Greek Yogurt Chicken
2008-05-03 15:18:00 Ingredients: 1 cup plain lowfat yogurt 1 finely grated peel of 1 1 lemon 1 1/2 tablespoon lemon juice 2 tablespoon finely chopped fresh oregano 2 tablespoon finely chopped parsley 1 medium clove garlic, peeled and 1 forced through a press 1/4 teaspoon salt 1 freshly ground black pepper 1 to taste 4 chicken breast halves on the 1 bone, skin removed Instructions: 1. Combine the yogurt, lemon peel and juice, oregano, parsley, garlic, salt and pepper. 2. Put the chicken into a dish and spread about 1/4 cup of the yogurt sauce over the chicken. Cover with plastic wrap and refrigerate several hours or overnight. Cover and refrigerate the remaining yogurt sauce. 3. Place the chicken on a rack in a baking pan and bake in a preheated 375-degree oven 30 minutes. Turn the oven 30 minutes. Turn the oven to broil and continue cooking about 5 minutes, until the chicken is browned on top and cooked through. 4. Spoon the yogurt sauce over the chicken and serve.

So I figured I'd buy all the ingredients and find a recipe when I got home. But when I got home, I couldn't find a recipe that made me happy, so I decided to just make something up on my own with the ingredients I had. And I made Greek-stuffed chicken.I basically threw all my ingredients in a bowl. They included:half of a red onion, choppeda bunch of sun-dried tomatoes, choppeda lot of feta cheese, crumbleda bunch of kalamata olives, halveda huge handful of parsley, choppeda splash of balsamic vinaigrettesome pepperSo scientific, right? I love the show – immediately hooked on it from the first episode. Jacob Zachar: Thank you very much. How did Rusty happen for you? I moved out here from Chicago to LA. I started getting some auditions and Greek came up. I actually auditioned for the role that Clark had (Dale) first. They ended up switching me around and asking me if I wanted to read for Rusty and one thing led to the next, and I ended up getting Rusty. It kind of appealed to me a little bit more. I feel Dale’s more of a character, far out kind of role, and this part of Rusty’s like a Boy Scout, traditional type of guy. I searched through Recipezaar.com for a fish recipe and came across this simple recipe for Greek Tilapia. Previously, I made a post on a recipe for Flounder Mediterranean, which I enjoyed tremendously. However, I had limited ingredients and time was also an issue. This Greek Tilapia recipe, on the other hand, only required about 30 minutes to prepare and cook.I ran through the list of ingredients and made slight modifications to fit what I had in my kitchen. I used my white fish fillets instead of the tilapia fish. The recipe called for kalamata olives, but I didn't have any in stock at the time.
