I love green onions a.k.a. spring onions or scallions, and although there is a slight difference between each, I use them pretty much interchangeably in my cooking. This week, though I stopped by a roadside stand near Kutztown and found lovely bunches of real-for-real scallions and brought them home.Pretty, aren't they? Once I had them, I wasn't quite sure what I was going to do with them. I prefer the more delicate and smaller green onion because I'm not a huge fan of raw onions in any form. I have been trying to use up a large bucket of salt herring fillets. There were still four herring fillets left after Easter and that was enough for two people as a dinner. There are various ways of preparing the herring fillets before frying them in butter. Rye flour may be used to coat them, but I prefer double crumbing. INGREDIENTS: * 4 soaked, skinned and deboned salt herring fillets * approx. 100 ml plain flour * 1 beaten egg * approx. 100 ml bread crumbs * 2 tablespoons butter for frying METHOD: 1. I haven't buy (whole) Groupa for a long time as it too big to fit into my small pan wok for cooking. I got one anyway and told the fishmonger to get the smallest he can find. :P He even 'butterfly' it for me.I'll be lucky if I can get the whole fish in. I've been growing zucchini for several years now and I never really took the time to pay enough attention to determine which flowers were male and which were female. As a result I've missed out on many a fine dish of fried blossoms.This year I went out and took photos as the buds, and then flowers, were growing and figured it out. I set out to the wet market but to my huge disappointment, they were out of cauliflower. A bit disappointed, I headed over to the supermarket to get milk, and there in the chiller was a packet of baby corn. This is a quick and easy meal to do, it tastes great and is a nice light meal. Please note: I cooked this in a wok so if you are using a large frying pan, cooking times will vary as woks get very hot. I love mussels, but please make sure you do remove beards and scrub thoroughly as you will end up with a not nice fish smell in your food if you don't. I find if your mussels are very dirty with lots of barnacles on them, than you can not remove, it is often better to boil them separately and add at the end to warm.
