They manage to reach that size by growing directly out of the trunk of the tree. Jackfruits intended for cooking are harvested when they are still immature and about the size of a large papaya. When cooked they have a nutty flavor that makes an excellent meat subtitute with a texture similar to palm or artichoke hearts. When allowed to ripen nangka tastes a little sharper than pineapple with a waxier texture and a more distinctive odor.Canned NangkaYour best chance of finding jackfruit in the West is inside od a can imported from Thailand. Be careful to distinguish the ripe jackfruit which is usually packed in sweet syrup. For cooking you will want the green,unripe jackfruit which is ussualy packed in water. Before cooking, rinse and soak the nangka in some warm salt water for 5 minutes or so to dispatch that "canned" flavor.

I have finally cooked up a dish with Jackfruit I have known Bee for a little more than 4 years now and when I learnt that she is hosting next Jihva event, I expected it to be something different. She is always full of surprises and a very thoughtful friend. But when I read the Jihva ingredient is Jackfruit/Chakka in Malayalam/Katt-hal in Hindi, I was excited and then a little disappointed because I wasn’t sure if I would find it at the stores I frequented. I asked at two stores but I couldn’t find it and then things got so hectic that I almost forgot about it. Then few days back I was at this little store picking up some cans of coconut milk and I screeched ‘Jihvaa……&r-squo;. The huge spiky hard exterior which contains sweet golden yellow sheaths has always been one of my favorite fruits. I remember the days when my sister, brother and myself would always find some reason to stay away from volunteering to pare and seed the jackfruit. Once the sticky glue was removed and the golden flesh is separated, we kids would happily go and sit cross legged on the floor next to the big cane basket which would be filled with sweet jackfruits and happily eat one after the other. Amma would sit there peeling sheaths of fruit and tell us her childhood memories where she with her sisters and brothers and some dozens of cousins would gather and have fun while peeling jackfruit from its sticky sheaths and burn the jackfruit seeds in open fire.
