Among them was one carrot, a few green chillies, 2 onions, some okra, 10 beans and so on. I fried the okra and made usili with the beans but was stumped on what to do with just one carrot. Slice the carrot into 4-6 lengths. 3. Form a tee-pee shape on a microwaveable dish. 4. Take a 1/8th of a cotton ball and and stretch it over the top of the tee-pee. 5. Put the plate in the microwave on high for 10-15 seconds. 6. The carrots will arc and cause the cotton to catch fire. Tips* If the after 15 seconds the carrots do not catch fire, stop and retry. I have substituted different juices for orange juice before and had good results--most often using passion-orange-guava juice which gave it a wonderful, light tropical flavor.Not a bad way to eat your veggies.1 pound carrots, sliced on the bias¼ cup orange juice3 tablespoons honey3 tablespoons butter, melted½ teaspoon lemon zest¼ teaspoon saltdash nutmeg2 teaspoons cornstarchCombine the orange juice through the nutmeg, stirring well to combine. Add the cornstarch, stirring to dissolve any lumps and mixing well. Stir in the carrots, coating with the orange juice mix thoroughly and cook in the microwave for 9-12 minutes on high, stirring once or twice, depending on the strength of your microwave.Technorati tags: carrots, orange juice, recipes, vegetables

2007-05-10 17:44:00 I admit I struggle with side dishes.I grew up in the south,where there were quite a few sides with every meal.Laden with cream,butter,fat....you name it.And I very rarely use fatback in my cooking . So usually I stick with brown and wild rice, potatoes or fresh steamed veggies.My boys will inhale raw baby carrots as an after school snack.In fact, between the 3 of them ()Ib still won't feed them to my 19 month old unless they are soft) they have eaten 2 two pound bags this week. And last night with Thai inspired crockpot chicken I served gingered carrots and coconut rice.The carrots are cooked and then a sauce of butter,brown sugar and ginger are poured over them.Not nutritious,so I will not make it often,but when I do there is not a single carrot left.Actually.probably one of the most kid friendly veggies that I make for the boys.
