6 boneless, skinless chicken breast halves1 can cream of chicken soup1 soup can water8 oz. sliced Swiss cheese1/2 stick butter1 package coarse bread crumbsCut the chicken into bite−sized pieces and place in the bottom of acasserole dish. In a small bowl, mix soup and water then pour over chicken.Put a layer of swiss cheese over this. Melt butter and add enough breadcrumbs to take up the butter. Sprinkle bread crumbs and butter over thecheese. Bake, covered with foil, in a 375F oven for 35−45 minutes untilnicely browned and bubbly.

Recently we had my family over for an open house. We have been in our new place for a while now and not everyone had been here to see it. So we decided to do a luncheon. I wanted to make something rustic and old-school hearkening back to the times that Italians stopped what they were doing to enjoy a nice lunch spread together out in the fields, on a big slab of wood turned into a table. Also along this theme, I really wanted to make something using ingredients that we already had at home. Too many times when preparing for a party, I decide on a menu and then go and buy all the ingredients. This time, I wanted to challenge myself more and use what was around. We had been to the Farmer’s market the day before and had gotten our staples: potatoes, tomatoes, squashes, onions and beautiful bread. We also had a bag of frozen mussels in the freezer. My husband loves cabbage rolls.I hate making them.They are too time consuming to me,especially when you have a 2 year old and a 4 year old running around the kitchen.So I decided to make a casserole using the same ingredients.This was so easy to put together and so tasty.I don't think that I will be making the actual rolls much anymore.I used ground turkey,and it was really great.You can't tell much of a difference.I used a bag of shredded cabbage for convenience.You could definitely use a head of cabbage and shred it yourself.I added a bit of salt and pepper when I portioned out the plates.I think that I used about 2T of tomato paste.I didn't measure.(same with the rice)This was a add in recipe .I added everything that I would add to the cabbage rolls.Feel free to tweak the tomatoes.But just keep in mind that if you omit the tomato paste,the sauce will be more liquidy when the casserole is done,which sometimes makes the cabbage have a "slimy" texture.My husband and sons crumbl...

Blend the flour with a little of the stock or apple juice in a bowl. Stir in the remaining stock, and the tomato puree (paste). Pour over the chicken joints. Serves 4-63 lb. chicken breasts cut up1 10-oz. pkg. frozen corn1/2 C. chicken broth1 med. onion, cut into wedges1/2 - 1 C. chunky salsa drained well4 tsp. corn starch1 8-1/2-oz. corn bread mix1 1/2 C. shredded cheddar cheese 2 4-oz. cans diced green chili peppers, drainedCombine chicken, corn, broth and onion. Bring to a boil, reduce heat. Simmer uncovered for 10-15 minutes or until chicken is fully cooked and add salsa. Stir 2 Tbs. water into cornstarch, Add to mixture. Cook and stir until bubbly and then cook for 2 minutes more. Prepare corn bread. Pour chicken mixture into 10x6x2-inch baking dish. Sprinkle with cheese and chilies. Spoon cornbread on top. Bake at 425 degrees for 20 minutes.

I made this last night adding what I had in the fridge that I had to use up.I had 2 cups of shredded chicken in the freezer leftover from chicken noodle soup and wanted to use it up.When I made lunch for the boys yesterday I realized that I had two packs of flour tortillas,which needed to be used.So I made this casserole.I don't know the exact measurements of the ingredients because I eyeballed it and tasted until I was satisfied with the flavor.You can tweak it to your tastes.The youngest and oldest ate it and had good things to say about it.The middle boy....not so much.He stated that he hates beans,he hates chicken and only eats orange cheese(cheddar).
