Arachuvitta Sambar
2009-01-07 07:47:00 Arachuvitta sambar literally means sambar to which ground spices are added. The name itself is so traditional and delicious to me! This is a tried and tested recipe that works like a charm. The last time I made it, I made a note of the amount of ingredients I am putting in because normally for sambar, I throw in stuff and it comes out well invariably. This is a slightly more tedious sambar than how I normally make it but well worth the effort, as always :) TH loves to have this with curd rice, since I make it slightly thicker than normal. What I Used:Toor dal / tuvar dal / thuvaram paruppu - 1/2 cupShallots / small onions - 1/2 cup, halved or quarteredTamarind paste ? 3 tbsp (or a marble sized amount soaked and squeezed in half cup water)Asafoetida / hing / kaayam / perungayam - 1/4 tspTurmeric powder - a pinchMustard seeds ? ½ tspCurry leaves - a fewSalt - to tasteOil ? 2 tspChopped fresh coriander leaves - for garnishingRoast, cool and grind for masala mixCoriander seeds / malli ? ...
Kandi Podi / Gun Powder / Andhra Style Paruppu Podi
2009-01-05 05:50:00 This is my dad's favorite accompaniment to anything. So much so that each time I visited home from Hyderabad, he would request for this and only this. I try it when we go to Andhra thali restaurants but recently I started craving them and decided to make some.Andhra Paruppu PodiWhat I Used(Recipe from here)Toor dal / Tuvaram paruppu /Split gram - 1 cupMoong dal /Paasi paruppu / Cherupayar Parippu - 1/2 cupChana dal / Kadala paruppu / Bengal gram - 1/2 cupRed chilli powder - 2 tbspBlack pepper powder - 2 tspHing / Asafoetida / Perungayam - 1/2 tspJeera / Jeerakam - 1 tbspSalt - to tasteHow I Made It:1. Kathrikka Podi Curry / Brinjal Cooked in Roasted Spices
2008-12-10 10:23:00 I apologize to all those brinjal haters out there for posting so many brinjal recipes but these are quick and easy and one of the vegetables that are available at all times for me. Also, I love brinjals :DThis one is a traditional Tamil Brahmin Recipe except that I made a slight twist in it and added pureed onions. You can omit that and you will get a dry fry dish. I wanted something that was slightly soft and not fried. What I Used:Brinjal / eggplant - 2 cups, cubedOnion - 1 small, ground to a paste or chopped fineMustard seeds - 1/8 tspOil - 1 tbsp (preferably gingelly/sesame oil)Salt - to tasteTo dry-roast and grind:Dhania / malli - 2 tsp (or 3 tsp dhania powder)Bengal gram / Chana dal / kadala parippu - 1 tbspUrad dal / uzhunnu parippu / uzhutham paruppu - 1 tspDried red chillies - 4, adjust to tasteCurry leaves - a fewHow I Made It:1. Padavalanga / Podalangai Koottu
2008-11-27 07:49:00 Padavalanga / Podalangai Koottu is one of my favourite types of koottu. I always say that koottu is the Tamil version of thoran, a staple recipe in Kerala cooked with a variety of vegetables. I make that as often as I make koottu, to balance out the Tamil-Mallu couple that we are. TH doesn't like too much coconut in his food either way, so I compromise by toning it down a bit. What I Used (Serves 2):Snake gourd / podalangai / padavalanga - 2 cups, cut into 1" squaresChana dal / kadala parippu - 1/2 cupGrated coconut - 1/2 cupShallots / small onions / chinna vengayam / ulli - 4 nosGreen chillies - 2 nosCumin seeds / jeera / jeerakam - 1 tspTurmeric powder - a pinchRed chilly powder - 1/2 tsp (optional)Salt - to tasteFor tempering:Mustard seeds - 1/4 tspCurry leaves - a fewShallots - 3 nos, choppedOil - 2 tspHow I Made It:1. Cook the snake gourd and chana dal in little water until both are soft. This will take about 15-20 mins. I pressure them for 2-3 whistles to make it quicker.2. M...
Paruppu Urundai Kuzhambu
2008-10-31 04:33:00 Paruppu Urundai Kuzhambu literraly means dal balls in a gravy. As with most tam Brahm recipes, this one has the most common ingredients like toor dal, tamarind, hing and of course sambar powder! I have mentioned before how new I was/still am to an extend to Tamil Brahmin cooking. My parents-in-law are here for a visit and that means amma takes care of all the cooking and dinner is ready by the time I get back from office. Bliss. But, I told her first off that I wanted to watch her making Paruppu Urundai Kuzhambu. The dish features dal balls in a tangy tamarind sauce. Though it looks a bit like kofta curry, the recipe couldn't be further from it. Amma had given me the recipe long back and I tried it once but the dal balls (urundai) dissolved in the sauce and it ended up like sambar in the end. It does take some practise to get it right and what better way to learn than by watching! What We Used:Toor Dal ? 1 cup, soaked in water for atleast 1 hourOnion- 1 small, mincedHing - 1/4 tspDr...
Thattai - A Savory Snack For Deepavali
2008-10-27 10:18:00 I wanted to share a Diwali savory snack with you very quickly. So no yada-yada this time. Just a quickie thattai recipe that came out real well, even for a newbie like me.What I Used:Rice flour - 4 cupsUrad dal - 1/2 cup, ground to fine powderChana dal - 2 tbsp (I didn't use them since didn't have any)Butter - 1/3 cupRed chilli powder - 1 tspSesame seeds (ellu) - 2 tbspCurry leaves - a few, each cut into twoSalt - to tasteWater - about 1. 5 cupsOil - for deep fryingHow I Made It:1. Mix all the ingredients and make a thick dough adding very little water at a time.2. Divide and shape into marble-sized balls. Normally, the store bought ones are bigger but I made them small so that I can use less oil while frying.3. Dampen fingers and gently the flatten the dough on a plastic sheet (I cut up the plastic bag in which I got the urad dal), to get a uniform disc of about 0.5cm thickness.4. Prick the discs lightly with a fork (to prevent puffing up) and deep fry till golden brown.Tastes aw...
Parippu Usili / Usli
2008-09-25 03:56:00 This is the quintessential Tamil Brahmin dish that I was unaware of till I met TH. This is his favourite side-dish to go with rice and rasam or kara kozhambu. I have posted this dish once before that was not an 'authentic' recipe. This is straight from my mom-in-law's recipe archive and I make it around once a week. The main ingredients are french beans and toor dal but the recipe is flexible enough to accommodate slight changes. Sometimes I use cluster beans instead of french beans and it works just as well. I have even heard some make cabbage usili but haven't tried this out myself. There are also different and healthier options to cook the dal as opposed to the traditional method of drenching it in oil and telling yourself its healthy cuz it has lentils (aka proteins). What I Used (to serve 4)French beans - 1 cup, cut into 1" pieces and boiledToor dal (tuvaram parippu) - 3/4 cupChanna dal (kadala parippu) - 2 tbspDried red chillies - 3 to 4Hing/asafoetida (kayam) - 1/4 tspTurm...
Maladu/Pottukadalai Urundai
2008-08-25 09:25:00 Weddings! Phew! Tiring, exciting, colorful and family time! I love them. This time it was my sis-in-law who tied the knot and since this is the first wedding we are attending after outs, both TH and I were in the limelight too. And god knows how I love that! It was a typical Brahmin wedding with the works. Ours wasn't, so I was seeing most of the customs for the first time. Can I say phew again?I wanted to get back after this small and nice break with something sweet. One of the very few sweets I had in my archives - Maladu. I love it and prefer it to the besan ladoos. What makes this recipe even more special is that my mom, sis, niece and I made this two days before my wedding so put in the thamboola pai (a return gift bag for weddings that contains a coconut, betel leaves, turmeric, kumkum and sometimes a small box or steel vessel with sweets.) Mine contained all these things and these maladu. We made around 450 of them, wrapped them in butter paper and put them in small steel co...

Sweet'n'Tangy Kumquat Daal
2008-04-24 08:02:00 We chanced upon some kumquats at Uwajimaya a few days ago. And I couldn't hold my curiosity any longer. So, we bought a bunch of them even as we kept wondering what we'd do with them! I'd eaten them raw a couple of times and liked them as long as they were perfectly ripe and juicy (except for the damn seeds which are bitter and sometimes a weird blue in colour!) And I realized earlier today

Broad Beans with Lentils
2008-03-10 12:36:00 I came across this really simple recipe at Sra's and immediately wanted to try it with the beans I had lying idle in my fridge. I had only about 10-12 beans so added more toor dal than in her original recipe. The taste was very similar to beans parippu usli but the broad beans gave it a slightly different look and flavour. What I Used:Broad beans - 12Toor dal - 1/2 cup, soaked in water for 30 minsChopped garlic - 6 podsRed chillies - 4, broken into 1" piecesJeera powder - one pinchHow I Made It:1. Boil the beans in some water till tender. Leave aside.2. Temper mustard seeds in little oil and fry the chopped garlic till brown. Add the chillies and jeera powder.3. Mix in the beans and toor dal and fry well for another 3-4 minutes. Add salt and remove from fire.It was really yummy with some tangy rasam. Quick to make with minumum ingredients - my kind of recipe :) Thanks Sra!

2008-03-03 04:30:00 Daal Makhani has a lot of different names. It is also known as Kaali (Black) Daal or Maa ki Daal. It is a again a very typical dhabba dish and has a fantastic flavor. An all time classic party dish.

Recipe #23: Empress Daal
2008-01-12 00:42:00 I'm planning on making the below recipe as part of a full-course dinner for both my fiancé & my friend (whom I happen to run with & is featured anonymously from time to time on my running blog). I'm very excited that my friend will be joining us this Saturday night for dinner. We've been running together a lot lately & it'll be nice to hang out together in another setting & do a completely different activity together for a change -- eating! Well, we've got more in store than just eating, but that's what we're going to start with anyhow.....And even though I'm extremely busy & in reality, probably don't have time to be cooking so extravagantly, there's a large part of me that's very happy to be hosting the dinner, as it gives me an excuse to start cooking again! Plus, I love doing big, challenging, creative dinners that make my friends & family squeal with joy! ;-) So, on the menu are several favorites I've already posted on this blog (corn cu...
Vellarikka Cherupayar Parippu Curry/Cucumber-Daal Curry - Kerala Style
2008-01-07 06:49:00 I made this gravy last month when I had invited a colleague and her grandmom for lunch, which was me reciprocating for all the dinners I had at their place the previous week. It is simple, easy, protein-rich and requires minimum amount of oil since the little amount of added coconut gives it a nice flavour.Split yellow peas or moong dal is considered one of the most healthiest foods in the world and Indian cuisine uses it extensively, be it North, South, East or West. Kerala Cuisine is definitely not as lentil-rich as its northern counterparts, but there are some wholesome curries which use minimum oil and are still protein-rich.Vellarikka Parippu CurryWhat I Used:Serves : 2Yellow split peas/split moong dal/mung dal/Cheru payar - 1 cupCubed cucumber/squash - 1/2 cupTurmeric powder - one pinchGrated coconut - 1/4 cupShallots - 4-5Green chillies - 3Hing - one pinchJeera powder - 1 tspMustard seeds - for temperingCurry leaves - one strandSalt - to tasteOil - 2 tspHow I Made It:1. Steamed Toor Daal Dill Cake
2007-12-03 10:45:00 When life gives you a lemon, make lemonade, said somebody. Groovy! But what does one do when given a soaked cup of Toor daal? This was my quandary one weekday evening after getting back from work, when I found myself staring at soaked Toor daal, when I thought I had soaked Chana daal in the morning to do God-knows-what. “Serves you right, for placing the Toor daal jar right next to the Chana daal, anybody in the right mind would be confused†said the inner voice. “Yeah right! I have hundreds of chores to finish before setting foot out of home, not to mention handling toddler tantrums, feeding, cooking etc etc†I pitched in. “Ah! There she goes on the defensive again, but anyway I am sticking to my theory†the inner voice said adamantly. “Never mind the nuances. Let us move on and find out what to do with this. We already have lots of daal, so making sambhar/rasam is out of question. Also I want something quick, healthy and more like a side-dish that even the kid can e...

Parippu Rasam/Rasam with Daal
2007-11-06 06:38:00 I feel that lunch is incomplete with some 'ozhichu koottan' (gravy, for lack of a better word) to go with it. The most common ones I make are sambhar, rasam and dal. It was gettng quite boring so this weekend, I decided to mix-n-match and make parippu rasam. I made the consistency slightly thicker than normal, the way I like it.What I Used:Toor dal/tuvar dal - 1/4 cupTamarind paste - 2 tbspRasam Powder - 2 tspRed chillies - 4Turmeric - 1/2 tspCrushed garlic - 8 clovesWater - 1 1/2 cupsHow I Made It:1. Pressure cook the dal well with turmeric. Once done, mash it well and keep aside.2. In a little oil, cackle the mustard seeds, add the red chillies and garlic and fry for a minute. Then add the rasam powder and fry for another minute.3. Mix the dal and add the tamarind paste with the water. Adjust the water at this stage to have the consistency you desire.4. Bring water to boil, add required salt and remove from fire.5. Garnish with fresh coriander leaves.Serve hot with steamed rice....

Daalder and Holum: U.S. Should Aim for World Free of Nuclear Weapons
2007-10-06 22:02:00 Should the United States aim to achieve a world free of all nuclear weapons? The answer, as laid out in a terrific op-ed by Ivo Daalder and John Holum in the Boston Globe, is a resounding yes. Nearly 20 years after the Cold War ended, the time has come to make a concerted effort to verifiably rid the world of all nuclear weapons. The United States must start by recognizing that the threats it confronts have changed and so, consequently, has the role and purpose of our nuclear weapons. [snip] Tomorrow's nuclear threats are different. They are that unstable regimes or, worse,... [This is a content summary only. Click on the above link for the full post.]

Sex education and the Indian media - daal mein kuch kala hain
