Mia nonna le faceva cuocere sulla stufa in una pentola di terracotta e di solito le mangiavamo con le cicorie, un po' come si fa con le fave. Le cicerchie vanno lasciate a mollo molto piů a lungo rispetto agli altri legumi perché hanno una scorzetta piů dura. Anche queste mia madre le ha messe sotto vuoto facendole cuocere sul gas nella pentola di terracotta. Io ho solo aggiunto una piccola seppia soffriggendola con il nero, condito le cicerchie ed irrorato il tutto con l'olio nuovo che renderebbe speciale anche un piatto di pasta in bianco.Ingredienti250gr di cicerchie giŕ cotte1 seppia media1 spicchio d'aglio1 piccola cipolla1 carota piccola1 gambo di sedano1 cucchiaino di rosmarino secco tritatosale, pepeolio extra vergine di olivaPreparate un soffritto di cipolla, carota, sedano, rosmarino e aglio. Het is een peulvrucht die alleen verkocht wordt in gedroogde vorm en die hier niet te koop is (maar in recepten te vervangen is door kikkererwten). Bijna waren deze cicerchie vergeten. Maar door de opkomst van de Slow Food beweging die vooral in Italië heel actief is, worden ze tegenwoordig weer in een paar kleine gebieden in Italië verbouwd, nl. in Umbrië -waar een kleinere soort groeit- en in Midden-Italië, waar deze vandaan komen.
