Curried Butternut Squash Soup with Coconut Milk
2012-02-09 18:00:00 Minoo prepared a Curried Butternut Squash Soup with Coconut Milk for the comfort food theme. The colour of the meals at today's kitchen is simply a shade of yellowish orange, just like fall colour. The Curried Butternut Squash Soup with Coconut Milk is gingery and sweet. It can also served as a dessert soup if we leave out the salt out.

Floating Restaurants at Coconut Island
2011-12-13 14:17:00 The east coast of Phuket is very much under-rated, far less touched by tourism than the sandy beaches on the west coast and far less visited by visitors. Quite a few of my favourite places and favourite restaurants are on the east side. If you head north from Phuket Town, on the main airport road there is a small side road heading to Laem Hin, a fishing community where you find the very popular Laem Hin Seafood restaurant. A new jetty was built at Laem Hin a few years ago to serve Coconut Island and allow larger boats to dock in the area. On Coconut Island (Koh Maphrao) you find a very nice resort called The Village. And in the water just off the island there are several floating restaurants. We've been before and somehow I have never blogged anything about these places. The day when we went recently was not such a perfect sunny day, guess we will go again soon with blue skies for better photos. There are several restaurants to choose from - Kruvit, Bang Mud and Kru Suwit. To reach ...

Making Time For Tea & Lemon Coconut Cupcakes
2011-01-04 22:28:00 I hope everyone is having a great start to the New Year and feels refreshed and ready to enjoy 2011 to the fullest. B. and I don't really make resolutions as we know what works and what does not, what needs to go and what needs to be and always keep those in mind. Not just because it is the New Year. It's refreshing to think of beginnings though. Possibilities. This past Sunday, we pulled out the big calendar and jotted down our respective commitments so far. We got to July and looked at each other with a big smile and circled August three times and wrote with capitals "vacances a deux". There's been a lot of traveling but it's been too long since we traveled just the two of us and we absolutely love it. We'd love to go to Ireland and Scotland where he is from. It's not a definite yet but we'll work hard to make it happen. Got to dream big right? Right! The second thing I wrote down in my internal calendar was to make an effort to put myself on pause for tea time. I've mentio...

Butternut Squash and Coconut Milk Rice
2010-12-18 18:09:00 Every year for Christmas I bake gifts for B's family and our friends. The tradition started 10 years ago when B. and I entered stores after stores, Christmas shopping for his relatives, only to come out empty handed. What do you get the people who have everything? Homemade goodies. And tons of them. Neatly packaged in personalized boxes with pretty ribbons and paper. I go all out. They love it.I do love to give those boxes filled with cookies, truffles, macarons, etc...but it is easy to let flours, sugar, chocolate, vanilla take over the kitchen. There are times I feel I am inhaling far more buttercream than humanly recommended. I bet some of you can relate! Baking after work also means multitasking with dinner. Clearly not the time to experiment with new or lengthy recipes so I rely on dishes which ingredient list and method I can recite as if it were poetry. Enters this rice dish.In the past eight years, I have probably made this dish once a month. I know....that's a bit scary t...

2010-10-26 08:40:00 A magnificent work commissioned by then First Lady Imelda Marcos and designed by architect Francisco Mañosa is the Coconut Palace found in the CCP Complex in Pasay City, Metro Manila which was both praised and criticized to be ostentatious (or of a display that is tawdry or vulgar). Coconut: Health Nut or Nuts?
2010-02-18 23:53:00 I had a lovely Tom Kha Kai soup (sometimes called, Tom Kha Gui) for dinner last night. Although I wasn't inspired enough to talk about the restaurant, it did get me thinking about coconuts. I've noticed that coconuts have been getting more attention in the past few years; such as questions about the fat in coconut oil or milk, and coconut water as a beverage. And I've been asked, "what's the difference between coconut water and milk, and are they good for me?". Here are my answers......
Ellu Sadam / Sesame Rice Recipe
2010-01-13 05:06:00 I love sesame seeds. Whenever a recipe calls for 1 tsp of it, I dunk in 1 tbsp. The same goes for coriander powder but that's a totally different topic that should be discussed in a different context. For now, let's stick to sesame seeds rice.I am a huge sucker for variety rice. I am very South Indian like that I guess. But this is one recipe I had never heard of until I was gifted Chandra Padmanabhan's 'Southern Spice'. In ingenious and I am still wondering why it took me this long to finally get to it. Its great to pack for a trip and tastes best at room temperature with some raita. Pacha Andi / Raw Cashewnuts Aviyal Recipe
2010-01-06 07:28:00 I am running out of recipes in draft! Although I have a zillion recipes bookmarked and ingredients for some of them, I am just not in the groove yet. In laws are visiting for a week so hopefully I can get some nice recipes from the MIL.Anyway, this one is from my trip to Kottayam in August. The pics were hiding in my "Kottayam Holiday" folder so went totally unnoticed. Pacha andi, or raw cashewnuts are not easily available and from what I know, are seasonal, in addition to being quite expensive. We have a man who delivers this to all our relatives' houses in Kerala, he has a thick moustache and a gruff voice. Last time I asked amma, she said he is getting old and obviously his son doesn't want to get into the "family business". When I was a kid, raw cashewnuts used to be 200 rupees for one kilo. Now they are about 290-300rs.They are quite nice to eat as is, crunchy and fresh. When cooked, they turn a bit mushy and pasty (in a good way). The only thing we ever make with this is avi...
Gluten-Free Coconut Muffins
2009-11-30 01:16:00 Fifty years ago, gluten intolerance (or celiac disease) was thought to be a rare condition. It was long considered to be a disease of childhood. Nowadays, it is a worldwide public health problem and it is one of the most common food intolerance disorders in Sweden. My sister-in-law's daughter has CD. For her, following a gluten-free diet is a necessity. That is why I have collected some gluten free recipes which make it easier for me to invite her. It is nice to have something to offer her when she comes visiting for a coffee break.Coconut is 100% free from gluten. In Sweden, there is (mainly) only one kind of coconut to be found: Finely grated, dried, unsweetened coconut flakes, which come in packages of usually 200 or 250 grams.Light, soft, moist, and flour-less coconut muffins INGREDIENTS:* 150 grams butter (2/3 cup)* a little less than 2 dl caster sugar (3/4 cup)* 1 ½ tablespoon vanilla sugar* 3 eggs* 200 grams unsweetened dried, grated coconut flakes (1 cup or 7 ounces)* approx...

Chakkakkuru Aviyal / Jackfruit Seeds Aviyal Recipe
2009-11-18 09:05:00 I love chakkakkuru! As I had posted earlier in my Jackfruit seeds in Lentils recipe, its not easy to get it here in Singapore. But the story is entirely different in Kerala. My mom usually has an entire ripe jackfruit sent to her by friends of the family and it will be waiting, ripe and fragrant in the kitchen corner, ready to be attacked. Fresh slices are eaten then and there and the leftovers stored away to make chakka varatti and kumbil appam and what not. The seeds are, of course, collected and sun dried before it goes into dishes like aviyal and mezhukkupuratti. Chakkakkuru aviyal is my absolute favourite and this time when I went to Kottayam, amma made it for me. This is her recipe and the picture was taken in Kottayam in amma's rustic old steel bowl. Chakkakkuru Aviyal RecipeServes: 4 as a side dishWhat Is Needed:20 Jackfruit seeds/Chakkakkuru1 drumstick, cut into 3" pieces1 cup grated coconut8-10 small onions/shallots sliced long2 cloves crushed garlic3/4 tsp red chilli pow...

Wheat and coconut cream pudding
2009-06-07 13:57:00 A couple of days back my good friend Kavita left UK and went back to India for good. Before leaving she gave me a bagful of groceries that she had left over and obviously couldn't finish before she left. This is a normal practice amongst us friends . Whenever one of us is leaving for good we kind of have a grocery distribution programme between us . The person who is leaving accumulates all the store cupboard groceries that she cannot use up and asks us to take what ever we fancy . So everyone kind of gets to explore her groceries which is fun . Although of course it is no fun to have one of your group leave forever. It leaves a kind of empty void that is very difficult to get used to.So this time along with other things I got something that I had never used before. She had a container full of hand-threshed whole wheat from her family farm back home in India. So it was of the best quality ever. K said her mom-in-law and sisters in law make a kheer out of it although she had never t...

Coconut Cherry Petits Gateaux
2009-05-20 06:13:00 The temperatures have dropped here in the last few days which is extremely bizarre for us this time of year. Humid is a given, hot is pretty much the norm, hotter is, well, summer. I always take the dogs out barefeet in the morning. I love to feel the dew tickling my feet and waking me up. The other morning was no exception only for the fact that my ritual was paired with a sounding "Oh la vache c'est froid" ("Holy cow, it's cold"). Hurried my little flock back inside, made hot tea and sat with Bill with a few Coconut Cherry Petits Gateaux while he was reading the morning paper.Obviously, I have forgotten what cold really is having been in the South so long but I actually look forward to a good wind and a cold front. I take it all in, making "cold memories" to dip into when August rolls around and I wilt going from the house to the car. Times like this usually give me an urge to make cakes and tea cakes. When I see cherries I am immediately thrown back to our house in Provence whe...

Chocolate Mango And Coconut Cream Cake
2009-04-16 07:42:00 When others were painting eggs for Easter last week, I was busy painting a cake. Well, applying brush strokes to a birthday cake would be a more accurate description. Carol and Fifi paint, very well I might add. I just fiddle with a pastry brush because I am short on time to come up with other things to decorate this delicious Chocolate Mango And Coconut Entremet Cake.I know, I know, being short on time and making a multi layer cake does not seem right in the same sentence. Well, welcome to my logic! It's true I am not the most logical person for "real life" things although I am improving with each year that passes. The only domain for which I am extremely logical is in the kitchen and with food. Do not ask why. And just in case you needed proof let me tell you a little story...I was about 10 or 11 and learning maths and how to solve logical problems starting such as "if train A leaves the station at 11.35 and train B..." and this was about as far as my brain would register.
