Curry Leaves Chutney / Kariveppilai Chutney
2008-12-15 09:32:00
Curry leaves are one of the staples of Indian cooking. Its the one herb that we cannot do without and you will find this in practically every Indian kitchen, or shall I say refrigerator :) However limited space people have around their houses and apartments, its not uncommon to see at least one curry leaves plant that is carefully watered and tended to. My mom has about three plants around the house and my sis has practically a tree growing out of her backyard. The house we moved into first in Singapore had 3 plants outside the front door. A neem plant, a money plant and curry leaves! The other 2 died when I went to India for 3 weeks but the curry leaves plant harbored on and was still standing strong and healthy when we moved out 2 weeks back. I miss breaking out fresh sprigs of curry leaves while cooking but some good things must come to an end. However, I didn't leave before I made this super-quick chutney one day. As we know, curry leaves are just added for flavor to dishes and m...
Thakkali Chutney / Tomato Chutney
2008-11-05 11:17:00
This is one dish that has many many memories associated with it. My grandma used to make it quite often since me and my bro love it. And we call it 'thakkali oorindi' where the word 'oorindi' comes from saying 'noorindi' very often. 'Noorindi' in "our" telugu means ground (past tenst of grind!). Ok this explanation is getting way too confusing so I will fill you in on why I call the word "our" telugu and where in India I am actually from. 'Cuz that's a long (long) story. My sis took the recipe from amma last summer and I took the picture. Because of that, I get to post it first, I guess. Thanks sis, for sending the recipe over email 'cuz god knows I wouldn't have been able to remember it otherwise. Don't get put off by the roast-remove steps in the directions of the recipe, really. Its worth it!What I Used:Ripe red tomatoes, slightly sour - 500gm, dicedBig onions-3, choppedGarlic - 2 clovesCoriander seeds - 1 tbspGrated coconut - 1 tbsp (optional)Red chillies - about 12,...
Chutney de cerezas
2008-06-03 11:09:00

One of the great things I see in the food blogging community is that there are so many wonderful places you can take your blog. For many it's more than just a hobby, and they've gained so much exposure and success that they can do wonderful things through their blog. One such blogger is Blake Killian of BlakeMakes. When visiting his blog, you never know what you'll find - a delicious meal prepared by Blake or his wife, perhaps a guest blogger sharing a delicious creation, or even a contest to receive a free, fun, new food product. Free food? Through a blog? That's right. When I read about Blake's giveaway for McQuade's Celtic Chutney, a sweet and spicy ginger and fig concoction, I jumped right in on the contest by submitting my ideas for dishes I dreamed of making with the chutney. Luckily, Blake liked them and I was chosen as a chutney recipient!Looking at the many flavors of chutney available through McQuade's website, I found that many of the varieties combine fruit and sp...

"Chutney is marvelous. I'm mad about it. To me, it's very imperial."Diana Vreeland (1903-1989) GREEN WITH ENVY???When we were young, we often heard the phrase, 'Hurry up or Mom will make a chutney out of us'...often in a punishing way as many would say 'making mincemeat of us' in parallel tones! Susan from Food Blogga wrote in to me the other day asking me about chutneys from India, & if I had some favourite chutney posts she could link to? 2008-04-20 07:16:00
The dosa is a South Indian crêpe. This food, rich in carbohydrates and proteins, is a typical South Indian food taken as breakfast or dinner. Though considered a breakfast dish, dosas are also eaten at other times of day. Those with wheat allergies or gluten intolerance will find the dosa a nice addition to their diets. They can be stuffed with vegetables, meats and sauces to create a quickly prepared meal.Dosas are typically served with a side accompaniment which varies according to regional and personal preferences. More common side items include:Sambar, wet chutneys, often coconut chutney — a semi-solid paste usually made of coconut, dal, green chilies, and mint or coriander (cilantro).A masala dosa is made by stuffing a dosa with a lightly cooked filling of potatoes, fried onions and spices. Chutney di datteri e arance
2008-04-13 18:55:00
Chuttaracha Chammanthi - Authentic Kerala Roasted Chillies & Coconut Chutne
2008-01-03 09:06:00
Chuttaracha Chammanthi, also known as Chutta Mulaku Chammanthi literally means roasted (chutta) chillies (mulaku) chutney (chammanthi). It is an authentic kerala accompaniment to kanji (rice gruel) and is mostly seen as the common man's food. I especially love the flavour the roasted chillies give the chutney. And what's more, its oil free! What I Used:Grated Coconut - 1 cupDried red chillies - 4Shallots - 4Garlic - 2 cloves (optional)Coriander powder - 1 tspTamarind - half a lemon sizeSalt - to tasteHow I Made It:1. Heat a non-stick pan and roast the red chillies dry (without oil) till it reaches the stage just before burning.2. Add the coconut, chopped shallots, garlic and coriander powder and roast for another 2 mins. The coconut will start getting brittle. At this stage, remove from fire.3. Grind this mixture in very little water with salt and tamarind.Enjoy! This is my first entry to RCI - Kerala Cuisine hosted by Jyothsna of Curry Bazaar. I say first, because I have so many Ke...

Pork Medallions with Rhubarb Chutney
2007-10-07 16:00:00
I wouldn't normally give you two pork recipes back to back but I couldn't wait any longer to post this. It is one of the tastiest things I've eaten in--oh, I don't know--the last ten years??I know it may sound hard to believe but this is one amazing recipe, the spicy chutney blends perfectly with the the pork and the polenta makes it heaven. I don't know if you remember me mentioning weeks back that I didn't care for polenta but Kelly at Love Well sent me a recipe that has changed my ways forever. I'm including it below. If you don't have rhubarb on hand, though I think it's available in many groceries, you could think about substituting something like granny smith apples and tart cherries perhaps. It would be different but not bad either. If you're in Anchorage and need some rhubarb swing by, you can raid my patch.for chutney:¾ cup sugar1/3 cup cider vinegar1 tablespoon minced peeled fresh ginger1 tablespoon minced garlic1 teaspoon ground cumin½ teaspoon ground cinnam...

Roasted Tomato and Peanut Chutney
2007-09-29 01:02:00
Tomatoes, the beautiful and highly nutritious red delights add flavor to so many of our foods. I posted about the Green Tomato chutney recently, and so the circle wouldn't have been complete without using the ripe red tomatoes too to make one! So this time, I combined tomatoes with peanuts, onions and spices to make this Roasted Tomato Chutney. We savored this with Rava Dhokla, but you can use this as a dip or sauce with any finger food, even french fries. It might look similar to Marinara sauce, but believe me, the similarity ends at the looks. The spices bring an indian touch, yet peanuts add a crunch that reminds you of the asian cuisine. So hope you enjoy this spicy fusion chutney just as much as we did!!Ingredients3-4 fresh firm tomatoes - chopped finely1/2 cup peanuts - roasted and ground2 tbsp (split pea) chana dal1/2 cup onion - chopped1 tbsp ginger-garlic paste2 tbsp oil1 tbsp red chilli powder2 tsp cumin2 tsp mustard seeds1 tsp turmeric powdersalt - to taste1 tbsp sugarMe...
Grape and Green Tomato Chutney (Sauce)
2007-09-28 19:19:00
Its amazing how most of the times, it is the sidekick which brings more flavor to the main course, right? The dips, sauces, pickles and salads make all the difference between good food and great food on a table, so it's important to give due respect to these side dishes and accompaniments which add more value to what you cook. One such experiment I tried last week was with green tomatoes and grapes. The markets are flooded with ripe tomatoes, yet there are so many green ones too that I was tempted to try making a dip using these. Grapes are found in abundance in CA, and when I came across this grape chutney recipe over at Food Network, I couldn't resist the temptation to combine tomatoes with grapes and add some green apple to it to form a nice savoury sauce. With the seasoning and green chillies, it turned out to be a wonderfully successful experiment!Ingredients5-6 large green tomatoes - sliced1 semi-ripe green apple3 cups green seedless grapes1 tbsp salt1/3 cup chopped onions1 ...
