It is Day Three of the Great Big Squash Up and today's lunch, butternut squash lasagne, comes to us courtesy of Ed Bruske Lane from The Slow Cook. Ed lives in Washington DC, a mile from the White House. On his blog is his manifesto, like a protestor's placard, railing against all thats wrong about modern processed junk food. "Reject fast food! Reject waiting lists at over-hyped, outrageously expensive restaurants! Reject food out of season! Sit, eat drink. Enjoy good food made by caring hands. Enjoy food eaten slowly, in good company." Es gibt Tage, da klappt außer den Türen nichts. Eigentlich wollte ich dem Segelnachwuchs eine frische Gemüse-Lasagne präsentieren, aber wegen Krankheit des Betreuers und diverser Kinder mussten wir die Lasagne selber essen. Das nachfolgende Rezept habe ich pi-mal-Daumen auf 4 Personen heruntergerechnet. Die Lasagneblätter war natürlich frisch und selbst hergestellt. Die frischen Lasagneblätter haben den Vorteil, dass sie passgenau auf die Schüssel zugeschnitten werden können, im Gegensatz zu getrockneten. Hat uns gut geschmeckt. Und statt des Ricottas bzw. For one, I think there was too much pasta in the last one. Foodfreak mir dieses Rezept mit der Bemerkung, vielleicht sei das ja was für mich bzw. meine Herren, zugeschickt. Die Herren sagten nicht nein und so wurde es natürlich ausprobiert. Natürlich habe auch ich das Gericht schon am Abend vorbereitet. Wie hier bemerkt, ist dann eine Garzeit von 6 h auf "low" zu lang. Ich habe die Garzeit auf 5 h reduziert, aber auch hier waren die Nudeln etwas zu weich. Allerdings habe ich morgens vor Arbeitsbeginn keine Muße, die Lasagne zu schichten. Beim nächsten Mal werde ich die Garzeit eben noch weiter reduzieren, leider habe ich in diesem Forum noch nicht den richtigen Tipp gefunden. Een niet zo snel recept zo op de zaterdag, maar wel lekker. Bak in een hete wok 150 gram dobbelstreentjes ontbijtspek knapperig. Doe hierbij 1 in blokjes gesneden kipfilet en bak dit bruin. Dan kan je er 1 fijngesneden ui, 1 fijngehakt teentje knoflook, 3 gesneden stengels bleekselderij en 250 gram in plakjes gesneden kastanjechampignons erbij doen. Bak dit mee tot de champignons al het vocht hebben opgenomen. Doe er dan 125 ml kookroom toe en warm dit even goed door. Maak ondertussen de kaassaus door 30 gram boter te smelten en doe als de boter gesmolten is er 30 gram bloem bij. Dit wordt nu een grote klont, roer er dan beetje bij beetje 300 ml melk erbij (hoeveelheid is afhankelijk van de gewenste dikte saus). Haal de pan van het vuur en doe er dan 100 gram geraspte kaas door en laat dit smelten. Bak in een wok 75 gram dobbelsteentjes ontbijtspek, als dit krokant is voeg je er 200 gram gehakt bij. Rul het gehakt bruin en voeg dan 1 fijngesnipperde ui, 1 fijngehakt teentje knoflook, 2 gesneden stengels bleekselderij en 1 fijngesneden prei. Roerbak dit kort mee en voeg dan 1 blik gepelde tomaat toe. Dit laat je even pruttelen terwijl je een kaassaus maakt van 30 gram boter en 30 gram bloem en 350 ml bouillon. Smelt de boter voeg er de bloem bij en bak dit kort mee. Dan ga je er beetje bij beetje de bouillon toevoegen tot je de gewenste dikte krijgt. Ondertussen blijf je heel goed roeren, anders krijg je klonten! Haal de saus van het vuur af en roer er nu 100 gram geraspte kaas door. Breng het op smaak met zout en peper. Doe nu in een ovenschaal een laagje gehaktmengsel dan een laagje lasagnebladen, weer een laagje gehaktmengsel, laagje lasagnebladen en overgiet het dan met de kaassaus. Eigenlijk geheel tegen mijn principes, tegenwoordig dan… heb ik dit keer een potje pastasaus gebruikt. Zonde om het potje weg te gooien en het moest gewoon eens op voor dat het over datum ging… en uiteindelijk is de lasagne erg lekker geworden, vond de smaak van deze pastasaus (Super de Boer Pastasaus Picante) niet te zoutig of te overheersend wat veel dingen uit potjes en zakjes wel hebben… Bak 300 gram gehakt rul, als het bruin is voeg je er 2 fijngehakte teentjes knoflook bij, 2 fijngesneden rode uien, 1 geraspte wortel, 1 fijngesneden gele paprika en 2 stengels bleekselderij (gesneden). Bak dit goed door tot de groenten wat zachter worden. Doe er dan het potje pastasaus picante van Super de Boer bij. Laat dit op een laag vuurtje pruttelen. Maak dan een kaassaus. Kook 500 ml runderbouillon van 1 bouillonblokje. Smelt 30 gram boter met 30 gram bloem, als het gesmolten is doe je er beetje bij beetje de bouillon bij onder voortdurend roeren. An Kochbüchern kann ich ja schlecht vorbeigehen. Schon gar, wenn sie zum Sonderpreis angeboten werden. Deshalb ziert dieses Kochbuch schon seit Anfang der Sommerferien mein Kochbuchregal.
