My husband made this bruschetta using what we had in the fridge. From bottom: French bread, olive oil, chopped garlic, pepperoni slices, diced fresh tomato and shredded mozzarella cheese. Put in the oven at 425 and bake for a few minutes.

I put some leftover sambal sauce to good use tonight. I deep fried pomfret first. Then cooked up more onions and garlic and added the leftover sauce to create a spicy sauce for the fried fish. I must say that deep frying is hard, messy work. I don't think I will be deep frying for a good while.There's just no good way to present cooked whole fish!Notice there are still squid in the sambal!!I have to say that I would have preferred to steam the pomfret as it was really fresh but David likes spicy food. I could have vetoed him but seeing that I have sambal left, I decided to put it to good use.For vegetable, I stir fried some celery with shrimps. Soy sauce just wouldn't be the right complement so I added a dash of sea salt instead and it was good to go. I think I've developed an instinct when it comes to cooking!Stir fried celery with shrimps

Though I am immensely interested in cooking something nice and healthy for myself over weeknights, its almost always never possible. Simply because I am lazy or blame it on tiredness. In such situations, there is a place that we order take out from called Surabhi Restaurant. Once, I ordered tandoori chicken kabab as an appetizer for dinner. There was quite a lot leftover and I just stashed it in the fridge, thinking I will deal with it the next day.Around 5-6 pieces of frozen tandoori kabab stood staring at me next day morning and I briefly looked at the vegetable tray only to find some good old (literally!) potatoes in there. I already used this same photo at image - ination, my 365 blog, but I liked it so much (plus I haven’t really gone anywhere today) I thought I’d use it here too. If you look closely you can see something written on the pizza box… those are lyrics to a song I heard on the radio at the restaurant. I wanted to remember them to look up later, which I did thanks to writing them down. The inventory… pizza, as mentioned above, milk and chai mix, chinese food, and tomato soup. I ate the leftover Thai food that had been in there for lunch today. Tasty. Tomorrow we pack it up in Atlanta and head to Philadelphia. It’s been beautiful here… blue skies, warmer temperatures. Dinner! Grilled radicchio, sauted shitake mushrooms, sauteed dandelion greens and swiss chardIt seems like so long ago that I went to the Farmer's Market and came back with bags (earth friendly reusable - of course) of fresh veggies and boat shrimp. But it has really been less than a week. I went through the refrigerator yesterday and got out all of the food that remaining from last Wednesday's trip and knew that was about to be dinner! I read that astonishing figure in the paper today...I found it really depressing! As I mentioned in my "Poule au Pot" post last week, I was brought up on saving and re-using leftovers mroe often than not. And without going to extremes like keeping 1/4 of a dryish lemon in a Tupperware for months in the fridge (don't laugh, my mum does that)  we do pretty well I hope.One dish I find brilliant to finish leftover roast beef is my mum's tarte a la viande (meat tart) . It was a regular at the dinner table on a Monday night. Most the dishes here were cooked using leftovers. Not leftovers leftovers. *blur* We don't take leftover food. The ingredients used were part of the ingredients used for other dishes. I didn't want to waste them so I used them here.Let's see what we have here .....Snakehead (fish) marinated with a teaspoon of light soy sauce, wrapped with a basil leaf, dipped with batter and pan fried. Crispy on the outside and juicy inside with a light aroma from the Basil. Reserve egg ... have you seen white egg yolk and yellow egg white? No egg white were used here. Got my son thinking which bird lay this type of egg. Nah, he knew I made it!These flowers were really Squid. The squid was cut into thick rings and sliced close to the edge then stuff with minced pork with some fish paste. Decorate with vegetable and steamed till cooked. Add a pinch of salt before you steam it if you like. The leaves here were (slightly) pan fried Basil. Crunchy!
