Michelle prepared some Almond Thins cookies for the Chinese New Year celebration at the South Arm Cooking Club for Seniors. Michelle called it Monica's Almond Thins. I guessed the recipe is from Monica. The Almond Thins are crispy and quite additive. They are great with a cup of tea.

"Top Chef All Stars" Season 8, Episode 10: Me love Cookies!
2011-02-17 06:56:00
OMG. Cookies for Cookie Monster? This had to be the most hilarious Top Chef Quick Fire challenge yet. The chefs are to make their best cookie for the connoisseur of shortbread. The chefs race around the kitchen with Jim Henson muppets zipping at their heels. Richard is beside himself giddy. Antonia isn't happy with her presentation. She shouldn't fear because her goods are going to be woofed down and I doubt looks count.  Mike's almond and dried cherry cookies are like a party in Cookie Monster's mouth. Tiffany can barely contain her laughter at the tasting.  She used Thyme in her cookie. "How much Time?" Elmo quips. The ultimate winner of $5K is Dale. Antonia came in second with Elmo...

Human Experiment: Labor cookies!
2011-02-01 00:14:00
My friend Nicole pointed me in the direction of a recipe for labor cookies. Hey, why not, right? Maybe I go into labor, and if not I get to eat a bunch of cookies. I modified the original recipe (of course) to double the spices. Labor vibes times TWO!Here's my version: 2 1/2 cup flour 1 1/2 t. baking soda 1.5 t. cinnamon 2 t. ground ginger 1 t. ground cloves 1/2 t. salt 1 t. cayenne pepper 8 T. butter (that's one stick!) 1/2 c. sugar 1 c. brown sugar 1/3 c. molasses 1/4 c. egg whites Preheat oven to 350 degrees. White Chocolate Mascarpone Mousse & Cocoa Nibs Shortbread Cookies
2010-12-03 16:08:00
When I started this post yesterday I had no idea how fast the day would get away from me. Not because of work. Not because of play. I heard news of someone dear to me passed away. And I hit a wall. I could not put two thoughts together without having memories rush through my head.I know we all experience the loss of someone dear many times in our lives and I certainly don't write about all the sad stuff here. I try the opposite actually. But I want to tell you about Francoise. I must. You see, without Francoise, this blog would not be exactly what it is today.A lot of us today have a pinch in our hearts knowing that Francoise is gone. She was, along with her husband Peter, the owner of Mistral, a French restaurant here in town which closed last year. To visitors she was a favorite cousin you see on vacation once a year. To her staff she was a surrogate mom, a favorite auntie and a royal pain in the butt too and we would not have changed that for the moon. She gave me my first positi...

Gluten Free Orange Cream Cheese Cookies

Cookies Get My Vote!
2010-11-03 05:48:00
On Election Day, most of us have an easy choice: Democrat or Republican. My Election Day choices? Cookies or pizza. And, on Election Night 2010, cookies won. Election Night is one of the busiest evenings of the year for news stations. Journalists, producers, editors, managers, interns, directors, engineers, and hosts work overtime to produce the latest election coverage for the listening audience. A bevy of panelists, politicians, and politicos rush in and out of the studio to share their insight on the election. WGN Radio was no different; our station was packed with people from 7pm-midnight. And lots of people at the station means one thing- lots of food! By 6pm, the conference room had turned into Junk Food Heaven...
Crunchy Peanut Butter Oat Cookies
2010-10-30 04:25:00
Ever notice how a homemade cookie kicks the crumbs of a store-bought one? I notice it all the time and despite all my efforts to have a batch of homemade cookies on hand at all times, I take the easy route and buy [gasp!] a packet of biscuits or a bag of cookies from the local Cookieman store. One of the reasons for turning my back on homemade cookies was a recent cookie baking disaster which I promptly fault the recipe for. Another was lack of time and yet another was the extreme state of fussiness my boys had descended into.    Then out came the sun [well, not literally; the weather is as drab as they come towards the wane of winter in Sydney] and my first-born proclaimed that he would like me to make some yummy cookies. This time I turned to a book I have used and  swear by, Michele Cranston’s Comfort from the Marie Claire Series of cookbooks. I added in some extra fibre in the form of rolled oats and the peanut butter cookies were very very nice indeed. &nb...

Chocolate Viennese Cookies
2010-10-07 06:03:00
I found my old notebook when I was packing my storeroom. One of the stuff that was scribbled in it was a recipe on Chocolate Viennese Fingers. It was really simple to make. No wonder I had it scribbled down. :P The original recipe required a fluted tip to pipe the mixture into 'fingers' and it also asked for the cookies to be dipped in melted chocolate. I did some changes to the recipe as I only have a flower tip and I didn't want to dip the cookies into chocolate as I find it difficult and messy to store. I also added corn flour into the mixture to make to more crunchy. I'm sharing my recipe adapted from the original one. The ingredients for original recipes are shown below in *brackets, if there's a difference. Loved the results as it was crunchy and sort of melt in your mouth. I would have added more sugar (I got sweet tooth :P ) but the kids and my husband said it was just nice. Ingredients: 230g Butter, softened 150g Icing/Powdered Sugar *(110g) 200g Top Flour or jus...

Honey Yogurt Mousse With Raspberry Coulis & Shortbread Cookies
2010-09-17 16:11:00
Time flies. Let's face it, the only time when it doesn't is when we twirl our thumbs. And even then, I have seen people twirl they thumbs long enough to realize how time flew by - along with life - as they were doing so. The only thing I've twirled this week were my hair while sitting at the computer to edit pictures and lastly the spoon in my verrine of Honey Yogurt Mousse with Raspberry Coulis. And cookies! I have twirled a cookie around my little finger. My life is now complete...Ok, you know that's sarcasm. There is more to life than mousse and cookies... although...Simplicity has been the motus operandi lately around the house and will remain for a little while (more on that later) and as such, these fit the bill perfectly. I could not help but giggle as I was spooning the different layers in the glasses. I kept thinking of my niece Camille who looked at me with wide open eyes one morning I was twirling honey and yogurt for my cereals. She's at the age of food discoveries a...
NU Football Fortune Cookies

Expecting NU to chow down on Rice. Everybody, get excited! It's Rice week!Generally I'm a huuuuge fan of rice (I think it's genetic). It's probably also because I could eat pan-Asian food every day of the week - and what goes better with some Sweet and Sour Chicken, Garlic Chicken, or Mongolian Beef than some rice?  Nothing, that's what.So in the spirit of Rice/takeout Chinese food, it's time for NU Football fortune cookies. Cornflake Choc Chip Cookies
2010-09-14 08:16:00
Finding a cookie recipe that is like a blank canvas that you can paint  on with different colours every single time is like finding the treasure at the end of the rainbow, rare but so worth it. The recipe I am about to share is that blank canvas for me.    I found this recipe in a very old cooking magazine, late 90s I think. It looked relatively easy, so I made it and it was the perfect crumbly cookie recipe a baker could ask for. I loved it even more because it didn’t have egg as an ingredient, which meant my cookies would be crisp and would not go bad for a very long time, if they managed to survive being eaten for that long.  Looking at the ingredients, I felt that the two main stars of the recipe "cornflakes" and "chocolate chips" could be easily replaced for other ingredients to get variations and I was right. So began a week long cookie fest to fill up my Maxwell & Williams’ Old English Cookie Jar.      &...
36-Hour Chocolate Chip Cookies & Threadless Giveaway!
2010-08-11 14:48:00
Cookies. Milk. Afternoon showers. Looking at the shoreline through the window. That was just the medicine needed the other day. Even if just for the enticing aroma of warm chocolate wafting through the house. I did not know the power of chocolate chip cookies until I moved to the US though. We don't really do those back home. We have eclairs, macarons, financiers. These I knew as my pick up-feel better-never let me down treats. Until I met B.Turns out I married a chocolate chip cookie monster. It does not matter which kind comes out of the oven, a tray usually disappears in its entirety as soon as the cookies are cool enough to handle. And before I am done with the batch I can pretty much start over. His favorites are hands down chocolate chip cookies and I think I have baked 100 different recipes so far. Always in search of the next best one.I must say, after years of marriage and oodles of batches behind me that I get it. the French have their baguette and chocolate bar as a snac...
Fortune Cookies and the "In Bed" Clause

Playdate treat: Mini Cookies & Cream Cheesecakes
2010-07-12 16:50:00
The first -- and only -- other time I made a recipe from Martha Stewart's book "Cupcakes," it was a gloppy, goopy, soupy disaster. Her Tres Leches cupcakes, at least in my hands, made too little cake and way, way, way too much soaking liquid. Major fail. But I decided to give the book another chance the other day, while searching for treats for The Kid's upcoming playdate. So, when I saw these little Oreo "cupcake" cheesecakes, I thought they'd be perfect. Who doesn't love Oreos?...

Girl Scout Cookies!
2010-02-25 10:56:00
The sun was setting, and the time to do or die was coming, however I hadn't known it would be tonight. I had been anxiously waiting for about a month when I put my order in; they had to be shipped here, and getting them through security is tough. I think they are actually transported in un-marked trucks.
Chocolate-Cherry Heart Smart Cookies
2010-02-14 04:30:00
Cookies are good for you. They might not be good for your waistline, unless consumed in moderation (and who consumes cookies in moderation?) but cookies are good for the soul. Cookies make people happy. February is not my favorite month of the year. In fact, it's the only month that I openly dislike. Even though I've had some unfortunate luck in Februarys past, February has a few redeeming qualities: a Monday off for President's Day, a groundhog that sometimes sees its shadow and even Valentine's Day (I can't say no to chocolate)....
Swedish Farmer Cookies & Paraguayan Cane Sugar
2010-01-31 23:58:00
Some weeks ago, I received a brand new package of Dansukker's cane sugar which is produced in Paraguay. This sugar is ecological and carries the international Fair-trade mark symbol (an independent consumer guarantee for the product. It helps producers of Paraguayan cane sugar to get a better deal from International Trade).Whenever I get my hand on a new product, I like to put it to a test. So, I decided to use cane sugar instead of common white raffined caster sugar in cookies. Cane sugar is good not only for fruits and berries but also for baking. What better way to test the baking properties of this product than to bake good old fashioned cookies.Dansukker's cane sugar has rather large, crunchy crystals. It is light yellow in colour and has a caramel sweetness. It suits crisp, sweet, Swedish Farmer cookies' "need". They are typical Swedish cookies. Quick to make, small, sweet to eat. My grandmother used to make them. My mother too. They are a Christmas favorite, but can be ser...

How to make your holiday cookies healthier
2009-12-15 00:27:00
There is no greater time of year to spend the day making cookies than this time.  For many families it is even tradition to spend one whole day baking goodies for friends and family.  I love receiving my annual cookies from my great family friends (Thanks Eileen! haha).   Now there's no reason you have to nix holiday baking for the sake of saving calories. Check out the eating well website for ways to substitute common ingredients in cookies to make them a little healthier!  Here are 3 cookie recipes to try out this holiday season.  They were created by Laurel Hudson, who is the culinary instructor at Wellspring Academies.  (Wellspring Academies is a non-surgical weightloss program designed for young adults and...
Spiral Cookies : Step-by-Step Recipe
2009-11-09 08:00:00
Anyone who saw these on SJ's blog and wanted to make them, raise your hands. Yep, that's what I thought. They are so pretty and look so homely and nice right? That's what actually got me started on this quite messy yet great decision to try them myself. Disclaimer: I am not very artistic. I believe artistic people can make food look nicer and this is especially true for desserts and some bakes. That really didn't discourage me though. I have step-by-step pictures and although my cookies didn't turn out as smooth and spirally as SJ's, they still wow-ed a lot of a people and tasted great. We need to prepare 2 batches of dough and since each require 1/2 an egg yolk, let's get that out of the way. Lightly beat an egg yolk and set aside. We will later halve this. Melt (or bring to room temperature) 1/2 cup unsalted butter and add 1/2 cup sugar to that. Beat until well combined. Add 4 drops of vanilla essence to this along with a pinch of salt. Mix well. Now add half the beaten egg...
