This a yummy recipe for black bean burritos suitable for vegetarians.Ingredients1 tablespoon vegetable oil1 medium onion, chopped2 cloves garlic, minced1 1/2 teaspoons chili powder1/2 teaspoon cumin 3 cups cooked brown rice1 (15 ounce) can black beans, drained and rinsed1 (11 ounce) can corn, drained 6 (8 inch) flour tortillas 3/4 cup shredded reduced-fat Cheddar cheese 2 green onions, thinly sliced 1/4 cup plain low-fat yoghurt 1/4 cup prepared salsaDirections1. This is my 6th post for Debbie's Souper SundayWhen I asked my sons to make up the menu plan for weekdays, I expected not to deal with it any more. Far wrong, the weekly soup is still my business. This week I served the Spiced citrus bean soup The young gentlemen agreed to my choice. Hugging my mom, joking with my dad. This is pretty much all I have done in the past 24 hours. It had been a year since I last put my arms around maman and two(!) since I was able to share some fun tidbits with papa. It had never been that long but such has been life on both sides of the ocean, with timing, responsibilities, projects and happenings that we have been this long apart since I moved here. After a long delayed connecting flight and one suitcase missing, I was finally able to kiss them profusedly and start planning some fun things to do in between work and more work while they are here.Once home, we sat down to a simple meal of quiche and salad and talked for almost three hours at the dinner table. Things don't change. Time slows down a bit when they are here and I am perfectly fine with that. Unfortunately, at this present time, I have a lima bean lodged somewhere in my nasal cavity. I'm not sure exactly how this came to be. One moment I was taking a quick bite of my lunch; the next moment I was coughing and felt the vegetable rapidly travelling up my nose. While I wish this event had been avoided, there is not need to worry; this is not an unfamiliar experience for me. I once also managed to lodge a macaroni noodle deep in my nose and was able to recover. I trust I will have the same success this time around. The difference is that the macaroni incident occurred when I was around 4 years old, where the lima bean happened at 29.

The idea to make glutinous rice cakes came to me when I was at an Asian Bakery. They had tiny trays of different types of Mochi cakes, filled with red bean or some sweet stuff and covered with coconut flakes (like Japanese Daifuku). I decided to pick up some Mochiko flour at the supermarket and experiment with it at the kitchen. Mochiko flour, also known as Sweet Rice Flour, is made from short-grain glutinous rice. It has high starch content and contains no gluten. It acts great as a flour substitute for people who have gluten allergies. Mochiko flour is used commonly in Asia to make variations of rice noodles and other baked goods and desserts. It is also used as a thickening agent in sauces, similar to cornstarch.I thought about what kind of flavors to make. I decided to go simple. My husband used to like a certain canned fermented black bean fish till he had food poisoning. He was the only person who ate that and the only person who had food poisoning. So we gathered that canned fish was the culprit. Anyway, that particularly brand is nowhere to be found now. My husband said that the other available brand tasted horrible.Since he missed his fermented black bean fish so much, I came up with a replacement. Taste-wise might not be the same. Looks like summer huh?Last night for dinner we were just going to have burgers and a tomato salad but as I was cleaning out my fridge yesterday I found some green beans that I had forgotten about in the crisper. I had bought them over the weekend so they were still in great shape. I decided to make a simple salad using my garden fresh tomatoes. This salad turned out great. I had seen it years ago in one of the food magazines but can not for the life of me remember which one! Seeing as I didn't have a recipe to follow I just went by memory and taste.
