I actually love the slower pace that we are able to enjoy in the ungodly hot months of June, July and August. 2007-09-25 06:44:00 Eggplant is one of those weird vegetables - it seems to take a lot of thinking to find the "right" recipe for it. And it either turns out fabulous or really crappy, no in between! I was looking for a side to go with some dosas a few days ago, and realized I had some really fresh indian eggplant waiting to be cooked up. After much dithering, I decided to go with a simple, straightforward recipe - stuffed & baked. After slicing off the tops of the little eggplants, I made a cross cut lengthwise in each of those - for filling with the stuffing. I had some sambar powder that I'd made a few days ago - seemed like the perfect filling. I loaded up the eggplants with the powder+salt, spritzed them with some oil spray and baked them for about 15 minutes at 400 F. For the first time ever, I garnished these with some chopped fennel - the combination of flavors was awesome!Hmm ... this is an odd picture, these look more like dates than eggplants!!! :)

Of course, at this point, I find myself with too many tomatoes and eggplants (amongst other vegetables) on my hands. Although I love being in the kitchen, trying to use up all this produce sometimes tires me out, which is why roasting has become my preferred method of dealing with much of my summer produce. I painted an orange and a paper bag a few days ago for a juried competition, and I fell in love with the results, so I'm finding myself waiting for tat strong sunlight coming through my kitchen window at noon to arrange my fruits and veggies to photograph them as a reference for my works. Tuna and Eggplant Burgers
2007-08-30 17:51:00 Ah, another recipe in the saga of using up leftovers... as you can see, I had a LOT of leftover grilled eggplant!2 cans tuna, drained1/2 medium eggplant, cooked and chopped*1 egg (or 2 T. ground flaxseed plus 1 T. water OR egg replacer)1 large jalapeño, chopped with seeds1 T. organic virgin coconut oil or nonstick spray, for frying.Seasonings**:rosemaryore-ganosea salt and peppercrushed red peppercayenne pepperMelt oil in pan over medium high heat. Drain tuna and add to a large bowl with seasonings to taste. Add chopped eggplant, jalapeño with seeds, and egg and mix. When oil is melted, spoon tuna mixture into pan as little blobs and squish with the spoon or spatula to make patties. Cook over medium high heat for 3-4 minutes then flip. Cover and cook for another 5-7 minutes or until burgers hold their form. Eggplant Börek (Patl?canl? Börek)
2007-08-28 20:17:00 2 tbsp olive oil * 3 eggplants * 1 onion * 2 green peppers * 2 tomatoes * salt * black pepper * 4 phyllo pastry sheets (yufka) * 2 cups milk * 1/2 cup olive oil * 2 egg whites * 1 egg yolkTo garnish:1 egg yolkPeel the eggplants and cut them in small cubes. Place them on a bowl with water and salt for 10 minutes. In the meantime, sauté the minced onion and peppers in 2 tbsp of olive oil. Add the eggplant. Peel the tomatoes, cut in cubes and add them to the other vegetables. Let it cook until all the juice evaporates. Let it cool down and reserve. Prepare a liquid mixture with the olive oil, the milk and the eggs. Place two phylo pastry sheets on a greased oven tray. Make the phylo pastry wet by pouring half of the liquid mixture over it. Cover with the eggplant filling. Then, cover the filling with two phylo pastry sheets and pour on the rest of the liquid. Brush with the egg yolk.
