2008-05-17 00:00:00 Ein weiteres Brot aus der Rezeptsammlung der Allgemeinen Bäckerzeitung. Dieses Dinkelbrot mit Sauerteig wurde zur 100-Jahr-Feier der Städt. Berufschule für Bäcker und Konditoren von Schülern entwickelt und wird offensichtlich nur in Münchner Innungsbetrieben produziert. Ich habe das Brot inzwischen 2-mal gebacken, einmal nur mit Dinkelmehl Type 630 und einmal mit einer Mischung aus Dinkelmehl Type 630 und Dinkelvollkornmehl. Und beide Male sahen meine Brote nicht so aus wie hier, sondern so: Es sind wirklich sehr leckere Brote, die durch die lange Teigführung einen sehr guten, mild-aromatischen Geschmack aufweisen. There's absolutely no difference in taste between the dairy and non dairy versions. The two cups of mashed bananas make this a very moist banana bread. Ingredients 2 c. overripe bananas, mashed 1/2 c. Earth Balance vegan "butter" 1 1/2 c. unbleached all-purpose flour 2 eggs, beaten 1 c. sugar 1 tsp. baking soda 1 tsp. vanilla 1/2 t. salt Directions Preheat oven to 350 degrees. Cream butter and sugar together with a wooden spoon. Add beaten eggs and mix them in. Add vanilla, baking soda, and salt. Add mashed bananas and flour and mix everything well. There may be a few small banana lumps but that's okay. If you prefer a perfectly smooth batter you can use a mixer. Government claims that inflation stands at 2.5% (CPI) this month are very misleading to say the least. The CPI is staying low because "nice to have" goods are holding their price. However the price of "must have" goods such as milk (up 17%) and bread (up 25%) is shooting up. This will obviously have the greatest impact on the poorest in our society. Scrapping the 10p tax rate could not have come at a more damaging time for the 5 million affected. Monthes ago I baked this bread already, however I was not completly happy with it and it was the perfect occasion to retry. I like its taste very much, but it might be that the crust is a bit too hard.Ingredients:100 g oat flakes200 g wheat flour200 g rye wholemeal flour1 teaspoon salt1/2 teaspoon sugar20 g fresh yeast300 ml milk&water mixRoast oat flakes. In a bowl add yeast, sugar and lukewarm milk-water mixture. As soon as yeast is swimming on top, add flour, oat flakes, salt and knead a dough. Let the dough go for an hour. Place dough in a form, sprinke the top with water, add some oat flakes on top and let it go for another 30 minutes. Bake for 1 hour on 180°C.
