It is indeed a first in the history of the Daring Bakers, a gluten free and vegan challenge! Since being a Daring Baker in December 2006, I have seen the group grow by leaps and bounds, with members from all walks of life partaking in our monthly bake-offs. I know it is daunting at times for some Daring Bakers to adapt recipes to fit their dietary lifestyles and I always marvel at how creative and resourceful gluten free and vegan members are. Chia not only works as an egg substitute, but it also works as a flour substitute, which makes it ideal for people with gluten intolerance and celiac disease or people who are limiting their wheat intake for other reasons. I've seen two different methods described for using chia as a flour substitute. The first is to simply replace the flour in any recipe with equal parts chia flour or chia mixed with another gluten-free flour. The second method does not eliminate the flour altogether but reduces it by using 3 parts flour to 1 part ground chia or Salba. So, if the recipe calls for 1 cup flour you would use 3/4 cup flour and 1/4 cup chia. To make chia flour, you can grind chia in a coffee grinder or powerful blender such as the Vitamix. Since making these bagels (and posting about them), I've read a variety of other bagel recipes.One important method I noticed in these recipes is that apparently my original process of boiling the shaped bagels, letting them rise, and then baking, is not the "authentic" way to make them.What makes much more sense (and I'm kicking myself for not realizing this!) Is that you FIRST want to let the shaped bagels rise in your 200 degree warmed oven for 45 minutes - 1 hour. THEN boil them (20 seconds on each side) right before baking. This will allow the yeast to work much better in rising the bagels. It will also give a more chewy texture by boiling right before baking. So those of you bagel gurus out there, forgive me!
