Hibiscus Marshmallows (adapted from Recipezaar)1/2 cup powdered sugar2 Tbsp + 2 1/2 tsp gelatin1/2 cup cold water2 cups granulated sugar1/2 cup corn syrup1/2 cup water1/4 teaspoon salt2 large egg whites2 bags of hibiscus teaOil cupcake pan and dust with some powdered sugar.In a bowl of a standing electric mixer or in a large bowl sprinkle gelatin over cold water and let stand to soften.Boil 1/2 cup of water. To make hibiscus tea concentrate pour it over tea bags and leave covered for 10-15 minutes.In a 3-quart heavy saucepan cook granulated sugar, corn syrup, hibiscus tea, and salt over low heat, stirring with a wooden spoon, until sugar is dissolved. Increase heat to moderate and boil mixture, without stirring, until a candy or digital thermometer registers 240°F, about 12 minutes. Nothing much going on in the kitchen right now as my work life as taken a somewhat unexpected turn.
