Thank you all for the very nice birthday wishes for my mother, she truly appreciated the thought. Funny story about birthdays in my family and birthdays phone calls especially: my grandmother had the habit to see whom of her children would call her first to wish her a happy birthday. When I called my mom on Tuesday, I immediately said "I know I am not the first but I am the furthest...that's got to count!".Anyways, back to today's dessert... I can't plan..Let me rephrase this: I can't plan to have a distraction free day because we all know that concept never truly works. I had planned yesterday to be a writing day punctuated by a few walks with the dogs, a couple of play breaks with them and the neighbors' kids, no grocery shopping, no baking commitment, no visits, no errands...just me and my thoughts. You see it is not uncommon during our phone conversations for me to say "Oh, by the way, I saw this really cool ingredient, gadget, linen, etc...on a French site and I am having it come to your house so you can bring it next time you come visit or pop it in the mail with the next care package. I was kind of bored the other night and decided that I was going to make interesting cupcakes despite the fact that my beloved KitchenAid mixer has been dead for the past month and its replacement is nowhere in sight. I’ve been on a bit of a rose water kick lately, so I decided to use a combination of flavors that are very common in Indian and Middle Eastern sweets: rose water, pistachio, and cardamom. Because the flavors are so delicate, I decided on a chiffon cupcake, but coming up with the recipe took me a while because I couldn’t find anything decent on which to base mine. After much scientific analysis (ha ha, not really) and studying of other recipes, I came up with these. (The cakes are best within 2 days of baking them – their texture is very delicate and light but they start to lose that quality after a few days.) The spice can be a little expensive, but if you like a good toddy, or hot buttered rum to the uninitiated, it's absolutely worth it. I have an ancient recipe, but I found one online that's close. For the Cake:2 1/4 cups unbleached flour1 1/2 tsps baking powder1/2 cup dark brown sugar1 cup sugar2 Eggs1 1/2 cups buttermilk1/2 tsp ground cardamom1/2 tsp ground cinnamon1/2 tsp ground cloves1/2 tsp ground black pepper1 stick butter1 tsp vanilla powder1/2 tsp saltCardamom-cofee icing:1/4 cup milk1 tbsp coffee powder1 tsp ground cardamom1/2 tsp ground cinnamon1 tsp vanilla2 sticks butter3/4 cup confectioner's sugarTo Make the CakeSift the dry ingredients. In a large bowl, cream the butter and sugars, then add the eggs one at a time, followed by the vanilla, mixing until light and fluffy (about 5 minutes). Beat in the other, dry ingredients alternating with the buttermilk, but beginning and ending with the flour mixture. Beat until just smooth: about a minute. Pour into a greased and floured pans and bake in a preheated 180 degree celcious oven for about 30-35 minutes.
