My Mother’s Potato-Corn Chowder
2008-02-09 14:29:00 When I first read about the blog event called No Croutons Required, hosted by Lisa of Lisa’s Kitchen and Holler of Tinned Tomatoes, my first thought was, “Yes! I’d love to contribute my favorite soup recipe!” Then, quick on the heels of that thought was this one: ”Hmmn. No, maybe not. Can’t use that one; too bland. Too boring. Too commonplace. Too–I don’t know–too beige.” And yet, I love that soup. It’s easy to make, the ingredients are staples we always have on hand, and it’s never let me down. It conjures warming memories of my childhood. In wintertime, it’s often the basis for a hearty, simple dinner in our house. And it’s delicious!  And that’s how I realized that yes, sometimes, beige is exactly what you want. You know what I mean. Case in point: we recently moved into this relatively new house. The previous tenants had taken it upon themselves to paint ever...

Seaweed Chowder
2007-10-22 04:51:00 My husband first made a variation of this chowder when we first adopted a raw lifestyle a few years back. I remember loving the taste and texture of the creamy broth. It has a nice balance between the rich, deep flavor of the walnuts and mildness of the seaweed.Use kitchen shears to cut the Wakame into super, super tiny pieces. They expand at least ten times their size and you don't want have to chew through seaweed to enjoy the chowder.Seaweed Chowder3 cups water1 cup walnuts1 tablespoon yellow miso (optional)¼ cup Wakame, cut into tiny pieces1 carrot, sliced½ tablespoon sea salt1 In a blender, combine walnuts, miso and water until you achieve a creamy milk consistency.2 Pour in a large bowl, add Wakame, carrots and sea salt. Stir. Let sit until Wakame expands.Servings: 2Wakame is rich in protein, calcium, iodine, magnesium, iron and folate.

Chowder?
2007-09-24 07:11:00 What could be better than a bowl chowder to welcome fall? Though I'm not quite ready to admit that summer is over as yet (I'm still hitting the farmers' markets seeking out summer vegetables!), nothing quite like a chunky corn'n'leek chowder to embrace autumn!Seriously, this is one of my best soup recipes *ever*. I pored over my Soups book hoping to find the perfect chowder recipe that I could use with the leeks and tomato from my veggie patch. Hmm ... couldn't quite find the right recipe, so I morphed several ideas together and came up with this: Fiery Leek and Corn Chowder ========================6 leeks (small) corn kernels scraped off from 2 ears of shucked corn 3-4 cloves of garlic1/2 green bell pepper - finely chopped1 medium ripe tomato - peeled and chopped 3-4 thai chillies - sliced lengthwise1/3 cup of nonfat milksome chivesChop off the greens from the leeks and cooked them for 3-4 minutes in 1/2 cup of water. Once wilted, puree these along with the tomato pieces an...
