Kimchi has been eaten for the last 3000 years, and only recently (12th century) began to be prepared with the addition of chili peppers. Other variations today include kimchi made of radishes, scallions, or stuffed cucumber. If you are, then I think you will take to this specialty from Melaka, Malaysia. Called Cincaluk, it's made from tiny shrimp left to rot in salt and rice for weeks on end till it turns a pinky brown colour. The smell, needless to say, stinks like cheese but it's helluva delicious! What To Buy: For us Peranankans ( Straits Born Chinese ) , no dish is ever complete with this stinky, salty shrimp sauce. However, many people never get used to neither the smell nor the taste. They are avoiding this fermented food dish forever. Those who are familiar with the durian fruit say that fermented herring stinks worse.The Baltic herring is caught in spring, when it is just about to spawn, then fermented in barrels with a minimum of salt for one to two months, and finally tinned where the fermentation continues.The third Thursday in August is traditionally the right time to eat fermented herring (surströmming). When my brother and I were younger, my father always make us eat porridge. It always came with salted eggs, Bean Sprout, Tau Kwa or Tau Bok and Fermented Bean Curd. I can eat two bowls of porridge with just the Fermented Bean Curd.
