For April?s installment of the Cake Slice, the bakers voted for a tea based cake. Chai tea was the cake?s main flavor components. Chai tea literally translates to ?spiced tea?; some of the spices found in chai tea can be pepper, cardamom, and cinnamon. A common practice is to mix the tea with milk to make lattes. That is exactly what the recipe instructed to do.The chai tea bags steeped in warm milk, were cooled and then used in the cake mix. The tea tinted the cake to a lovely mushroom color. The recipe also called for more cinnamon and cardamom, which added pleasant warmth to the cake. The cake itself was light and airy, very much like a chiffon. I finally made it to Lisa's house today and after many hours of chatting with her and Kelly, I find myself thinking about B. back home and how sick with a bad cold he is and how I am not there to help him feel better. Hmmm, maybe that's not such a bad thing considering he is a terrible a "sickie". Well, I did feel bad leaving him at the worse of bouts of coughing and sneezing and figured that I'd make us a nice pot of soup and a flavorful and comforting dessert before I left. You know, so he'd miss me terribly and not feel like I left him cold for five days while I was having a grand time with the girls. To say that we have already started is an understatement!!I have always find tartes tatin to be comforting with their soft apples and caramel goodness all blanketed by a soft pillow of dough. I have been quite disappointed with the pictures I am able to take in my apartment in Singapore. The kitchen does not have any windows so I set up a small table in the washing area. The natural light there in the morning is too bright and in the evening is too dull. This was my original entry idea for MBP this month, focussing on Mixed Drinks. I slightly digressed and posted the spiced buttermilk instead. Blame it on the weather. After the summer showers, Hyderabad is cooler now and a hot cup of malasa chai is just what we crave. The recipe is from none other than Asha from her awesome blog, Foodie's Hope.Whenever I make tea, I add either ginger or cardamom, but never both, leave alone other spices. It just never occurred to me, though I have all the common spices in my kitchen at all times. This was such an obvious yet brilliant idea and I really relished the drink.Here is how I made it: (adapted from Asha's recipe here)Boil 1 tbsp tea leaves in half cup water. Add 2 cloves, 1 cardamom, a few cinnamon pieces and some grated ginger. Add 1 cup milk and bring to boil again. Do not boil for too long, simmer add required amount of sugar and remove from fire. If you're looking for an unusual sweet for Valentine's Day, try this recipe. Chocolate infused with flavors from the East--what more could you want!Ingredients:• 1 1/2 cups heavy cream • 2 tablespoons loose black tea • 2 4-inch cinnamon sticks • 10 whole cloves • 10 whole green cardamom pods • 1/2 teaspoon fennel seeds • 1/8 teaspoon salt • 2 tablespoons unsalted butter • 1 pound dark chocolate, preferably 70 to 72 percent, coarsely chopped • 1/2 cup sifted cocoa powder Directions:Combine the cream, tea, cinnamon sticks, cloves, cardamom pods, fennel seeds and salt in a small saucepan over medium heat; cook just until bubbles form around the edge. Cover, remove from the heat and let sit for 30 minutes.Add the butter and return the saucepan to medium heat. This weekend I was in the mood for baking. I wanted a fairly traditional cookie that most would enjoy, but something other than chocolate chip - been there, done that! I suddenly got a craving for snickerdoodles, and started doing some searching around. It turns out that Mrs. Sigg's Snickerdoodles are quite the popular treat. For those of you know that know me, I'm never one to stick completely to tradition, so I welcome the opportunity to add a little extra spice or flavor where I can. Luckily, I found a variation on this exact recipe from Baking Bites. Nicole, brilliant baker that she is, jazzed up the traditional snickerdoodle with ginger, cloves, cardammom, and allspice for a chai-inspired treat. This new year has started off with a bang. I've got a lot on my plate....at least work-wise while the rest of my plate, or rather my cupboards are suffering from some good ol' Mother Hubbard-ism. I just haven't had the time to grocery shop, so besides a load of chocolate leftover from the holidays the meal pickings are skimpy. After bowling on Monday night (I'm a league player, donchya know), I did manage to grab a bag of what I thought was Scottish oats (aka "my breakfast mainstay"). Turns out, I grabbed a bag of oat bran instead.Now, I admit there is something about that freaks me out about oat bran. Thai food menu : Chinese chive flowers with shrimp is an easy dish to make and reheats well in microwave. 4 Servings 1 teaspoon sugar 1 lb shrimp 1 clove garlic, chopped 1 1/2 tablespoons fish sauce 3/4 lb Chinese chive flowers, cut Chop garlic. Cut the Chinese chive flowers into 1 1/2 inch long. Peel and devain shrimp. For a presentation, you can use whole shrimp (with head) and peel. Heat a wok or a pan on high heat. Add a tablespoon of oil and chopped garlic and stir. Add shrimp when the garlic starts to brown. Stir to get the shrimp somewhat cooked. The shrimp shoud start to get pinky but not all pink or cooked. Add the chive flowers and stir to cook them. Add fish sauce and sugar. The flowers shouldn't take long to cook. You want the flowers to just cook, but not overcook and still retain their crunchiness. When the color turns bright green, it indicates that they are cooked.
