Sometimes, you just want to eat something now. I’ve decided to offer a mini-post every once in a while, for a dish that comes together incredibly quickly, or else is so easy to make that no recipe is required. Here’s today’s ”Flash in the Pan.”         Well, since my back is still a bit sore, I’m opting for a “flash in the pan” today.  Hmm: sore back. . flash. . .does that make this a “flash-back”? Sorry all for the long delay between posts, we've been busy bees trekking back and forth to Atlanta for Easter and wedding planning. This entry is a bit of a round-up of what I've been eating this week... last Friday turned out to be a "snow day" me. Because I work in higher education, our campus sometimes closes when the weather gets too rough. Let me tell you, it's a great feeling to receive a phone call from your boss early in the morning, telling you to go back to bed because campus will be closed. :) In celebration, I treated myself to a pancake breakfast! I chose this recipe for low-fat whole wheat pancakes over at Vegweb.com. I took their suggestion of adding fresh blueberries into the mix, and I couldn't resist adding a few more after the maple syrup had been poured. Between going to my parents’ house for the weekend of Christmas and then back up to NYC the following weekend for New Year’s Eve, I’ve barely been home. In some cultures, it's traditional to eat lentils on New Years day for good luck, but I decided to get my lentil luck on a little early early and end 2007 off right. I found this recipe on epicurious but changed it to add in some greenery in place of some of the sausage. The kale went really well with the dish and it's definitely something I'll make again. It's the makings of a new year's staple, I think!For the cheese in this dish, I used an organic Parmesan that I bought at a pretty amazing Vancouver market, Tosci & Co. It's the oldest Italian market in Chinatown (and I'd venture to say in this whole city) and I had always been afraid to step inside since you have to ring a bell to be let in. I’ve always liked the combination of white beans, kale, and butternut squash, but I’ve only seen it as a stew – kind of boring. My recent culinary solution to everything is pizza, so I figured that these ingredients would be great on a pizza. I made a version of this a few weeks ago, and while it was good, it wasn’t quite right. I thought about it for a while, came up with a solution, and, being the easily distracted person I am,never got around to it. 2/3 c. fresh raw cranberries1.5 lb fresh kale, washed and torn1/2 c. fresh chopped collards2 T. virgin coconut oil or extra virgin olive oilsea salt and pepperAdd coconut oil (or olive oil) to your pan and turn to medium high heat. I sauteed these in my cast iron skillet which I am using to try and increase my iron intake for my anemia (more on this issue later). Once the oil is melted, add the torn kale leaves and collards to the pan. Sprinkle over the sea salt and pepper while stirring the greens. Saute over medium heat for about 3 minutes until the greens are brightly colored and soft. Add the cranberries and stir. Continue to cook for another 2 minutes or so. Serve hot with a squeeze of lemon juice if desired. These make a great and easy low carb vegan side dish for the holidays.

This is a easy and inexpensive way to get the maximum benefit from your leftovers. It is always better to get your vitamins and minerals from a natural, whole food source rather than pills. Bring the water, bones, and vinegar to a rolling boil in a large stockpot. I boiled my bones for about 45 minutes, but there's no rule as far as I know. I always get questions on what I eat for lunch. Specifically, I'm asked for some quick gluten, dairy, nut, corn, soy, egg, blah blah free low carb recipes. This recipe will last me a few more lunches. I'm a multi-task lunch maker; I either make them while preparing dinner or while cleaning up after dinner. Recipes like this are especially easy since I can concentrate on another meal while it cooks.This recipe obviously has meat since I need a higher protein diet, but it is free of all nuts, corn, soy, eggs, red meat, flax, tomatoes, gluten, wheat, and dairy (and many other foods I can't think of at the moment). This is an improv recipe with discounted end-of-the season yellow squash I found at our local co-op. I just started with the basics (beef, spices) and then added whatever we had lying around, like a small bit of cabbage and some salsa left at the bottom of the jar. (I hate that, by the way; I have this need to use up virtually empty containers).
