Both were so unusual for me because I had never made any kind of rugelach or a real tart before. Some people rely only on "tried and true" for company; I rise to the challenge of trying something and getting it right the first time. (Oh, and if you didn't figure it out already, both desserts have something else very important in common: I borrowed them from the Smitten Kitchen. Take a look - I promise you'll become infatuated too!) These rugelach don't look much like the ones typically found on a Jewish table, but I picked them for a couple reasons. One, they just looked so lovely when I first came across them. Her name is Brigid Kaelin and she dubbed her genre "Jew Grass". She is a slightly tone deaf singer who recorded this up beat Hanukkah song titled "Mazel Tonk". 2006-12-22 03:22:02 Oil for frying 1/4 cup warm water 1 tablespoon sugar 2 packages dry yeast ½ cup orange juice 1/4 pound butter 5 tablespoons sugar dash salt 2 eggs lightly beaten 3 cups all-purpose flour1 cup seedless raspberry jam In a heavy pot, heat oil to 350-375 degrees. Combine sugar with water and add yeast. To proof yeast, put in a warm , moist place or put a pot of boiling water in an enclosed space such as the oven or clean, empty dishwasher. While yeast proofs, heat orange juice, butter, sugar and salt in a small pan. When lukewarm, pour into bowl and add beaten eggs and proofed yeast. Stir to mix. Add flour and make into a pliable dough. Knead on floured board or in bowl. Grease bowl and allow dough to rise in a warm ,moist place for about a half hour. Punch down. Cut dough in strips or into circles. Place on greased, floured cookie sheet at least one inch apart. Return to warm, moist place to rise. Allow to rise for 20 minutes. or longer. Fry in preheated deep fat until nicely browned...

Mix all ingredients together except oil. Pour oil into frying pan and heat. Drop potato mixture by tablespoon onto frying pan. Fry latkes until golden brown and then turn and cook other site.
