It is probably an extremely rare, make that practically never day, when I think of trying to do any prepping prior to leaving for work. Well, my dear Aadi, has just been asked to get of the bottle all of 2-months back. My life has not been the same since then, I spend about 30 minutes every morning wrestling with him to drink from these silly colorful cups that I have bought him. Well, since I am pretty much stuck in the kitchen, a couple of day back, I was fussing around. Friday night’s dinner is usually Idli or Dosa at our house and we enjoy it. For one it’s the beginning of the weekend and second nobody has complaints about the taste. This works well for me as I do not have to toil in the kitchen for a long time and the only thing to prepare is the chutney. I think it is a good way to relax with the family, chat, and unwind while looking forward for the weekend. The only caveat here is that I have to remember to soak the Daal and rice Thursday morning itself before I go to work, that way I can grind the batter after I get back home.  I know, I know, I let the batter rest for 24 hours at least especially during winters so that it ferments well. One of the first things we have to have when we get back to Kuala Lumpur is having roti canai or thosai. I love roti with fish curry but on this occasion I decided to have thosai. I must say that they did it really well at this curry house opposite Ambank on Jalan Yap Kwan Seng.Nescafe ice - sweetened with condensed milk plus sugar!Rava dosa for a change. Close the lid and allow it to cook. Add oil/ghee and flip and cook the other side.Serve hot with your choice of chutney.Enjoy!!!

Here is my MIL's recipe for plantain dosa. I was so surprised when she mentioned the minimal ingredients it required. I had to try it out immediately and was so glad that it turned out crisp and thin - best of all this needs no fermentation at all.INGREDIENTS:2 Cups of Rice soaked in warm water for 2 hrs2 raw Plantains(or 3 cooking bananas) - pealed and slicedSalt as per your tasteMETHOD:Grind soaked rice along with sliced plantains into a very smooth paste adding enough water and salt.Now add more water until you get the batter to a free flowing honey consistency.Heat the thava( preferable cast iron thava) and pour a ladle full of the dosa batter and make a quick thin circle working from center going outwards.Cover and cook for few secs and then add little oil/ghee and roast it nicely.Serve hot with your choice of chutney or sambar.
