Die Mellow Bakers beendeten "Bread"

Von März 2010 bis Januar 2012 haben sich die Mellow Bakers durch das Buch Bread: A Baker's Book of Techniques and Recipes von Jeffrey Hamelman gebacken. 84 Brote, von denen ich bislang 72 gebacken habe, hier sind einige davon zu sehen. Keine schlechte Bilanz: 6/7, d.h. knapp 86 % der Rezepte eines Buches habe ich tatsächlich ausprobiert, das spricht wirklich für das Buch. Ohne die Mellow Bakers hätte ich z.B. die Laugenbrezel oder Aloo Paratha nicht gebacken. Definitiv zu Ostern werde ich noch die Hot Cross Buns ausprobieren, aber die Wahrscheinlichkeit, die in der Liste noch fehlenden Brote zu backen ist sehr gering. Unser Brotgeschmack hat sich in den letzten zwei Jahren kaum geändert: Wir sind mehr für Geschmack auf dem Brot als im Brot und wir bevorzugen eindeutig Brote mit Roggensauerteig. Bread #78 for the Mellow Bakers in December 2011 is the un-kneades, six-fold French Bread. For this formula we are going to take our normal methods of mixing and leave them on the shelf for the time being. This bread is fascinating in its very unique production technique: the dough is un-kneaded, simply brought together with a few strokes of a plastic bowl scraper, and folded every half an hour for 3 ½ hours. The combination of a lengthy bulk fermentation along with the frequent foldings yields a dough that has very agreeable lightness, a beautiful creamy crumb color, and an internal structure of large, random holes. Although this dough can be made on a large scale, it's probably more suitable for the home bake, and the formula is therefore written for a small yield. The dough also makes an excellent pizza crust. Da mein Exemplar der Erstauflage von genauso aussieht wie ihres, habe ich mich entschlossen, mein Exemplar zum Buchbinder zu bringen, bevor es völlig auseinanderfällt. Diesmal machte ich mich daran, das Pain de Mie - Pullman Bread - Krumenbrot zu backen und bin schwer begeistert vom Erfolg. Ein leckeres Brot, das vor dem Verzehr unbedingt getoastet werden sollte. You know what is the hottest restaurant in Vancouver right now? It is this restaurant called Meat and Bread located in Gastown. It seems everyone is raving about it (despite the high prices) ? and I am not sure exactly why. The food there is simple, no frills ? just meat and bread. The choices you get there can be counted with just one hand (just four items!). Given what they offer on the menu, I think they could even sell it off a food cart. They don?t need a restaurant for this. I am sure the food is good and that plays a big part in its popularity. But maybe too its the simplicity of the food. I don?t know ? My class spent the week creating sculptures out of "dead dough" -- a mixture of rye flour and sugar syrup that's used for decoration. It's much easier to work with than molten-hot sugar or even gingerbread (two mediums we've also used for showpieces in culinary school). The centerpiece above is the creation of my partner and I -- a fall scene with a scarecrow, leaves, pumpkins and stalks of wheat. I'm pretty proud of the end result. But you should see some of the amazing things my classmates built. Remember, these are made entirely out of dough, colored with a variety of herbs and spices....

A man says his right index finger was amputated while working at Panera Bread.  A Petition for Discovery Before Suit to Identify Responsible Persons and Entities was filed today on Jose Luis Marquez's behalf and states that the injuries occurred while he was attempting to clean a bread cutting machine. The plaintiff's attorneys are seeking to "inspect, identify, photograph, videotape, and/or examine and test the bread cutting machine involved." Read the petition after the jump. My husband decided to go drinking with his pals today. *roll eyes* I get nagged for staying up late to blog but somebody can go drinking when that same somebody just worked past midnight yesterday and had to wake up early as usual to get to work this morning. *shrug* I'm not complaining. At least I get to blog in peace. LOL.Okay, for this recipe, which is one of my kid's favourite, is really easy to do. It's is actually this recipe plus cheese. But because cheese is added here, I cut down the garlic to 2 clove garlic with 1 tablespoon butter.For this particular one you see in the photo, 1 tablespoon of Mozzarella Cheese is added into the garlic spread. You can use any cheese you like. Sometimes I use Cheddar with Parmesan Cheese too. It's basically whatever leftover bits of Cheese I have.
