( Sunday) April 27th was the big day of our hiking day trip to Balsam Mountain, it had rained earlier in the morning and it looked like it would be gray skies all day. I was so psyched for this trip, and the entire time all I could think about was the weather, hoping that when the day came, that the weather would cooperate with us. It had rained earlier in the morning and I was praying the entire time that the skies would clear. I got going and started preparing sandwiches to pack with us for the trip and got the necessary gear that we were going to take with us for the day. I packed all kinds of snacks, sandwiches and beverages into our backpacks, figuring that we would work up a pretty good appetite during and after the hike. Adoro le frattaglie, i gusti forti e delicati che sanno avere, forse è dovuto che nella mia giovinezza, visto il basto costo e la situazione economica familiare dell?epoca, ne ho mangiata a volontà e di tutti i tipi, o forse è una questione genetica, sono un carnivoro convinto e nei miei geni ci deve essere un richiamo alle tradizioni ataviche probabilmente molto sviluppato; così quando ho visto un bel pezzo di cuore dal macellaio l?ho subito preso, pur sapendo che questa volta la Fra non l?avrebbe assaggiato.Il cuore ha un gusto particolare, sa essere morbido e duro allo stesso tempo, ha un richiamo dolce (forse dovuto al glicogeno?) che l?avvicina al fegato. La preparazione alla piastra è secondo me ottimale, e il contrasto coll?aceto balsamico impreziosisce il gusto della preparazione, ho aggiunto inoltre un filo di olio extra vergine toscano. I made this recipe last night as starter. It is another recipe from a recipezaar member. I bought the more expensive St. Jacques scallops which I love. I have to say it was extremely tasty and made for a light starter, but I have made other sauces that I prefer more with scallops. That is absolutely no criticism to the chef it is just my preference. I did take the advice of one of the members that had reviewed this recipe and used orange infused olive oil and aged balsamic vinegar. It makes the dish a little more expensive but judging by the flavour It was well worth it. The ingredients listed below are for 4 main meal servings, as a starter I allowed for 3-4 scallops per person St. Jacques are quite large though. I also used fresh marjoram I just prefer fresh herbs. This is one of those recipes I have had in my head for months. Strawberries and balsamic are a wonderful combination together, why not take that a step further. I have created my own easy balsamic glaze. Made mini pavlovas, filled them with fresh whipped cream, sliced strawberries and topped it all with the Balsamic glaze. It is what it is and that is Gorgeous!For the Balsamic Glaze:Take one 250 ml bottle of a standard balsamic vinegar, place in a saucepan, simmer and reduce by half. Then add 2 tablespoons of Glucose Syrup (Corn Syrup) whisk the syrup through and allow to cool. Your done. This is also the perfect glaze for roasts, steak, carrots the list goes on. This one is from food and wine magazine. One of the few magazines that I subscribe to. (what a not-surprise, since I love both food and wine). Well, I loved the idea and since I always have cauliflower and balsamic vinegar in my house, that was hardly the problem, it was scallops. I love scallops but I use it less than shrimps. The tomato is known as a healthy food.  It is juiced, stewed, canned, chopped, sauteed, baked, and broiled.  Ideally the best tasting tomato is a fresh organic fruit, right out of the garden.  Usually greenhouse grown tomatoes are free of herbicides and pesticides, but sometimes lack flavor.  Plant one yourself in the garden or in a patio pot.It's versatility has allowed it to become known the world over.   One of the simplest preparations of it is a simple salad of diced tomato flavored with balsamic vinegar and extra virgin olive oil.  This is delicious even on a slice of toasted, crusty Italian bread.  Optionally, include fresh slivered basil and a little sea salt and pepper.

Emeril Recipe1/4 cup balsamic vinegar 2 teaspoons dark brown sugar1 tablespoon chopped garlic 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper 3/4 cup olive oil Mesclun salad mix or favorite greens, for accompaniment Assortment of salad ingredients, such as cherry tomatoes, chopped carrots, sliced red onion, chopped celery, diced cucumbers, walnuts. Blue cheese, for garnishBeat the vinegar in a bowl with the optional sugar, garlic, salt and pepper until sugar and salt dissolves. Then beat in the oil by droplets, whisking constantly. (Or place all the ingredients in a screw-top jar and shake to combine.) Taste and adjust the seasonings. Toss a few tablespoons of the dressing with the salad mix and desired salad ingredients, top with blue cheese and serve immediately. If not using dressing right away, cover and refrigerate, whisking or shaking again before use.
Tuna Steak with Chilli Lemon Rice and Balsamic Rocket

Lemon and chilli are great flavours with tuna and this dish is zingy and fresh.Chop up a red onion and a pepper and fry them in chilli olive oil (or a chopped chilli in plain olive oil) for a few minutes. Stir in however much rice you want and the juice of about half a lemon, ensuring the rice is coated well. Add enough water for your amount of rice (usually twice the amount of water to rice), bring to the boil then put on a lid and simmer for about 10 minutes until the rice is cooked through. Drain the rice then add more lemon juice to taste and some chopped parsley.Pan fry the tuna steak for a few minutes each side (depending on the size of your steak). It won't take long to cook at all and be careful not to over cook it - keep it still pink in the middle.Serve with rocket drizzled with a little balsamic vinegar.
