Day old boiled potatoes seem to become firmer and easier to handle than newly boiled ones. Besides, cold boiled potatoes can be used in so many ways. In Greece, they eat a lot of cheese. This country holds a top place for cheese consumption per person in all of Europe (together with France). A Greek recipe of Patatokeftedes (potato balls) in the cookbook 'The Original Greek Cooking', inspired me to add Feta cheese into potato patty batter. A non-melting cheese like Feta seemed to be the right thing. I have been to Greece but I have never had Patatokeftedes, so I don't know how these feta potato patties compares to Greek potato balls. Ero indecisa fino all'ultimo ma poi ho pensato che se mi veniva voglia di pasta fresca, per fare la sfoglia non avrei avuto lo spazio necessario e quindi era essenziale averla a portata di mano. Cento grammi di farina ed un uovo sono necessari per sfamare due persone (o una come me molto affamata). E' incredibile poi quanto sia veloce da realizzare, tanto che se abitate in un posto pieno di traffico, fate prima a farla in casa che ad uscire per andarvela a comprare. This weekend, I had given my husband a grocery list which included a leek. Yes, one leek, to use in a leek and artichoke frittata. The store he went to, however, only sold leeks in bunches of three. Three leeks?! What would I do with two extra? Soups or stews with leeks are an option, but I already had my menu sort of set for the week and plus, I wasn't really in the mood. I've never prepared or eaten leeks simply on their own as a side dish or salad, but I have seen pictures and recipes, and I figured with two whole leeks and two of us, that would probably be a good thing to try. Feta Cheese Halva with Pistachio (Antepf?st?kl? Peynir Helvas?)
2007-05-15 11:50:00 1 kg feta cheese * 2 cups water * 2 coffee cups corn starch * 2 cups sugar * 1 cup crumbled pistachiosPut the feta cheese in cold water to get soft. Then, filter very well and crumble with a fork. Dissolve the corn starch in a cup of water. Bring to boil the remaining water and the sugar. Add the corn starch with the water and let it cook over low fire for 10 minutes. After that time, add the cheese and go on coking for 15 minutes more. While the halva is still warm, take small portions in the amount of a walnut and make balls with your hands. Sprinkle the halva balls with crumbled pistachios. Serve warm or cold. |
