Autumn Beef Stew Recipe
2009-08-24 01:17:00
Most Swedish kids return to schools today after their 10-week-long summer vacation. It's their first day of the autumn term. The summer season is definitely over and autumn is knocking at our door. The sun does no longer brighten the nights and lengthen our sightseeing days. It?s getting colder and darker. And we get an appetite for warm meals such as soups or stews. Making this beef stew is not time consuming and it does not require hours standing over a hot stove. INGREDIENTS: serves 2 * 300 grams tender beef stew meat (preferably young elk) * 5 shallots * 250 ml (1 cup) yellow chanterelles (prepared by using the "dry saute" method ). * 300 ml cream * 1 tablespoon Worcestershire Sauce® * 1 tablespoon beef fond (or beef broth concentrate, or 1 beef stock cube) * 1 tablespoon mustard * 1 tablespoon tomato purée * butter for frying * salt and pepper to taste * fresh parsley, for garnish METHOD: 1. Cut the beef stew meat into small bite size pieces. 2. Brown the meat...

Seven Reasons Why Beef Is Not Ready For The Dinner Table
2009-06-15 22:59:00
Despite its many advocates, whenever I buy some beef and try it, I always end up going back to chicken. Chicken has what I want, and beef doesn't. The latest releases of beef got my hopes up, but I was again disappointed. Now, don't get me wrong. I like beef and I was one of the first people in my family to try some - I was even eating beef decades ago! And I have a tattoo of a cow on my back! But I think, for most diners, beef isn't ready for the dinner table, and here's why: 1) Too many cuts. Should I get loin, tenderloin, sirloin? Ribs, T-bones, tripe, tongue? Consumers are confused by all these choices; they want a wing, a drumstick, a breast, and a thigh in a bucket. 2) Lack of recipe support. Nobody knows how to cook it, except for those geeky elitist specialists who went to chef school. 3) Too complicated for Joe Sixpack. You have to cook it to a certain temperature, or else you could get some foodborne illness like "Campylobacter jejuni" or "Salmonella" or "E.Coli". L...

Fragrant Garlic Roast Beef
2009-05-25 00:15:00
Persillade, balsamic vinegar and Chinese soy give this low temperature roasted beef its aromatic flavour. Excellent on the buffet table or served as a first course for dinner. Tastes delicious! Easy to make! The most difficult task is cutting the roast thinly with a sharp knife. I'm thinking of putting an electric meat slicer on my wish list. I have never been good about keeping my knifes sharp. It's so hard to sharpen them not knowing the proper technique. How do you like your beef? Rare, medium, or well-done? It's a matter of taste. 52°C/126°F for very rare, 57°C/135°F for medium rare, or 65-75°C/149-167ºF for well done. I like my roast beef rare. As for the health issue, I'm 63 and have been healthy all my life. However, I don't eat red meat very often. INGREDIENTS: yield: about 8-10 servings * 1 kg boneless beef roast (2.2 lbs roughly) * salt and pepper MARINADE: * 1 clove garlic, peeled and pressed through a garlic press * 100 ml Chinese Soy * 100 ml bal...

Beef: It's What's For Dinner Part 2
2009-03-24 05:00:00
Easy Steak DianeThe second recipe in my Beef Week set is something I really love; Steak Diane. Using a smaller, leaner cut and adding more veggies to the plate is the perfect way to keep this meal healthy without losing any flavor. The sauce was perfect and although I wasn't able to fine the medallions called for, the still lean sirloin steak worked very well here. The steak was fork-tender and the seasonings right on. Yes, the kids all loved it and several of their growing tummies needed refills.A note on steak doneness; when I was in culinary school we were taught to check for doneness in several ways. The most common is to use a thermometer to make sure the internal temperature of the meat is correct before serving. We also learned how to check by 'feel'. Although I still do it this way, I recommend using a thermometer for safety reasons. The way that meat looks inside is not always an indicator of proper doneness; a piece of beef can look 'done' and still be under temp and,...

Ancho Chili Rubbed Roast - that beautiful dark color is not burn - it's the delicious rub. It's 'Beef Week' here at Cooking with Anne, but not like you may be thinking. Well, I have been delightfully proven wrong. Consider this: A skinless chicken breast has 3 grams of fat and a skinless chicken thigh has 9.2 grams of fat. There are 29 cuts of beef that fall within the 3 gram to 9.2 gram fat range. No ... really. Go on and check it out for yourself! Amazing, isn't it?And, if you want to know more about eating beef and your health (beyond just the fat label) check out Healthy Eatin...

Where’s the beef?
2009-02-26 13:42:00
I once worked at a company where marketing communications was looked upon as “fluff.” Management looked at us to “spin” things in a way that made it appear as if our products had some sort of added soft benefit whether they did or not. Hey, it’s just “fluff” and it’s something we need to do to sell, right? And who cares if we’re writing checks we can’t really cash… No one actually expects the stuff they read about a product or service to be entirely true and free of creative embellishments, right? In this economy, these types of transgressions and basic violations of trust with your customers and prospects just don’t fly. Now is the time for companies to really focus on creating true value for their constituents. Ways that you can save them time or money, ways that B2C firms can help their customers balance their lives at home, ways that B2B firms can contribute positively to their clients’ success. Creat...

REVEREND RUNS SAIDS KANYE WEST AND 50 CENT BEEF FAKE
2008-10-15 15:32:00
Reality show star Reverend Run has confirmed what many folks believed about the so-called beef between 50 Cent and Kanye West last year ? it was a publicity stunt designed to sell records. 50 Cent, whose real name is Curtis Jackson, vowed to quit the music business if his album "Curtis" lost out in the charts to West's "Graduation," both released on Sept. 11, 2007. Kanye won the sales battle, only to be hit with another challenge by 50 Cent to participate in a second sales race this year with their respective new albums."They are not really fighting. They are friends," the former Run DMC star tells WENN. "That was just a publicity thing for their albums. I think they are really close and nice to each other. That was just a first week sales battle."SOURCE

The beef stew is in the slow cooker! (2)
2008-09-22 23:00:00
Making beef stew in a slow cooker is a long journey. I managed to take a few snapshots last night after filling up the pot with the many ingredients. I think I went a little overboard with the ingredients and the pot was filled to the top. I also threw in some fresh parsley to add some flavor and awesome aroma.I let the beef stew slow cook overnight, for about 8 hours. When I woke up this morning, I hurried to the kitchen to check up on it. As I opened the lid, the smell of delightful beef stew burst from the pot. I was pretty amazed. I gave it a stir as I watched in excitement. I grab a soup spoon and gave it a taste. It was my first time making a beef stew, but this was not bad at all. In fact, it was very flavorful. Adding all those ingredients was a pretty awesome idea.I haven't had the chance to sit down and seriously enjoy my beef stew yet. But from how it looks, I think the stew would be perfect for a chilly evening. I plan on serving it over some white rice (since I don't ...
