2007-12-02 03:23:00 We made latkes and kugel from VEGANOMICON the other night. I thought they were both fantastic recipes - the latkes were delicious with both apple sauce and vegan tofutti sour cream. The kugel was alright - it was pretty dry but I think it's supposed to be that way. Maybe we should have used different noodles? Potato Latkes for Hanukkah
2006-12-22 03:22:02 Serves 66 Potatoes 2 Eggs 1 teaspoon salt 1/4 teaspoon pepper 1 small onion grated 2 Tablespoons flour 1/4 cup oil for frying Peel and grate potatoes. Mix all ingredients together except oil. Pour oil into frying pan and heat. Drop potato mixture by tablespoon onto frying pan. Fry latkes until golden brown and then turn and cook other site.
