Summer is here and with it comes a fresh plethora of herbs! If you are like me, sometimes you get really excited about that and can’t help but scoop up big bunches of fresh herbs when you see them at the Farmers Markets or the grocery store. Then you end up throwing half of them away after they have sat rotting in your fridge for days on end…well that is just no good. Herbs are a wonderful way to get more greens into your diet and many of them also have other health properties - not to mention they improve the smell of ones breath! So what does one do with an over abundance of herbs? On a recent trip to the Farmers Market I procured rather large bunches of Arugala, Basil, Mint and Dill. I brought them home, filled up some vases with water, stuck the herbs in the vases and put them promptly into the fridge to use whenever the mood took me. Leafy green veggies...most people realize these are full of vitamins, minerals and of course fiber, but did you know that a once-a-day habit of eating these could reduce your risk of lung cancer?That's what a recently reported study from Spain found.Researchers there examined the diets of 617 adult men and women, half who had lung cancer and half who didn't. Their results showed that those subjects who ate their leafy greens at least once a day had a lower risk of developing lung cancer than those who ate them less than 5 times per week.Interestingly enough, this result was even true for those individuals who had smoked in the past.One more reason to go for the greens!

North Carolina law does not allow third parties. The law as written was declared unconstitutional and it has not been replaced with a new law, so there is no way to get on the ballot. The Libertarians have gathered the needed signatures under the old law, but since it is unconstitutional I don't see how it can be used to certify a new political party.There is another law suit, filed by the Libertarian Party as was the first, with the Green Party joining in on the process, which will hopefully establish some sort of reasonable signature requirement.In the meantime, Nick Triplett and Ken Davies are running for Mecklenburg County Council in the Democratic primaries. Whether you're on a raw food diet, a low carb diet, or just want to be healthier and eat more greens, raw collard greens are a great alternative to bread and tortillas. There's a chain of raw food restaurants in Los Angeles called Leaf Cuisine and they use collard greens as wraps. (My favorite is the Mediterranean Medley Wrap.) I hadn't thought of using collards as healthy sandwich wraps before trying the wraps at Leaf, but it's really a great idea. A lot of people use Romaine leaves as wraps but collards work much better because the leaves are large and thick and hold together well. One leaf will wrap around your filling several times. Is it me or has it been a little quiet around here recently? I think I've only just gotten back into the swing of cooking again after my little break. Sofie and I finally made the journey up to IKEA in Belfast over the weekend to get all those essential apartment items after nearly a year. We have been threatening to make the trip, since it opened in December, but it just kept getting put off- but we did it in style and spent a whopping eight hours in the store as if to make up for it! Serves 42 1/2 pounds of mustard greens6 slices of bacon cut into 1-inch pieces2/3 cup chopped onions1 or 2 dashes cider or red wine vinegarWaterWash the mustard greens very well and chop or tear into 1-inch pieces. Cut the 6 slices of bacon into 1-inch pieces. Fry the bacon in a pot large enough to hold the greens. Add the greens along with the chopped onions and cook, stirring with wooden spoon, until the greens are coated with the bacon grease. Cover the greens with water and season with salt. Bring to boil and cover the pot, reduce the heat, and simmer until tender. Stir occasionally and add water to prevent scorching. When the greens are the desired tenderness, increase the heat to medium-high, Bring to a boil stirring often and boil off nearly all of the excess liquid. Add vinegar, salt, pepper and sugar to taste and serve hot.

I love polenta ? it is total comfort food and a great base for a variety of vegetables and great with tomato sauce and cheese. My favorite way to make polenta is with sundried tomatoes, olives, cheese and spinach ? put it in the fridge until it gets hard, dust it with flour and pan fry in olive oil. Served with a hearty tomato sauce it is really one of the best things to eat. This time though, I didn’t feel like frying the polenta ? I wanted something lighter but still comforting and flavorful, so I decided to use the polenta rectangles as a base for lasagna. It was really good and something I will certainly make again.
