Couscous Salad1 cup cooked couscous1 tablespoon butter1 red onion, chopped1 red bell pepper, chopped1/3 cup chopped fresh parsley1/3 cup raisins1/3 cup toasted sliced almonds1/2 cup canned chick peas, rinsed and drained1/2 cup creamy salad dressing1/4 cup plain yogurt1 teaspoon ground cuminsalt and pepper to taste####THE WAY WE DO IT#######Place 1 teaspoon butter in a saucepan and melt over medium?lowheat. Tonight I finally got around to making a soup from The Ultimate Soup Bible, a cookbook we got from Lisa's brother at Christmas. This easy to make tomato soup is made with Israeli couscous (which is much larger and chewier than regular couscous), onions, tomatoes, garlic, cilantro, and mint; the soup has a great aroma and wonderfully garlicky flavor. This is sounds like such a big recipe but if you just follow the steps it is not as daunting as it sounds and the end result is gorgeous. I made this as I have been trying to recreate a recipe I have had at a local restaurant. I know this is not exactly how they would make it but it tasted wonderful and both myself and my hubby absolutely loved this.I am also thinking about starting back catering again, I have catered before for small dinner parties and for large parties of about 50 people, although never anything huge like a few hundred, but am always up for new challenges. It's very obvious that I haven’t been home much in the past few weeks. I bought some globe zucchini at the market a while back and completely forgot about them due to my lack of cooking for a while after the aforementioned cocktail party and other events on the weekends. Thankfully, zucchini last a loooong time in the fridge. But they don’t last forever, and so I had to do something with them this week. Over the past month or so, I’ve seen a bunch of recipes for stuffed zucchini, but none of them appealed to me – either the flavors were just not up my alley or they used merguez or some other sort of sausage (definitely NOT up my alley). I decided to stop looking for inspiration elsewhere and be original by modifying and re-purposing my own recipe for a Mediterranean couscous salad that I normally utilize as a light summer lunch. The result is a wonderful late summer/early fall supper that not only tastes marvelous, but also looks very impressive on the dinner plate. Tomato Couscous turned out to be my favorite new freezer bag cooking recipe of the trip. (My BF's favorite new recipe was the Ramen Salad I featured yesterday.) We didn't eat it on the trail that day because the trails we chose to do--the East and West River trails along the Presque Isle River--were within walking distance of our campground and the hike itself was pretty short, so it didn't really require much refueling on the trail. A quick trail mix snack did that trick. So, we waited until we returned to camp and then boiled water for a hot afternoon lunch (although this dish could be made with cool water, too). My own dish for the Arabian Nights is something I experimented with and created using my own experiences from living in the Middle East
Calf Stew with Couscous (Kuskuslu Sebzeli Et Yahnisi)

For 1 serving2 tbsp olive oil * 150 g calf meat * 1 carrot * 1/2 onion * 1 tsp chili flakes * 1 garlic clove * 1 tsp cumin * 1 tsp cinnamon * 1 tsp powder saffron * 50 g boiled chickpeas * salt * black pepperFor the sauce:50 ml olive oil * 1 garlic clove * 3 red chili peppers * 50 g nutsFor the couscous:1 cup couscous * 2 cups water * saltPour the olive oil on a pan. Add the chopped onion, the minced garlic and the meat cut into small cubes. Sauté for some minutes on low heat. Add the carrot cut into small cubes, the salt and all the spices. Continue sautéing for 2 minutes more. Then, add 2 cups of water and cook on low fire until the meat is soft. Add the boiled chickpeas, mix well and turn the fire off. Prepare the sauce. Place all the ingredients in the mixer. Boil the couscous and then sauté a little on low heat. Serve the couscous covered with the meat and the sauce.
