Leg ze in 'n pan en vul deze met water tot de bietjes ongeveer tot de helft onder water staan. Kook de bietjes 40 minuten tot 1 uur totdat ze ook vanbinnen helemaal zacht zijn. Bietjes af laten koelen en ondertussen de cocosmelk en de kruiden in ( het omgespoelde ) pannetje doen. Zachtjes opwarmen zodat de kruiden in de melk kunnen trekken, maar niet laten koken. Dan gaat de smaak van de cocos verloren. Als de bietjes zijn afgekoelt in blokjes van gewenst formaat snijden (bijvoorbeeld reepjes van 2x1 cm) en bij de melk voegen. Het geheel even op ’n zacht vuurtje laten staan, zodat de smaak goed in de bietjes kan trekken. Serveren met rijst en bijvoorbeeld linzencurry van dupuis linzen (zie foto).
