2007-10-13 05:54:00 Red Lobster's Jay's Jumpin' JambalayaIngredients:1 small Red Lobster Cocktail Shrimp Party Platter1 medium onion -- diced2 medium green bell peppers -- diced8 celery stalks -- diced1 can chopped tomatoes - (28 oz) -- with juice1 cup oil1/4 cup flour1/2 teaspoon cayenne pepper - (to 1 tspn) -- or to taste1/8 teaspoon black pepper1 teaspoon salt -- or to taste1/4 cup dry sherry1/2 teaspoon minced garlicCooking Directions:Remove tails from shrimp if desired.Add oil to large skillet.Place onions, celery, green bell peppers, and garlic in hot oil.Saute 2 minutes, then cover and sweat until cooked (5 to 7 minutes).Stir again.Sprinkle flour over vegetables and stir.Cook 5 minutes until roux begins to brown and stick to vegetables.Stir in tomatoes; allow to boil and thicken.Add shrimp, cayenne, pepper and salt.Cook 5 minutes.Add sherry; bring back to a boil.Serve over white rice.This recipe yields 4 to 6 servings.

(Honestly I don't know why I decided to read it.) Tony Sloane was a lower class 18 year old from rural England who decided on a whim to join the French Foreign Legion. This book is a memoir of his 5 years of service in that famous army. To be honest, I found his story appalling. The early chapters relate the intense abuse that new recruits to the Legion are systematically subjected to, while the later chapters relate how the recruits become "cold blooded killers" who routinely subject not only new recruits but also the general population of various African countries to unimaginably horrific treatment. Crawfish Jambalaya
2007-09-05 07:41:00 1 lb crawfish tails1 1/4 cup long grain rice (raw)1 tablespoon flour2 tablespoon salad oil1 cup onion, chopped fine1/2 cup chopped parsley (2ts.flakes)1/2 cup chopped green onion tops1/2 cup chopped celery1/2 cup chopped bell pepper1/4 cup crawfish fat1 1/2 cup water2 1/2 teaspoon salt1/2 teaspoon black pepper1/4 teaspoon red pepper, or to tasteBrown flour in oil to a golden brown. Add onions. Stir constantly until onions are almost cooked. Add 1 1/2 cups cold water and simmer for 1/2 hr. Add crawfish tails and fat. Cook until crawfish turns pink. Add abt. 2 cups of water and bring to a boil. When water is rapidly boiling, add remainder of ingredients. Stir to blend and cookon low heat covered for abt. 1/2 hr. or until rice is tender. Five minutes before serving, use a 2 prong fork and fluff up jambalaya so that rice will have a tendency to fall apart.

The first time, it was a disaster due to the fact that I didn't have a big enough pot to make it in, didn't have any nice Chorizo and ended up burning it because I couldn't stir properly without it going everywhere. The next time, it came out much better, although I didn't have a charged camera to document it properly. This time, I made every effort to get everything together, although, I didn't get it ready in time to get any decent daylight to get a good shot with my camera.The original inspiration for my recipe was from Chuck's Jambalaya on the Gumpo Pages website.
