Lamb Korma and Masoor Dahl

The last time I made a Korma, it went down very well with my sister, so I decided to try again, only using Lamb this time. I modified the recipe a little after reading a few others on the internet, but it's basically the same technique. I also had another go at making Masoor Dahl (Red Lentil Dahl), and although I didn't use Sandra's technique of frying the spices, then adding the lentils and water to that, it did come out a lot better than the previous effort and had a lot more flavour. The main reason I think is because I made a lot less, but used the same amount of spices as last time.Another reason for the difference with the Dahl could have been that I used Asafoetida for the first time in my cooking. Many Madhur Jaffrey recipes list it as an optional ingredient, however, in the Monisha Bharadwaj book I have, she often lists it as an ingredient and has two pages of the book devoted to it. I gotta be honest, this curry was rank. The sauce should have been good - Lloyd Grossman's Korma, but I fear that dude should have stuck to Through the Keyhole, cos he donesn't make good sauces. Incidentally, if ever open an Indian restraunt I shall call it Good Korma.

I gotta be honest, this curry was rank. The sauce should have been good - Lloyd Grossman's Korma, but I fear that dude should have stuck to Through the Keyhole, cos he donesn't make good sauces. Incidentally, if ever open an Indian restraunt I shall call it Good Korma.

Die Hedonistin stellt diesmal das Thema für den monatlichen Kochevent: Curries. In meiner Leihgabe war das Rezept Hähnchen-Korma Malay markiert, das ich heute gleich nachgekocht habe. Kormas sind Curry-Gerichte, die häufig mit Joghurt-Sauce, Sahne oder Nüssen hergestellt werden. Es existieren auch vegetarische Varianten. Für die Zubereitung eines Kormas malaysischer Art ist die wichtigste Zutat die sogenannte "weiße" Currybasis aus gemahlenen Koriandersamen, Kreuzkümmel (Cumin), weißem Pfeffer, Fenchelsamen und weißem Mohn. Um diese ganzen Körner zu mahlen habe ich eine sogenannte Gewürzfolter - hier abgebildet - benutzt. Kormas werden in Malaysia wie in Indien und Pakistan als besondere Spezialität angesehen und sind daher feierlichen Anlässen wie Hochzeiten und Erntedankfesten vorbehalten. Quantity and Ingredient1 1/2 lb. Goat mutton3 Medium onions3/4 c Yogurt4 cloves Garlicpinch Saffron2 t Salt3/4 c Cream1 oz. Almonds1/2 c Oil1 oz. Coriander seed1 t Red pepper (optional)1/2 t Garam MasalaMethodClean, wash and dry mutton.Blend coriander seeds, 1 onion, almonds and garlic.Marinade the mutton in above mixture for 2 hrs.Heat oil and fry the remaining thinly sliced onion. Keep aside.Add the mutton and fry until the liquid dries up.Add 3/4 c hot water and simmer until the meat is almost done ( 3/4 cooked) OR pressure cook at 15 psi for 20 minutes. Reduce pressure.
