In Abschnitt II Ziffer 15 der Beurteilungsmerkmale für Brot der Leitsätze für Brot und Kleingebäck des Deutschen Lebensmittelbuches ist die Zusammensetzung von Mehrkornbrot, Dreikornbrot, Vierkornbrot etc. geregelt. Mehrkornbrote werden aus mindestens einer Brotgetreideart, sowie aus mindestens einer anderen Getreideart, insgesamt aus drei oder entsprechend mehr verschiedenen Getreidearten, hergestellt. Jede Getreideart ist mit mindestens 5% enthalten. Entsprechendes gilt für Mehrkorntoast - und Knäckebrot Da Frau Kollegin mitliest, habe ich diese Rezeptur entsprechend angepasst. Herausgekommen ist ein lecker, lockeres Sechskornbrot, dass es bei uns bestimmt nicht zum letzten Mal gegeben hat. Back in the 1700s, or whenever bread was invented, it would have (as bread does) come in a loaf. What were people supposed to do with it, just eat it that way? Put a couple of slices of bologna, and mayo (they had mayo in the 1700s, right?) and cheese on an entire loaf of bread, then put a whole 'nother loaf of bread on top of that, and eat it?Ridiculous. "Fjällbrynt Messmör" ("mountain browned soft whey butter") is a typical Swedish product made from cow's milk whey. There?s more than one variety to choose from: Original, Classic, Old-fashioned, or Light. Depending on the boiling time, colors may vary from light yellow brown to dark toffee brown. Consistency-wise, it is almost as thick as peanut butter but not that well known outside Sweden. People, who come from foreign countries, usually find "messmör" too weird to eat. It is sweet but approximately 90% of the carbohydrates come from milk sugar, which is naturally present in whey. Lactose (milk sugar) is much less sweet than plant sugar, and the carbohydrates in milk sugar are absorbed into the bloodstream more slowly than sugar carbohydrates. Nach dem herzhaften Kuchen von gestern gibt es nun heute wieder ein "normales" Brot oder wie Robert es ausdrückte, eines nach dem Reinheitsgebot. Nach dem herzhaften Kuchen von gestern habe ich gleich Brühstück und Sauerteig für ein Weizenmischbrot mit Sojaschrot, Saaten und Hafer angesetzt. Herausgekommen ist ein tolles Brot mit knuspriger Kruste und lockerer Krume. Ihrem Rezept bin ich nicht genau gefolgt. Die Worte des Meisters: Das ganze Salz immer an die Quellstücke habe ich auf Brühstücke übertragen, das Röstmalz weggelassen und das Brot nur in Sojaschrot gewälzt. Für Schüler aus Schleswig-Holstein gehörte Prag nun nicht zu den üblichen Reisezielen. Ich oute mich und gestehe, ich habe noch nie Breznak getrunken. Für das Schwarzbierbrot von Bäcker Süpke wollte ich diesem Umstand abhelfen, aber ich konnte im örtlichen Supermarkt nur Schwarzbier dieser Brauerei erwerben. Schwarzbiere sind übrigens dunkle Vollbiere, d.h. der Stammwürzegehalt liegt zwischen 11 und 16 %. Sie werden im Gegensatz zu früher untergärig hergestellt, d.h. die Hefen benötigen Temperaturen zwischen 4 und 9 °C für die Gärung. Nach der Gärung sinkt die Hefe zu Boden, während die obergärigen Hefen nach der Gärung oben auf dem Jungbier schwimmen. Hier und hier wurde das Brot modifiziert im Backrahmen bzw. im Gärkorb gebacken. Bis auf das Wälzen in Sesam habe ich mich an die Rezeptur von Bäcker Süpkes Schwarzbierbrot gehalten. Wie unschwer zu erkennen ist, war ich zu ungeduldig und habe die Brote zu früh in den Ofen eingeschossen, so habe ich "dekorative" Risse erzeugt. ...

Meine jungen Herren mögen frei geschobene Brote nicht so gerne, weil ihnen zu viel Kruste dabei ist. Ihr Beitrag lieferte die Lösung und ich musste mir unbedingt einen Backrahmen aus Ahornholz zulegen. Dann entdeckten die Herren bei diesem Bäcker ein "Bratenbrot", weil die rautenförmigen Einschnitte an die Kruste eines Schweinebraten erinnern und wollten auch so ein Brot. Auf Nachfrage handelte es sich um ein Mischbrot mit Sauerteig aus gleichen Teilen Roggen und Weizen. Gestern habe ich dann den Backrahmen eingeweiht. Drei der 4 Mischbrote 50/50 im Backrahmen habe ich unter den ArbeitskollegInnen verteilt. Die waren so begeistert, dass ich schon Vorbestellungen habe, wenn ich wieder 4 Brote auf einmal backe. Der Geschmack der jungen Herren war voll getroffen: Ein sehr leckeres Mischbrot mit Sauerteiggeschmack, so wie wir es mögen. Die Brote frisch aus dem Ofen mit einer internen Temperatur >90 °C. I have been putting away this post for the longest time possible. I made this over a month back and took step by step pictures. I was too lazy to edit and upload and post so kept picking the simple recipes to post. Today I had to share this with you because I tried making layered gobi paratha in a different way and it was so much better than the traditional method of making the paratha, addng the filling, bringing the edges together and rolling it out again before cooking it on the tawa. I have given the shots of the usual method below. Now for the different method I tried, you have to endure the whole post :D Let's start with 1 cup minced cauliflower or gobi. Make it as tiny as possible. Like this. I recently got a Philips chopper/blender/whisk set and used the chopper blade to get it minced. Its super quick and I use this for pretty much all my chopping now. Since my kitchen has lousy lighting, I don't have step-by-step pics of how I made the filling but its quite straightforwar...

Last night, Sweetie made lasagna and garlic bread. As I write this, though, I'm not sure if it was garlic bread, or if it was french bread. No problem, I like the colour which Hokkaido Pumpkins give to the bread crumb. The whole family liked it. I have already baked breads with pumpkin puree but neither this nor this had this wonderful colour. Unfortunately I had to take a picture from the whole bread with artificial light. The recipe is easy. I made a preferment from 125 g all-purpose flour (Weizenmehl 550) , 150 g water, 1/8 tsp dried yeast. About 16 h later I added 250 g pumpkin puree, 375 g all-purpose flour, 30 g toasted pumpkin seeds, 1 tsp. dried yeast and 10 g salt. Aloo Paratha really doesn't need an introduction to any Indian cuisine lover. I remember having it in an Indian restaurant in Dublin and though everything else tasted nothing (much) like Indian food, their Aloo Paratha was very near the real one. The best Alu Paratha I have ever tasted was in a well-known dhaba in Gurgaon lovingly called the Convergys Dhaba. Darsh took me there during one of our many visits to Gurgaon and I will never forget the taste of that paratha which was super-thick, soft, oozing in butter with a square butter piece on top that melts around the paratha as you eat. And they serve it with a really nice achaar (pickle). The paratha was hot till I finished eating it, that's how thick it was. Bread Baking Babes' Kitchen of the month is located in the Netherlands. Monique from Living on Bread and Water chose an ancient recipe for Sûkerbôlle, a Frisian sugarbread. The recipe calls for sugar grains/lumps and ginger syrup. The latter was easy to get but the largest sugar grains I can get in Germany is hailstone sized Hagelzucker. Of course we have lump-sugar, which I don't use, but the decorating sugar I have always at hand. This sugar doesn't give these big holes in the crumb, but it looks nice on the bread. In Schleswig-Holstein, where I live, we have also a Frisian part: Nordfriesland or North Frisia. And of course we have those beautiful black and white cows, the Holstein-Friesian. We don't have any cows in our backyard like Tanna, but I was able to take a picture with cows ;-) ... ... no chance for them to move. Er hat sein Brot als erstes nachgebacken. Dann folgte sie und auch sie ist ganz angetan: Will heißen sowohl Nils, als auch Eva und Zorra backten Brot von Bäcker Süpke. Hier bei mir geht es um ein Roggenmischbrot (70/30) mit Roggensauerteig und Hebel. Wer jetzt denkt, es würde entweder ein um eine feststehene Achse drehbarer Körper (Stange, Brett) zum Heben oder Verschieben von Lasten oder eine bewegende Kraft in das Brot eingebacken, der irrt. Bei einem Hebel handelt es sich um einen Vorteig, der aus ca. 10% der gesamten Mehlmenge, wenig Salz und ganz wenig Hefe hergestellt wird. Da unsere Familie sehr gerne Roggenmischbrote isst, habe ich - wie es der Zufall so will - das Brot auch nachgebacken. Allerdings habe ich noch geröstete Hanfnüsse zugefügt. Herausgekommen ist ein ausgesprochen, saftiges Hanfnuss-Joghurtbrot auf das sich meine drei Herren mit besonderem Appetit gestürzt haben.
