If you are like me, sometimes you get really excited about that and can’t help but scoop up big bunches of fresh herbs when you see them at the Farmers Markets or the grocery store. Then you end up throwing half of them away after they have sat rotting in your fridge for days on end…well that is just no good. Herbs are a wonderful way to get more greens into your diet and many of them also have other health properties - not to mention they improve the smell of ones breath! So what does one do with an over abundance of herbs? On a recent trip to the Farmers Market I procured rather large bunches of Arugala, Basil, Mint and Dill. I brought them home, filled up some vases with water, stuck the herbs in the vases and put them promptly into the fridge to use whenever the mood took me. 2008-04-29 06:30:00 In the raw food community, raw nut and seed cheese is a staple. Nut cheese is a non-dairy cheese made from raw nuts while seed cheese is made from raw seeds. Commonly used nuts include cashews, pine nuts, macadamia nuts, and almonds, while sunflower seeds and pumpkin seeds are often used to make seed cheese. These cheeses are a great alternative to real cheese and can be used on vegan nachos, pizzas, and many other dishes. It might sound strange, but nut and seed cheese tastes delicious if made right and is a godsend for people who can't eat dairy products. Well even with all my recipes that week, I still couldn’t use all the greens, so I washed some and stored them away in the freezer. I also had leftover tomatoes in juice from the Imam Bayildi and then there was the issue of random pieces of veggies in my vegetable bin. I also had purchased a small piece of lamb shoulder at the store, perfect for soup. I went into the pantry and found a can of cannellini beans and a package of rice pilaf. This menu was designed to travel well so that one can bring these dishes to a picnic, summer BBQ or family gathering. I have always loved crostini with white beans and I wanted to create one that would stand strong in terms of taste by adding fried rosemary and prosciutto. INGREDIENTS: 1 can cannellini beans ¼ lb of ground prosciutto 1 clove of garlic ¼ cup of olive oil drizzle of truffle oil 1 ½ tsp rosemary salt & pepper to taste 1 baguette METHOD: Preheat oven to 400 F. Slice baguette on a diagonal at about ¼ inch slices. Lay pieces of baguette on a cookie sheet and with a pastry brush, brush them lightly with olive oil.
