2008-03-03 09:06:00 Serves 82 lb. lean ground beef3/4 C. fresh bread crumbs1/2 C. minced onion2 eggs beaten1 1/2 tsp. salt1 1/2 tsp. ground black pepper3 C. shredded cheddar cheeseketchupprepared mustarddill picklesPreheat oven to 350F. In a large bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper, and mix well. Pat out meat mixture into a 14x18 inch rectangle on a piece of wax paper. Spread cheese and pickles over the meat, leaving a 3/4-inch border around the edges. Roll up jelly roll fashion to enclose the filling and form a pinwheel loaf. Press beef in on both ends to enclose the cheese. Place in a 10x15 inch baking dish. Cover with ketchup and mustard. Bake in the preheated oven 1 hour, or until internal temperature reaches 160F. Let rest for 10 minutes before serving.

Heat oven to 400 degrees. In large saucepan, brown ground beef with onion and bell pepper; drain. Stir in 6 slices crumbled bacon and pizza sauce. Spoon into ungreased 13×9-inch (3-quart) baking dish. Sprinkle evenly with tomatoes; top with cheese slices. 2. In medium bowl, beat eggs slightly. Add milk and oil; mix well. In the same saucepan, sauté onion, carrots, celery, basil and parsley in 1 Tbsp butter until veggies are tender, about 10 min. Add broth, potatoes and beef; bring to a boil. Reduce heat; cover and simmer for 10-12 min. or until potatoes are tender. Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir for 3-5 min. or until bubbly. Add to soup; bring to a boil. Cook and stir for 2 min. Reduce heat to low. Add cheese, milk, salt and pepper; cook and stir until cheese melts. Remove from heat; blend in sour cream.
