keep appearing! and some really good bacon. after a quick trip to the shops i also had a good selection of Mediterranean vegetables: an aubergine, courgette's, tomatoes, mushrooms and olives. All I did was rub pesto over the chicken and wrap it in bacon. I chopped the vegetables tossed them in olive oil, balsamic vinegar, white wine, a few herbs, salt and pepper. whacked them in a baking tray, put the chicken on top and into the oven on quite high until it was nicely cooked. I basted everything every now and then to stop it going dry and it came out great and so simple. I served my chicken with couscous and poured the juices from the tray over the top. This is such a good way to cook and has endless variations, it would be gre...

Half-baked
2008-04-20 17:59:00 When you go around town, you’ll notice quite a few ongoing construction projects and new restaurants and coffee shops. There are more businesses registered with the Department of Trade & Industry, albeit mostly SMEs. It really looks like Davao City is a boomtown again. But if you look closely, you might notice some things that are a bit disappointing. Like how they’re half-baked. For example, a restaurant that looks magnificent on the outside, and might even be quite presentable inside… but doesn’t spend a peso on staff training. Or — and here’s a pet peeve of mine — a well-designed and glossy brochure that you know cost an arm and a leg to produce… but the literature is poorly written. Tonight my friends and I were at the “seawall” (where the Statue of David stands), and we were laughing at why the management felt they had to put signs on everything. Reading them just made us laugh even harder. The English was bad, ...

Baked Paprika Salad
2008-04-20 10:14:00 This salad is one of my favourites since my childhood. It is important that the paprika flesh feels thick when you touch the fresh vegetable, otherwise the whole flesh will be removed together with the peel. I have seen many versions of this salad, some people flavour it with garlic, other with different herbs. Personally I prefer it simply, with salt, vinegar and sugar. That is also the way how my mom prepares it.Ingredients:paprika1 tablespoon vinegar (20%)1 teaspoon salt1 teaspoon sugar1 tabelspoon oilPreheat oven to 200°C and bake paprika for 25-30 minutes. Put it into a pot, cover and leave it for about 30 minutes. Add some water over and peel. In a bowl prepare the marinade, mix water with salt, sugar and vinegar. Add oil on top. Leave over night in the fridge, serve chilled.

Vegetarian Mexican Tacos (With Baked Beans and Salad)
2008-04-15 12:05:00 A very popular Mexican dish, served with guacamole and sour cream. The stuffing for these Taco shells is so varied that recipes get evolved according to the taste palates. Mostly in Mexico you will find that tacos are of the soft kind. The crisp tacos seemed to have originated with the proliferation of taco stands during the late fifties. The crisp-fried corn tortilla in a U-shape is filled with layers of hot baked beans, sliced lettuce, diced tomatoes and grated cheese (usually cheddar).

Baked Eggplant Parmesan
2008-04-10 19:22:00 One of my early memories of helping out my mom in the kitchen is making eggplant parmesan once a month on Sunday evenings. As far back as I can remember, I always wanted to help in the kitchen. When I was really little, I was allowed to stir things (initially ones that weren’t on the stove, but as I got older, the stove was no longer off-limits) and I beat eggs on Sunday mornings for omelettes and stirred in seasonings, but I think that this dish was one of the first things with which she really let me get my hands dirty – both literally and figuratively. My mom would slice up the eggplant and prepare the bowl of dredging liquid (she used a thin batter made of chickpea flour and water), and she did all the frying. But I was completely in charge of everything else. I loved dipping my hands (oh, and the eggplant slices, too) into the dredging solution and then coating them in breadcrumbs. My hands would always end up a huge, sticky, crumby mess after completing a few sli...

Day 4 - Great Big Squash Up - Baked Gem Squash
2008-04-03 08:10:00 At work I got chatting to Frik, a colleague who comes from South Africa. This is one of the many conversations that I now enjoy at work. Office gossip has taken on a whole new vegetable dimension. Frik told me how his mum would make a Gem Squash recipe when he came home from school. He now lives thousands of miles away in London but regularly makes Gem Squash for supper, a reminder of home. He described how his Mum would boil the gem squash whole for about twenty minutes, then cut them in half and scoop out the seeds. She would fill them with creamed sweetcorn, topped with cheddar cheese and bake them. I took notes. Then at home I brought his mum’s recipe to life, for my children. Freddie asked what was for supper. “Is there no meat or fish in this recipe?” But when they came out of the oven and he tasted it, he smiled. “Tell Fric this is really good. And tell him his squash recipe gets the highest score.” We are on a roll with the Great Big Squash Up! Baked gem squash w...
Baked Vegetable Samosas
2008-04-02 03:08:00 I love samosas, but it’s hard to find a good one in my neighborhood in Baltimore. Now, before you tell me that there is not just one, but four Indian restaurants (actually, two of them are Indian/Nepali) within a 10 minute walk of my apartment, let me tell you something first: I’ve had samosas from three of the places (the fourth opened just a month ago), and none of them have been good. They’ve either been really greasy or the filling was flat-out bad (or both). So, what’s a girl to do? Well, of course, the answer is to make her own. But wait – said girl (that would be me) hates deep-frying. I decided that the way to get around that problem would be to use puff pastry as the wrapper for the spiced potato and peas filling, and then to bake the samosas. The puff pastry is rolled out a bit so that it doesn’t get too puffy (thereby more closely resembling a regular samosa), but it is still light, flaky, and moist. The best part is that these samosas are incredib...

Recipe #32: Baked Figs (or Pears!)
2008-03-14 16:28:00 A week or two ago, after having watched Season 1, Episode 8 of Gordon Ramsay's "The F Word," (which was automatically taped as a TiVO suggestion -- What can I say, my TiVo really does know me well!), I went to my computer & scanned the internet far & wide, looking for Janet Street Porter's delectable-looking "fig pudding" recipe, which beat out Gordon's fig tart as the winner of their "bake-off" contest. After searching everywhere, I came up empty-handed. Sigh. Maybe one of these days she'll put out a cookbook. But until then, it looks like she's keeping that recipe a family-secret. (Speaking of which, if any of you do happen to know where I can procure this recipe, I'd be very grateful for the information! ;-) )But of course I wasn't about to give up that easily. Those of you who know me, know that I am not often deterred when I'm determined to find something. So "Ha!"I decided to re-watch the bake-off contest, writing down ingredients & approximating other...

Baked Fish in Banana Leaf
2008-03-13 03:49:00 This is my husband's favourite fish dish. Phew! At least it's not expensive cod. This is just the opposite. It's cheap! It only cost me a dollar to get one Selar. But it doesn't taste cheap though. *laughs*As it's a hassle to prepare the spices, I usually do more and keep it in the fridge for a few more days. It goes quite well with squid too.If you can't get banana leaf, you can use aluminum foil, not that it taste nice lah. At least you could cover it (like a tent) to bake. So the fish won't get too dried up, exposed to direct baking and to let the fish gets the flavours. Only open up the foil to let it bake for 2 minutes at the end if you wish.Does this reminds you of those BBQ fish in Singapore? *wink*Ingredients:2 Selar Fish2 stalk Lemon Grass, slightly flatten2 slice Galangal2 Banana Leaves (big enough to wrap the fish)2 Lime, cut1/2 teaspoon Salt for marinading3 tablespoon Oil for fryingAdditional Salt to taste1/2 teaspoon SugarSpices to be grind together:3 Shallot3 cl...
Baked Egg Gratin
2008-03-11 19:43:00 I was supposed to post this a month ago, but clearly I forgot about it. After my weekend trip to NYC, where I had not one but two brunches with my friends (one of which was in fact at Five Points, and at which I indeed ate baked eggs and drank morning punch), I remembered this old post…***Brunch is an institution in NYC, and I have discovered that it’s not so much a big deal anywhere else. I suppose it has a lot to do with the fact it’s so easy to just hop on the subway and meet your friends within a half hour, regardless of where you’re going and regardless of the weather. But even if it weren't so easy, sunny Saturdays were definitely made for brunch and pavement pounding. When I woke up today, the sun was streaming through my windows and the sky was perfectly blue, and it reminded me of my weekends in NYC – I definitely would have met my friends at Five Points on a day like this and then, having been fueled on baked eggs and morning punch, roamed the East Vi...

HOME BAKED ENERGY SAVINGS
2008-03-11 00:43:00 This money saving tip falls in the category of small improvements, that add up over time, to save you money. Some cooks can tell when the bake goods are done just by using their sense of smell, the rest of us use a timer. If you are like most folks when you roast or bake something in the oven, you set a timer to remind yourself to check it when you expect it to be cooked. I know at our house, when the timer alarm goes off, the first reaction is to open the oven door and look at what ever is cooking. The next action is to organize a search party to find the big kitchen fork. When the long handle fork is located, the food in the oven gets poked a few times to see if it is done. This is usually followed by taking the food out of the oven for closer inspection. If the cooking directions were right, the food is done and ready to eat. The next step is to prepare the food item for serving and the very last action taken is to shut off the oven. You did remember to shut the oven off rig...

SPUDS-WE-LIKE...OVEN-BAKED FRIES with CRUMB FRIED FISH
2008-03-04 18:20:00 "Money is the root of all evil, and yet it is such a useful root that we cannot get on without it any more than we can without potatoes."Louisa May Alcott OVEN-BAKED FRIES...SPUDS-WE-LIKE!!While visiting London in the late 80's, we would often stop by at a quaint little potato joint called Spuds-U-Like. Spud is a slang for potato. On a cold winter evening, nothing seemed better than a hot potato, baked to perfection (or so it appeared to our hungry selves), with topping choices galore & creamy to the hilt. We (me & my bunch of friends) would stare at the potato in awe...never had we seen such a HUGE spud & we were spoilt by the choice of toppings. The eating joint has been long gone, but the spudtasty feeling remains! Such was the magic of the humble potato...& we weren't even foodies then, just cold & hungry souls!!The year 2008 has been declared the International Year of the Potato (IYP) by United Nations to raise awareness of Solanum Tuberosum.
