Caroline of A Consuming Passion has chosen Peppermint Crem Puff Ring on pages 290-292 from aus Baking: From my home to yours. Dorie was inspired by Paris-Brest, a wheel-shaped cream puff, named after the bicycle race between Paris and Brest. Instead of the rich buttercream this cream puff ist filled with a peppermint cream. I halved the recipe and used 20 leaves of my curly mint. The recipe recommends a stand mixer, but you can easily make it by hand. Choux pastry dough was one of my first recipes I learnt in a cooking class as a teenager. I used a plastic bag to pipe the dough onto the baking sheet, I had no leftovers for any eclairs. My gentlemen like the combination of mint and chocolate and although I am not a fan of this I was pleased by the taste.   Dorie Greenspan has a way of making even me, who ardently claims not to be crazy about chocolate, crazy about chocolate. When I read that Di of Di’s Kitchen Notebook had chosen French Chocolate Brownies for this weeks TWD recipe, I was lukewarm about the idea of brownies, but happy to have a simple recipe after my L'Opéra adventure and the two day, two part Pecan Honey Sticky Buns recipe from last week's TWD rotation. I don't consider myself much of a brownie lover, and even though Dorie herself says that these aren't really brownies; I was a bit shocked when I saw that the recipe included raisins! Huh, raisins in brownies?! I'd call myself a borderline raisin hater, meaning I won't gag if I have to eat them, but they certainly don't make me shiver with delight. This was definitely going to be one for the colleagues, or at least, so I thought.

Most of you know I'm a fan of Vitalicious. I love their mixes and brownies, especially the pomegranate ones. Even though I like their products I never got a chance to try a vitaTop until recently. Of course the one I selected HAD to be chocolate, not only chocolate but TRIPLE chocolate. "Mmmmmm" I think that is an exact quote from the toddler when he took a bite. About a month ago, I saw these beautiful creations on the blog of TKTC. She had found them on the blog of my achy bakey heart (cutest name ever). I think I instantly started drooling as anything with peanut butter and chocolate is apt to make me do. I want to start off by saying this is by far my favorite Daring Bakers Challenge yet. Why? Well, true to its name… It was very challenging, and it was a lot of firsts for me as well: first buttercream (that worked), first mousse (that worked), first time making almond flour and first time making dulce de leche.
