2008-04-14 01:08:00 The resolutions I haven?t been keeping have a second chance because today marks the start of the Thai New Year, Songkran.Songkran is an ancient celebration of the start of a new farming cycle, and it always falls sometime between the 10th and the 18th of April; this year, the celebration starts on the thirteenth (today!) and lasts for three days.To inaugurate the festivities here at Enlightened Cooking, I offer a Thai-inspired mango and chicken salad with an oil-free dressing. The latter is based on a more traditional Thai sauce made with palm sugar (the original is oil-free as well); it gets its oomph from brown sugar, quickly carmelized in a skillet, and further enhanced with lime and fresh ginger. The inn keeper suggested we stop at Roederer on our way up to Bodega Bay, and I am very glad we did. While there we picked up several lovely sparklers, including my perennial favorite, the 1999 L'Ermitage Brut. Sadly, I have trouble finding that one any more, but I still pick up a bottle of Roederer when we are in a fancier sparkling wine mood.With that in mind, I scooped up this bottle of Roederer 25th Anniversary Brut the second I saw it on the shelf at The Winery in Old Town Alexandria, thinking it would be perfect for New Year's Eve. It cost me $23.99 minus a 10% case discount and had a traditional sparkling wine closure. We drank it out of the stemless Champagne flutes my Dad received for Christmas!On the nose the wine was toasty and nutty. I also found aromas of apples and lemons. 2008-01-24 00:34:00 Gosh, what a crazy year 2007 was!!! 2008 is slightly better so far but not by much...lol.I did manage to relocate back to the UK, I did manage to find somewhere to live despite the flooding leaving the rental market choked with more tenants than houses. I did manage to find part time employment and I am finally finding the time to finish off the 3 stores I started to build before I left the USA. Things didn't turn out exactly as I expected them to but they rarely do anyway. (I should know this at my age :))but it hasn't deflated my enthusiasm or swerved me away from my goals..I just need to work that little bit harder.One thing that has been a positive for me is the online selling forum I created last April. It now has 154 members and continues to grow, despite my sporadic appearances. Verizon says Happy New year by adding 100 hybrids to fleet
2008-01-17 21:08:00 Verizon has decided to save some gasoline and greenhouse-gas emissions by adding 100 hybrid sedans to the company fleet as it replaces old models. The company expects to reduce emissions by 263,000 Metric tons and save 30,000 gallons of fuel annuallyThe chosen model is the Toyota Prius because, the company says, they "can travel nearly double the miles per gallon and emit less than half of the carbon of most traditional sedans." Last year, Verizon began using 13 specially designed service vans with a retrofitted hybrid-engine in Maryland and Texas. The company also uses B20 for service vehicles and vegetable-based lubricants for cable operations.Verizon also said that in 2006 they reduced emissions already by 334,000 metric tons and saved 6,000 trees by reducing the amount of paper used for billing.[Source: Verizon]

Also, be sure to check through the most recent entries--I've added several new ones including my Spring classes, store by store, and a great Spanish Cauliflower Salad. I'll be teaching at a new store in San Clemente starting in February. It's called Villa Cucina (www.villacuina.com) and it's right downtown. The store is filled with all kinds of gifty items as well as cooking utencils. I spent quite a while wandering through on my last visit. The kitchen is in the back and brand new! It's quite a showplace. They offer both hands-on and demo classes. My first class is February 6 and I plan to be there once a month from then on.
