For anyone who has seen The Vicar of Dibley this recipe might remind you of Mrs Cropley, the character famous for her "interesting" recipes, Lard and fish paste pancake anyone?Well when I first heard of putting beetroot in a chocolate cake I must admit Mrs Cropley came to mind!That was a long time ago and ever since I first heard of chocolate beetroot cake, strange though it sounds I've been intrigued. There are quite a few recipes around so obviously there are a few people out there who think it's a good idea, rather than just one mad cook!Anyway I finally got my chance to try it this week when we received three beetroot in our veg box.The result was surprisingly good, it was very moist and certainly not disgusting, we ate the whole thing pretty quickly! Unlike in carrot cake however where there is no carroty taste at all, there was a definite hint of beetroot in the background, I think I might try this cake again substituting carrots for the beetroot as they have a milder flavo...

I recieved an email today regarding a recipe on beetroot terrine from Michelle. Hello, whilst on a recent trip to Helsinki, I had what was described as a beetroot terrine. It was a compostion of chunky pieces of beetroot and potato but I could not work out th e other ingredients. I have done a search for this recipe but every recipe I find has a meat base. Perhaps you may know other names for this dish? Or maybe you can suggest a recipe. It was served with wild salmon. As I wrote Michelle, my best guess is that it´s a basic terrine recipe, consisting of eggs and cream, whipped together and spiced with salt and pepper and eventually some thyme, basil or oregano. The potatoes and beetroot have probably been cooked first and the cut to chuncks, and mixed with the eggcream. Put the mix in a greased alufoil form or terrine form, but never fill it up completely, because when baking the terrine, the eggs will make it rise and fill the form. Children are probably the fussiest creatures on earth. I know this because I was one of those fussy children. Children are one of the greatest sources of irrational aversions and predilections. Their fancies are capricious and their whims illogical. For example when I was young, I refused to eat anything green and would only drink milk if it was flavoured with chocolate. I also demanded that the crusts be sliced off my sandwiches, as that they were too dry and my rice had to be shaped into a dome before serving. I hated onions because I disliked the crunch I heard once they were in my mouth. I hated celery because it ?smelt funny? and I hated beetroot because, well because it was beetroot, I just didn?t like them.
