The way I feel about aloos (potatoes) is, if I have no other veggies to cook with or not enough, then it makes a good add-on. I have tried it with different vegetables and recently, gave a shot at using it with tindora/ivy gourd. There was some tindora left over after making a stir-fry with it so I went ahead and came up with this recipe. It is a useful thing for making simple saute curry for lunch, or koottu. For dinners, it adds crunch to our noodles / fried rice - and I even use it to add bulk to left over dosa batter to make crunchy uthapams for breakfast.Spinach is best used on the same day or at max the following day. That's how Keerai Milagootal managed to feature on today's menu. The ideal partner to this would be a potato roast (always ideal for everything :) or a sliced plantain roast. Laksa has begun to sporadically appear on The Food Network, the Travel Channel and other foodie programs and networks. Laksa made it's most recent appearance on last nights episode (episode 11) of Top Chef on Bravo, with a shrimp laksa made by one of the contestants. Bourdain, evidently judged the Laksa to smoky for his taste, after announcing that he "took his laksa seriously". Interestingly, it might be noted that Bourdain presumably had his first laksa two seasons back on his traveling foodie show "No Reservations".

Vegetable Curry Made With Fried Coconut Paste
2008-04-23 09:13:00 Vegetable curry made with fried Coconut paste Ingredients for Vegetable CurryCarrot- 2French green beans – 10Potato -1 big size( Cut above vegetables in equal size and Microwave high for 4- 6 minutes.)Shallots -10Cooking oil – 1teaspoonSalt – to tasteCurry leaves- 2 springsFor Coconut paste ½ coconut, scrapped5 red chillies2 teaspoon coriander seeds1 teaspoon Jeera ( cumin )3-4 flakes of garlic¼ teaspoon turmericRoast and grind all the coconut paste ingredients together to a fine paste. Sprinkle water while grinding.MethodHeat oil in a frying pan, add shallots and fry till golden brown. Add coconut paste and curry leaves. Sauté well for 5 minutes.
