2008-02-28 21:40:00 In spite of being situated in Satara district, Puneites claim the hill stations of Mahabaleshwar and Panchgani as if it were their own back yard. My first trip to Mahabaleshwar (or Mabby as the wannabe cool kids called it) was in 1980 at a ripe old age of 10. It was fascinating to see streets full of pretty much every kind of berry, honey and jam stores, swarms of monkeys, and vagabonds from Bombay and Pune trying to act extra cool. Equally fascinating were guys pretending to be expert horseback riders in the area around Venna lake, trying to impress women that were more interested in gnawing at their ‘bhutta’ (roasted corn on the cob) than any dude on a horse that can drop at any minute. Note to the ladies: Bhutta teeth is not a great look. There are a couple of cool places in Mahabaleshwar though. The shopping street, the horse rides everywhere. Bulgur Pilaf (Sade Bulgur Pilav?)
2008-01-10 12:36:00 Makes 4 servings1 cup bulgur * 1 1/2 cup water * 2 tbsp butter (or olive oil) * salt * black pepperPlace the olive oil in a pot or melt the butter. Wash the bulgur and sauté it slightly in the olive oil or butter for about two minutes. Add the water and seasonings and cook over low fire until the water evaporate completely. Turn off the fire, gently stir the bulgur and serve hot.Note: This recipe is usually made with butter but you can also do it with olive oil.

2007-06-19 17:12:00 Makes 6 servings2 cups thin bulgur * 2 cups hot water * 3 tbsp olive oil * juice of 1 lemon * 1 tbsp pomegranate sauce (nar ek?isi) * 2 tbsp tomato paste * 2 tbsp pepper paste * 2 tomatoes * 2 cucumbers * 4 lettuce leaves * 3-4 green onions * 100 g parsley * salt * black pepper * red pepperPlace the bulgur in a bowl with hot water. Cover the bowl and wait until the bulgur absorbs all the water and cool down. Add the olive oil, the lemon juice, the pomegranate sauce, the tomato and pepper pastes, the salt, the black pepper and the red pepper. Peel the tomatoes and the cucumbers, cut them in small cubes and add them to the bulgur. Slice finelly the the lettuce, the green onions and the parsley. Add to the bulgur and mix well. Place on a serving plate over lettuce leaves.This is a very common dish in the Turkish houses during the summer.

I stuffed courgettes with with bulgur wheat and minced lamb and cooked it in a slow cooker while I was working. Back home I could enjoy it with my son, who arrived on time from school. We were very satisfied with the result: The recipe is simple: 4 courgettes, which fits into your 3.5-l-slow cooker (about 500 grams) 1 small clove garlic, minced 1 small onion, finely chopped 1 tsp. tomatoe puree 1 tsp. pepper puree 1 gram paprika powder 80 grams minced lamb 160 g fine bulgur wheat 2 tsp. olive oil pepper salt lemon juice Remove the end with the blossom and a small "lid". Zucchini mit Bulgur-Füllung aus dem Crockpot
2007-05-25 00:00:00 Für den englischen Event "gefülltes Gemüse" habe ich auf der Suche nach Rezepten noch einmal mein Kochbuch "Mediterrane Köstlichkeiten Türkei" durchgeblättert. Mein Blick blieb bei den "Zucchini mit Bulgur-Füllung" hängen. Nachdem ich dann hier gelesen habe, was alles im Crockpot zubereitet werden kann, habe ich mich entschlossen, das Rezept für meinen Slow Cooker zu adaptieren. Ich habe am Vorabend für 2 Personen 4 kleine Zucchini gefüllt und im Crockpot über Nacht in den Kühlschrank gestellt. Bevor ich zur Arbeit fuhr habe ich noch 200 ml Wasser hinzugefügt und das ganze für ca 6 h auf low bis zu meiner Rückkehr gegart. Nur noch Anrichten, servieren und genießen! Bulgur Croquettes with Yogurt Sauce (?ark köftesi)
2007-04-29 13:50:00 2 cups thin bulgur * 1 1/2 cup hot water * 2 tbsp dry mint * 1 onion * 2-3 tbsp flour * 1 egg white * saltFor the sauce:1 cup yogurt * 2-3 garlic cloves * 30 g margarine * 2 tsp chili pepper flakesSoak the bulgur in hot water until it gets soft and until all the water evaporates. Add to the bulgur the minced onion, the mint, the flour, the egg white and the salt. Knead well until you get a consistent dough and, if necessary, add some water. Separate portions on the amount of a walnut and give an oval shape to each one. Bring to boil water with salt. Put the croquettes in the boiling water for 1-2 minutes. Place the croquettes in a serving plate.Prepare the sauce. Mix the yogurt with the minced garlic. Bring to low heat the margarine with the chili pepper flakes. Cover the croquettes with the yogurt and then with the margarine. Serve hot.

2007-03-27 13:48:00 2 cups bulgur (large grain) * 3 cups water * 1 tbsp mint leaves * 1 tbsp fresh dill leaves * 1 tbsp parsley leaves * 1 tbsp fresh sweet basil leaves * 1 red chili pepper * 1 green pepper * 1 tomato * 1 onion * salt * black pepper * dry thyme * dry mint * 2 tbsp olive oilCut the chili pepper, the pepper, the onion and the tomato in small pieces. Mince the herbs: dill, parsley, mint and sweet basil. Pour the olive oil in a pan and sauté the onion, the chili pepper and the pepper for some minutes on medium heat. Then, add the bulgur, washed and drained, and continue sautéing for 5-6 minutes. Add the water, the herbs, the salt, the black pepper, a little thyme and dry mint. Cover the lid and cook for 10 minutes. After the bulgur absorbs all the water, turn the heat off. Let it wait for 30 minutes. Stir carefully with a wood spoon and serve.
