Weekly Soup for Souper Sunday: Cauliflower Soup with Beluga Lentils & Chive
2009-08-10 11:14:00
My son asked for a soup, because he got some new rubber bands for his braces and didn't want to chew a lot. I chose Cauliflower Soup with Beluga Lentils & Chives another recipe from the vegetarian cookbook by Gabriele Kurz, a native-German chef living in Dubai. The lentils are black, small and tender and look alike the caviar. The lentils are cooked with some carrots, leeks and celeriac. Purée the tender cooked cauliflower with milk and vegetable stock and laddle into a soup plate. Give some whipped cream into the middle and put the lentils on top. Decorate with chives and nutmeg and enjoy. We all did, my son without the lentils. This is my 25th entry for Debbis Souper Sunday. Pages: 1 2 COMMENTS - ADD COMMENT

Veggie Wednesday: Cauliflower and Pear Curry
2009-03-11 05:04:00
Last week we had one of those throw-together-meals for dinner. Cubed chicken breasts, bagged frozen veggies and bottled curry sauce. I also had a few pears on-hand that needed to be used, so I threw them into the mix. The combo of cauliflower and pear was so good that I decided to make it again as a vegetarian dish.Ever since my friend Jodie sent me a bunch of fun stuff from Japan, including several packages of Vermont Curry, I've been hooked on it. It's sweeter than most other curries and smoother, as well. I took the Wafuu recipe from Saveur and did my own thing with it, using pears rather than apples and using my own blend of veggie. Here is the recipe with my changes in blue. Of course, the curry blend you use will change the flavor of the finished dish, so make sure to use a curry you're fond of.Japanese-Style Chicken Curry(Wafuu Curry)SERVES 4Wafuu curry has a cult following in Japan, where many fondly remember eating it at home and at school functions. Gobi Paratha: Step By Step Recipe
2009-03-06 10:59:00
I have been putting away this post for the longest time possible. I made this over a month back and took step by step pictures. I was too lazy to edit and upload and post so kept picking the simple recipes to post. Today I had to share this with you because I tried making layered gobi paratha in a different way and it was so much better than the traditional method of making the paratha, addng the filling, bringing the edges together and rolling it out again before cooking it on the tawa. I have given the shots of the usual method below. Now for the different method I tried, you have to endure the whole post :D Let's start with 1 cup minced cauliflower or gobi. Make it as tiny as possible. Like this. I recently got a Philips chopper/blender/whisk set and used the chopper blade to get it minced. Its super quick and I use this for pretty much all my chopping now. Since my kitchen has lousy lighting, I don't have step-by-step pics of how I made the filling but its quite straightforwar...

Aloo Gobi / Potato-Cauliflower Dry Curry
2008-09-22 07:48:00
I am not a huge fan of Aloo Gobi but TH loves it! He loves anything with potatoes in it and cauliflower is his favourite vegetable. Last week he actually requested for this dish to have with chapatis, and it came as a surprise cuz normally he leaves the decision-making to me.This is a simple, easy recipe that was done in about 20 minutes, perfect for a weeknight quick-fix dinner. It is also unarguably one of the most popular dishes in North Indian restaurants everywhere, especially outside India. A meal out is not considered complete without a nice and mildly spiced Aloo Gobi to go with the rotis (flat Indian bread)What I Used (to serve 2):Cauliflower/Gobi - 2 cups, cut into floretsPotatoes/Aloo - 2 medium sized ones, cubedOnions - 1 big, chopped fineTomatoes - 1 cup, pureedGinger garlic paste - 1 tsp (or use 2 garlic pods and a 1/2" piece of ginger, both minced)Chilli powder - 1/2 tspTurmeric powder - 1 pinch (about 1/4 tsp)Coriander powder (malli podi)- 1 tbspCumin powder (jeeraka...

Nupur's Ultimate Bombay Street Food - Pav Bhaji
2008-08-27 07:34:00
Ever since we reached Singapore, TH and I have been craving for chaat. It is definitely available in places like Little India and Serangoon Road but when we do go there once in a while, we opt for a full fledged meal and never chaat. One day I decided I should just make pav bhaji at home. Pav Bhaji is TH's favourite and the easiest to make when it comes to variety of ingredients involved. The final taste was definitely 'cleaner' than you would find it on the streets but I did add copious amounts of butter like they do :DThis recipe is inspired by Nupur. Hers was the first search result when I was looking for a recipe. I have merely recreated her recipe here with the changes in measurements that I made. What I Used:Serves 4Cauliflower - 2 cups, cleaned and choppedPotatoes - 1 cup, cubedCapsicum/green bell pepper - 1, mincedTomato paste - 1 cup (or fresh tomato puree - 1.5 cups)Peas - 1/2 cupGinger garlic paste - 2 tspTurmeric powder - a pinchRed chilly powder - 2 tspPav bhaji masal...

One Stinking Flower: Cauliflower/Gobi Paratha
2008-05-09 09:50:00
I was a typical headstrong, independent, strongly opinionated teenager who never hesitated to say ?NO? for food cooked using particular vegetable or greens. With 90%+ vegetables and greens which belonged to my black list, it was not an easy task for my Amma to cook something which every family member loved. For me Green Leafy Vegetables were simply horrible to look at let alone taste it. Root Vegetables were loaded with little too much of carbohydrates for my taste. This strange piece of information I seemed to have picked from our Botany class taken by handsome lecturer with cute dimple on his left cheek whenever he smiled and I could see every girl in my college falling for!!! And there were not many vegetables which grew above ground level that caught my fancy. So what did I really eat as a teenager? If your answer is junk food containing lots of deep fried, greasy, spicy, bubbly, unhygienic food cooked every other place except home, then think again. Like many millions caring, s...

Spice Rubbed Trout with Cauliflower Puree
2008-05-01 08:31:00
This is super simple, quick and easy recipe to make yet it tastes great, is low is carbs and high in protein. I love fish but have not made trout often, I always thought I just didn't like it. That is until my hubby made a mistake one day and purchased smoked trout instead of the smoked salmon I had asked for. When I tasted it I could not believe how close to smoked salmon it was just a bit saltier and a little stronger in taste. I figured if smoked trout was not dissimilar, then surely fresh would be the same and it was. I still prefer salmon as trout is a more bonier fish, so you get a lot of small bones left in, but not so much that it is annoying. If you have seen my recent post on my cheese and cutting boards you will know I am about to go live with my official website shortly. So I am going to be posting pictures of some of the range of boards I currently have in stock, just to give you an idea on the beauty of them until I can post my web address. Gobi Palya - Pureed cauliflower with curry leaves and shallots
2008-04-18 06:56:00
I recently had my husband's cousin visiting us, I had settled for making dosa's since I felt this would make all of us happy, then I recieved instructions from his wife on ensuring that the starch/sugar levels in the diet should be modified to make sure that they were low, due to health reasons.Well, since the dosa batter was already fermented and this was the traditional rice lentil variety, I was really left with salvaging the potato filling that I was planning to make. Would a cauliflower work? Well, guess what it makes fairly decent paliya. I had omited the turmeric and I liked the pale color of this dish, so I probably will end up repeating this sans turmeric.Cauliflower Paliya - Pureed cauliflower with curry leaves and shallotsServes 6Ingredients1 small head of cauliflower2-3 cloves garlic2 shallots1 tsp salt2 tbsp oil1/2 tsp cumin seeds1/2 tsp mustard seeds1/4 tsp fenugreek seeds1 tsp channa dal1 tsp urad dal2-3 whole red chillies, crushed1/8 tsp asafetidaA few curry leave...
Gobi Ka Kheema/Minced Cauliflower and Peas Curry

I remember seeing this dish a long while back on Suganya's Tasty Palettes. I followed her link to the original recipe on Ashwini's Food for Thought and immediately fell in love. The fact that both of them take amazing pictures could have also played a small part :DAnyway, now am at home and my sister's kids are also here. They are vegetarians and one day there was just rasam and potato masala for lunch for them. A Cauliflower Bomb
2008-03-28 17:27:00
I found a cool book for W. in the bargain section of Barnes and Noble. It is a journal type of book that asks all kinds of questions about him, his friends, school, and his life. W. loves this sort of thing and I thought it would be nice to keep and read when he's grown. He allowed me to read the sections he completed. It was very interesting and amusing to see how he answered. One questions in particular was, "Does your dad do anything to embarrass you?"He had written "No" in the blank."Dad doesn't embarrass you, at all?" I asked, finding this strange as he has definitely reached that time in his life when his parents are just SO uncool."Nope.""Do I?" I inquired, knowing full well what the answer would be."Yes mom, you're weird!" he said with a smirk."Weird strange or weird funny?""Weird funny.""Oh, I can live with THAT!" I exclaimed. That night when it was time for lights out, W. began his recent annoying stall tactics. He tried everything under the sun. When he realized he wasn...
Spiced Cauliflower Soup
2008-03-17 12:17:00
It occurred to me yesterday that the last three food posts on this blog have all been desserts.  Is this my chocolate withdrawal talking?  Well, maybe so, but that means a contrapuntal savory dish must make its appearance today.  No; more than just savory–we need something spicy.  No; more than just spicy; we need something SPICE-EEEE!  Aye, Carumba!! And I have just the thing. . . . One of the aspects of blogging I love is reading about others writers’ food adventures.  By reading food blogs, you can vicariously cook and eat almost anything, without lifting so much as a measuring spoon. Another great byproduct is how blogging encourages you to try cooking something new almost daily, stretching your culinary muscles and gustatory acumen. Would I naturally think to peruse my cookbooks in search of a novel pasta dish every week?  Not likely.  Would I ordinarily wax poetic about rice pudding in any other context?  Negative.  Would I customarily resurre...

I don't care that I stripped the nutrients from this lovely winter vegetable and ground them into the dirt ... really. This stuff is just too good for me to care. Besides, I'm sure there's something left there in the peppers. Or not.Cauliflower Casserole1 large head cauliflower1/2 cup diced red pepper1/2 cup diced green pepper1 cup shredded cheddar cheese1 cup sour cream1/2 cup freshly grated Parmesan cheese3/4 cup dried bread crumbs1 teaspoon salt 1/2 teaspoon freshly ground pepperBreak cauliflower into bite-sized pieces and cook in boiling salted water for 5 minutes. Mix peppers, cheeses, sour cream and salt together well. Fold in drained cauliflower and 1/2 cup of the bread crumbs until well blended. Turn into a greased 2 quart baking dish and top with remaining 1/4 cup of bread crumbs.Bake at 350 degrees F for 20-30 minutes, or until bubbly and golden brown.Try not to eat the whole thing youself, it should serve 4-6 people.

Recipe: Lebanesesque Cauliflower & Bruschetta di Roma
2008-02-12 16:15:00
If you have never had fried cauliflower, you are missing out. My Nana used to make it, just dusted in flower and pan fried. I used to eat it with ketchup when I was a kid! It was delicious. Years later, as an adult, I had fried cauliflower, known as Zahra Mekleyah, again, at a Lebanese friend’s house, then again at a Lebanese restaurant. They traditionally serve it with a delicious Tahini sauce and it is out of this world. Blows ketchup right out of the water! I have always tried to take fried things I have enjoyed in a restaurant and see if I can make them healthier at home. I still enjoy all the fried stuff when I go out sometimes, but I hate the mess of all the oil splatters in MY kitchen. Yes, I am a neat freak, that is established. My favorite way to get a similar crunchy texture in the oven to frying is either to bake it at 450F, maybe 475F or broil it. These cauliflower, I did the former. Instead of creating a Tahini dipping sauce, I decided to toss the cauliflower in it...
Cauliflower Ear - A Badge Of Honor Or Unsightly?
2008-02-06 03:27:00
Before Ultimate Fighting Championship legend Randy Couture entered the octagon to do battle in the world of MMA, his passion was wrestling. He wrestled in high school in Washington, earning a state title as a senior. He wrestled in the Army and went on to become a three-time All-American at Oklahoma State. Add in a senior and two national Greco-Roman titles.Couture doesn't have to pour out a single, eloquent narrative of his past endeavors, it's obvious. Take a peek at his ears. They're his wrestling calling card. Each appendage is bloated with cauliflower ear, a condition that forms when the ears are repeatedly struck or if the skin is detached from the cartilage. Both conditions cause swelling. Blood pools - as a bruise would - and due to the poor circulation in the ears, the blood remains. If not drained while liquefied or removed when coagulated, the remnants harden to form cauliflower ear...More?source: The Tampa Tribune

Roasted Cauliflower and Bell Pepper Soup
2008-01-02 19:34:00
I think the major reason people flock to the western coasts of California is the beautiful weather that we are blessed with. But looks like mother nature is playing games with this blessing that we have started taking for granted. It's been record lows this winter, and we have to turn on the heater every night! Well, not that I should complain a lot though, because a lot of my friends in the east coast have a way more hard time shovelling their driveways and uncovering their snow-clad cars in the morning, layered themselves in jerseys and overcoats. Anyways, one of the ways I think we can comfort ourselves against the cold is fuel our bodies with something hot, healthy and delicious. Yes, you guessed it right - Soups! Generally when we think about making soups, we go with chosen favorites like tomatoes, pumpkins, mushrooms, chicken or veggies in a creamy broth. But recently I came across a cauliflower soup recipe on Southern Living, and it caught my eye. I had also seen a tomato-be...
Leek & Cauliflower Soup
2007-12-30 23:48:00
When Jim and I first started dating, he once told me he didn’t like soup—he just wasn’t a soup-guy. For a split second I thought to myself maybe I need to reconsider getting serious with this mope—in my head sprung images of winters to come, with icy snow tapping on the shivering windowpanes and ...
Broccoli and Cauliflower ’stops’ prostate cancer
2007-12-30 18:17:00
Eating broccoli and cauliflower regularly reduces the risk of deadly prostate cancer, say US researchers. A study of 1,300 men found they were better than any other vegetable at protecting against aggressive tumours. Writing in the Journal of the National Cancer Institute, the researchers said broccoli and cauliflower were known to contain anti-cancer compounds. Experts advised the best way to reduce cancer risk was to eat a balanced diet, including lots of fruit and vegetables. Several studies have shown a link between eating vegetables and a reduced risk of prostate cancer, but results have not been consistent and many have not specifically looked at deadly forms of the disease. A team from the US National Cancer Institute and Cancer Care Ontario in Toronto carried out food questionnaires in a group of patients diagnosed with prostate cancer in a large screening trial. Overall, they found that eating fruits and vegetables was not associated with decreased prostate cancer risk. But...
Rasedaar Aloo-Gobhi (Fragrant Potato-Cauliflower Curry)
2007-12-26 04:29:00
Aloo-Gobhi sabzi (Potato-Cauliflower Vegetable) happens to be one of my favourite vegetable combinations. There are so very many ways in which this vegetable combination is cooked and dished out. Yet it is only in winter that one gets the opportunity of enjoying it in this fragrant curry form. Primarily because this recipe uses loads of Dalchini or Cinnamon. Cinnamon which is an essential spice in Indian cooking, is regarded by Ayurveda as a warming spice. It is, in general, used in combination with other spices that complement its flavour and often in its bark form. Also it is used to flavour savoury vegetables and meats from the main course rather than sweets and desserts! Cauliflower curry with cinnamon is a perfect example of this. I find it to be a comfort food - tasty, warming, and utterly delicious once served on a bed of Basmati rice. Ingredients:1 medium-size cauliflower4 small red potatoes2 medium onions1 tin tomato puree1 tsp tamarind extract8 Curry leaves4 tbsp dried uns...
