This week's recipe picked from Melissa at Its Melissas Kitchen is on page 383 from Baking: From my home to yours: Chocolate Pudding. I have to admit, I was very surprised by the recipe, because a food processor is used. I don't own any so I did in the old-fashioned way with this international kitchen-gadget. At the age of 6 I made my first chocolate pudding with a bag from this firm. Meanwhile I try to omit these bags and do chocolate puddings from scratch. But without a food processor I prepared the chocolate pudding like the instructions on the bag: Mix cornstarch with cocoa and sugar and salt, add gradually 6 tablespoons of the milk and stir until smooth. I mixed all together including the egg and egg yolk in the mixfix. Bring the remaining milk to a boil, remove from heat and pour in while constantly stirring the mixed powder. Here's the first dessert recipe I've made using chia gel (Salba gel). I have to say I'm pretty happy with the results. The chia gel gives the pudding a nice, thick consistency, adds mass, and doesn't affect the flavor at all. For this recipe I made the gel in a 1:4 ratio - 1 part chia seed to four parts water. The recipe contains no eggs or dairy and is suitable for vegans. I used coconut milk but you could use soy milk, almond milk, or just water instead. I like coconut milk because it's rich and creamy like milk. The bananas and semi-sweet chips provide enough sweetness for me but you might want it sweeter, so taste the final mix for sweetness and, if necessary, add a bit of your favorite sweetener to taste. I already wish it were Friday... any Friday for that matter. The week is always better that day don't you think? OK I KNOW I KNOW THIS IS MEANT TO BE A HEALTHY BLOG! But this recipe is not my fault, I made it to cheer someone up! I could play on that whole chocolate is good for you crap but realistically, there are no health benefits to this at all. I think I am having one of those malfunction brain meltdown days today. It started with the fact that I forgot to buy fruit for the chocolate fondue. Then it went to spilling stuff on the floor, on myself and basically any spare patch of clean kitchen anywhere. Ahhhhh Total malfunction. Yes, I to have my bad days in the kitchen and here's one I stuffed up earlier today. It was a simple recipe and I stuffed it. The top went to brown. The inside was not nearly cooked enough, even though it was just starting to burn on top. So what was a girl supposed to do. I jammed a big metal spoon into and gave it a quick fold around. Goeyness and sponge swirled around together. Then I popped it into the oven again for another 5 mins or so, then served with fresh cream. I won't tell you who's recipe I used.
