Or, at least it wants to spring.April's first Saturday is when people from far and wide descend upon Elmira, Ontario to celebrate all lovely mapley goodness at The Elmira Maple Syrup Festival. As I wrote in a previous post, I head up every couple of years and load up on the sweet stuff. Yesterday I got up early (for a Saturday) and headed in with a friend.I'm always a little surprised at the variety of food available there. Yes, there's maple candy, maple taffy, maple fudge, maple butter, maple glazed goodies (buns, funnel cakes, etc) and of course) maple syrup on pancakes. But there's also back bacon sandwiches, sausages, turkey, souvlaki, jams, jellies and all sorts of things. I'm guessing this is because I get ready for work in about one minute flat in the morning and never have time to eat a real breakfast at home... other than on the weekend. I saw this recipe for Whole Grain Pancakes with Wild Blueberry-Maple Syrup in February's Bon Appetit. I drooled. Stiroccasionally, until the mixture comes to a full boil. Let it boil for 7 min.Turn the heat off and let the syrup cool for 15 min. Add the maple flavoringand stir. When completely cool, transfer the syrup to a covered plastic orglass container.VARIATION: For syrup with a butter flavor, just add 3 tbsp. of butter to themixture before heating. 2007-04-16 05:00:00 I mentioned Two Old Saps maple syrup producers yesterday which is a great place to buy syrup but difficult to visit because of their location. However, there are many maple syrup producers all over Vermont who are well geared up for visitors and in fact welcome them either seasonally or year around. Our favorite recommendation is Morse Farm located a little north of Montpelier. They even have a small theater set up to show the entire process from tapping the trees to bottling the syrup. They also have a wood fired evaporator boiling down the sap so you can see the process in person. There are guided tours of the sugar house and knowledgable staff on hand to answer questions. And there is a store with all their products plus other Vermont products and souvenirs. We were buying it from some neighbors but their evaporator pan (used to boil down the sap to make syrup) cracked and they don't have the money to get another one. Further, they "aren't getting any younger" and are therefore thinking this is a good time to retire from the hard work of making VT maple syrup.
