Thank you guys for toasting Barbara with us in my last post. I know it meant a lot to her and it did to me. (And yes, those were my feet!). It's been a tough journey for her and I often told Bill I'd give my last shirt to get on a plane and try to be of some help (laundry, groceries, you know the drill), crack up some stupids joke or just hold someone's hand. He understands. He also adds that he doesn't like when I travel, saying that I always prepare some good dinners for him to eat while I am gone, I rarely leave dessert. Wrong. Cookies, I always make cookies.This past weekend however, when I went to Veronica's in Virginia to teach what we now call a Pastry Bootcamp (a nice one), leaving four of these Ginger Fig Streusel Tarts with some Lavender Honey Ice Cream. He ate the coffee-chicory macarons. Go figure. He actually did it (unknowingly) right as we had plenty of the tarts to celebrate our 11th anniversary. June has definitely been a strange month starting by my baking the latest Daring Bakers challenge the first week it was revealed. That has not happened in almost two years but there are too many work deadlines this month to monkey around with all forms of important business. Work and Daring Bakers that is. These Bakewell Cherry Tarts served with Cherry Pit Ice Cream Milkshakes don't monkey around either.Oh yes, even after all this time I still take my DB very seriously!! Our challenge this month was to make this traditional British tart and beside the three key components of the shortbread pastry crust, preserves and frangipane filling, we were pretty much let loose to do as we desired. Ich hatte ja vor geraumer Zeit eine Packung von Horlick's Malted Milk Powder erstanden. Rezepte für weitere Verwendungen finden sich reichlich im Netz. Da die Hüttenhilfe im Fremdkochen-Event des Monats Eis als Thema hat, habe ich mich für Malteser Eis von David Lebovitz entschieden. Gefunden habe ich das Rezept bei "A Consuming Passion". Ich habe die Rezeptur ich ein wenig verschlankt und statt der Schlagsahne Kondensmilch verwendet. Wer Maltesers mag, wird auch dieses Eis mögen. Ich hätte nicht gedacht, dass mir das Eis nach dieser Erfahrung so gut munden würde. The recipe I ended up using was the Vegan soy ice cream recipe from Post Punk Kitchen. The recipe was very basic and used minimal ingredients. All I had to do was customize it with my choice of flavor.Ingredients:12 ounces firm silken tofu1 cup plain soy milk1/3 cup maple syrup2 tsp vanilla5 tsp green tea powderDirections:Combine the ingredients in a blender and blend until the mixture becomes smooth.Next, I added the green tea powder. I added a little extra for a stronger green tea taste.Pour the mixture into the ice cream maker and freeze following the manufacturer's instructions. For my machine, I left it on for about 20 minutes and that did the job.Here's the green tea ice cream.It came out great! The texture of the ice cream was very smooth and creamy. The green tea flavor was perfect too. I didn't add any sugar, because I like my green tea ice cream bitter. There's something about sweeten green tea ice cream that just bugs me a bit. Although my weekend was pretty busy, I did manage to put aside some time for ice cream making! I received a Cuisinart Ice Cream Maker as a gift several months ago (Thanks!). Since it was the winter back then, I decided to save it for spring/summer time. The first day of summer is about a week away, so I figured it would be a good time to get familiar with ice cream making.I took the ice cream maker out of the box and washed it with some warm soapy water, being careful not to scratch the freezer bowl. Next, I placed the freezer bowl into the freezer overnight. The ice cream maker came with a small booklet with instructions and recipes for ice creams, yogurts, gelati and sherbets. However, being lactose-intolerant, I browsed the internet to find a good recipe for an ice cream base which used tofu and soy instead of milk and heavy cream. A couple of days back my good friend Kavita left UK and went back to India for good. Before leaving she gave me a bagful of groceries that she had left over and obviously couldn't finish before she left. This is a normal practice amongst us friends . Before I start waxing poetic about this delicious Cherry, Rose and Coconut Ice Cream, it is high time I announced the winner of Michel Roux's Pastry picked at random by my better half: congratulations Sadiya! If my memories serves me right from an email baking question last year, the book is going all the way to Bahrain!I meant to post this much earlier than today but it has been a very strange week, complete with a computer virus in the middle of it. I think my funky little computer is back up and running correctly. With no one at McAfee, Gateway, Microsoft, Comcast able to help us out unless we forked $100, we blindly relied on internet forums to find the solution.
