Tea Rubbed Maple Scallops
2008-05-27 16:21:00
This spice rub was inspired by Ming Tsai the Boston chef who does creative spins on classic foods using his Asian backround.I found that having a few flavored teas in your pantry"s cabinet not only adds variety to tea timebut it can add depth and variety to your recipes as well.It is amazing how much scallops we sell on the East Coast.A bountiful treat from the Atlantic, these sweet bi-valve mollusks find themselves in many preparations-Chowders, stuffings, appetizers, entrees and pasta dishes are all examples.Try to find diver scallops, these are larger and of better quality. Some scallops are harvested by dragging the bottom of the ocean floor. The dragging process is bad for the botanical growths on the ocean floor and has definitelyred flagged future sustainability concerns. Please make wise choices when it comes to choosing seafood and voice your opnion at restaurantsand markets you frequent.Baby steps like this can help availibility for generations to come.Tea Rub2 tablespoons va...
Toronto Maple Leafs Talent Development is Abysmal
2008-05-24 21:50:00
In my honest and ever-important opinion, Greg Gilbert should be fired for choosing to play Scott Clemmensen ahead of Pogge. It was an absurd decision and one that could only be allowed to happen under this franchise. Someone - i.e. Cliff Fletcher - should have stepped in and made sure Pogge was between the pipes. What you have here is another, might I add shining, example of Toronto Maple Leafs player development. Textbook MLSE development. You know how we do.

Lamb Racks with Mustard Maple Glaze and Roasted Vegetables

Momiji (Japanese Maple)
2008-05-15 02:56:00
Kiyomizu Sake bottle (Tokkuri) Kiyomizu Sake Cup (Choko)Japanese have always appreciated the changes in seasons. Each season has unique characteristics, but autumn is one of the most favorite seasons. During autumn many Japanese people visit the mountains to see the trees? changing colors. Two of the most popular areas are Nikko in Kanto and Arashi-yama in Kyoto. The most common broadleaf tree is Momiji. The name comes from ?leaves turn red?. The shape is unique and like a baby?s hand. Momiji has yellowish green buds in the spring that turn to dark green in the summer. The green changes to yellow briefly, and then red in autumn. Each color change has its own elegance.Momiji pattern is used for Kimono, pictures, pottery and other traditional crafts. Momiji and Sakura (cherry blossoms) patterns are the most prized here.Is maple in your country also very beautiful?

Maple Shortbread Cookies

These cookies are a fantastic addition to tea, or coffee in the afternoon.  In fact, they are great for an after school snack. Will Skyline High School Change the Intersection at Miller and Maple Roads?
2008-04-30 06:44:00
This quiet Ann Arbor intersection will likely see some changes in the near future. The recently completed Skyline High School is just one mile north of the currently vacant Miller/Maple intersection.  However the fall beginning of school promises to change that status.  There are already plans for an office/residential complex on the northwest corner and a new retail space is already almost ready on the southwest corner.  Marathon Oil is taking bids for the vacant gas station.  There is no decision yet on whether or not that parcel should remain a gas station and any bidders must submit their business intentions.  There are also plans out there to create a large medical office building with some residential spaces above.  The prospective Medical tenants are already lining up.The retail space on the southwest corner will likely become one or several food users however with only 11 spaces, parking is an issue.  Across the street, the Miller Maple Plaz...

Japanese Maple!
2008-04-28 06:13:00
Last week, I got excited when I saw a Japanese maple in the full sun. It was next to a water source so we figured that was the secret (you can’t really see the water bubbling over the rocks here). That garden had a tiki that was pretty funky. But the one you can see in the bottom left has been in my family for at least 40 years, long before tiki was hip. He goes well with the rocks but I’m struggling with the Asian theme meshing with the country garden scene we have happening here. How lucky that our favorite nursery Newell’s is having a big sale (I’m LOVING this recession!), making the maple affordable. Twenty five percent off, whoo hoo! So loads of cocoa mulch and our tomatoes are in too. Now, if we could only block out my neighbor’s motorhome, also on the left, I’d feel in complete control of my domain!
Sean Avery: Super Douche, and Hopefully Future Maple Leaf
2008-04-15 07:51:00
If you were to look up "douche bag" in the (urban) dictionary, you'd find a picture of Sean Avery. He is the ultimate douche. The lowest of the low. I hate him. And that's why I want to see him become a Toronto Maple Leaf.Avery's been all over the news for his most recent antics on Sunday night against Martin Brodeur and the New Jersey Devils. If you haven't seen Avery's latest douche-baggery, check it out, because it's pretty unbelievable what this guy is capable of.Pretty wild shit, eh? Not only did Avery screen Brodeur in a way no player ever has before, he ended up scoring on Marty after the fact. Salt in the wounds, man. And, as the picture above indicates, there isn't a worse goal-scoring celebration out there than Avery's. Dude is incorrigible. The only people who can stand Avery and his shenanigans are his teammates and New York Rangers fans. Avery's the type of guy everyone hates. Unless he plays for your team. Then you love him. He is Darcy Tucker, circa 1998, on s...
2 gingers maple-glazed salmon
2008-04-14 16:08:00
Note: French version is on La cuisine de BabethCharity: don't forget to check: Help beat sarcomaUntil recently, in my cooking world maple syrup was only good for drowning pancakes at breakfast. I know it's not particularly healthy since it's pure sugar but I love to sponge maple syrup with my pancakes. After few trips to Quebec with Mathieu I discovered a lot more in the maple syrup department. Maple syrup can be used on smoked ham, on roasted meat or fish and even to sweeten yogurts. I'm even thinking to use it as replacement sugar in muffins.Micheline, Mathieu's mother-in-law, in a way my second mother-in-law, sent me by emails few typical Quebec recipes. Here, I'm presenting you the first one I tried at home: 2 gingers maple-glazed salmon, it's a keeper!Ingredients:-2 skinless salmon steaks-1/4 cup of maple syrup-3 tbs of fresh grated ginger (alternatively use powered ginger)-3 tbs of lemon juice-1 tbs soy sauce-marinated ginger (can be find at any Asian supermarket)-sesam...
Maple-Chipotle Turkey Tenderloin
2008-04-09 03:18:00
Peas and carrots. Chocolate and peanut butter. Maple and chipotle. Some foods are just such natural pairings, you really can't go wrong. I love sweet and spicy flavors together, and when I came across this recipe for Spiced Pork Tenderloin with Maple Chipotle Sauce in the March issue of Cooking Light, I thought it sounded delicious. I just had one little problem that made me a bit sad - I don't eat pork, so I couldn't make this. (Well, that's kind of a lie - I do eat things that contain pork when I am out of the house, but I never bring things like bacon, pork chops, etc into the house and cook them. I have absolutely no clue how to cook a pork chop!) Then I recalled the turkey tenderloins in my freezer, and knew this would be a great way to prepare them. I suppose there's not much need for me to copy and paste the recipe since it's linked above. I pretty much followed it exactly, just replacing the pork with turkey and cutting the amounts in half because I used just one 1-lb ...
Bacon & Maple Syrup Make Some Tasty Lolly-Pops!

Food Fest: Elmira Maple Syrup Festival
2008-04-06 21:43:00
Spring has sprung. Or, at least it wants to spring.April's first Saturday is when people from far and wide descend upon Elmira, Ontario to celebrate all lovely mapley goodness at The Elmira Maple Syrup Festival. As I wrote in a previous post, I head up every couple of years and load up on the sweet stuff. Yesterday I got up early (for a Saturday) and headed in with a friend.I'm always a little surprised at the variety of food available there. Yes, there's maple candy, maple taffy, maple fudge, maple butter, maple glazed goodies (buns, funnel cakes, etc) and of course) maple syrup on pancakes. But there's also back bacon sandwiches, sausages, turkey, souvlaki, jams, jellies and all sorts of things. I try and pace myself, but I'm not that good at it--had the pancake breakfast and then later I just HAD to get a backbacon sandwich...while I was waiting for a nice fluffy bun crammed full of yummy yummy bacon, that booth ran out of sausage...70kgs (150lbs) in three hours...Here are s...

Zeezibahkwat - Maple Sugar Bush (Syrup)
2008-03-24 06:03:00
History of Maple Sugar and Maple Syrup   The first people to make maple sugar were the Native American tribes of the Northeast, who used it as a flavoring for breads, stews, teas, and vegetables. Native Americans also traded maple sugar for other products they needed. The French and English colonists were delighted with the taste of maple sugar, and eventually they learned the process of making it from the Native Americans. Maple sugar became the principal sweetener in North America. (Native Americans and colonists could not store maple syrup easily, so they used the dry form.) When cane sugar was introduced, New Englanders still preferred maple sugar because it was much cheaper and did not involve West Indian slave labor. Once a staple of American life, the sweet products of the maple tree are now specialty items. Over the years, the price of cane sugar fell dramatically, and now cane sugar is the variety most Americans use every day. The popularity of maple syru...

Maple Tapioca with Pralines

Artisan Maple Oat Bread (Gluten Free)
2008-03-18 15:16:00
This may be my favorite gluten free bread recipe yet! It is simple and easy to mix (with your stand mixer) and creates a beautiful, evenly risen loaf. The presentation is lovely and the bread is moist, soft, tender, and sweet. Michael said this was as good as the sweet King's Hawaiian bread we used to eat on occasion before I went gluten free.Maple syrup is one of my favorite sweeteners. It is expensive so I don't use it often for baking. The best type of maple syrup to buy is grade "B" because it is less processed than grade "A." It is also thicker with a more rich, decadent flavor.I've been working on this loaf for several weeks and I am very proud of the final product. I will be making this loaf often. It's actually a very quick yeast bread to make. It bakes in about 40 minutes and only takes about an hour of rise time in a closed, slightly warmed oven. The next time my mom-in-law comes over for dinner, I will have this loaf baking in the oven! The wonderful aroma this bread ...

Maple-Walnut Cookies
2008-03-15 03:51:00
Despite my constant whining about winter (When, oh when will it finally be over?? How much longer must I endure this bleak, bleached, desolate wasteland of frigid snow? How many more days must I suffer through this torturous, crystalline hell on earth? ), I fully recognize that the season Below Zero does have at least a few minor benefits.  For one, you get to cuddle closer to your honey while watching Battlestar Gallactica or a DVD.  You feel justified when you stay home from that excruciatingly boring dinner meeting (”but the roads were impossible. . . “).  You have a legitimate reason to cover up your all-time high weight of mumblemumbleundisclosednumber pounds and wear loose sweaters. And then, when the season finally begins to wane, you have the opportunity to eat fresh maple syrup. Although technically, the trees aren’t tapped until early spring, in Canada you can purchase real maple syrup year-round (yay!). When I first changed my diet ...

Lamb Leg Steak with a Maple Chevre Shiitake Sauce
2008-02-22 08:56:00
I have to try and catch up I have made so many recipes lately and quite a few from recipezaar, and am getting behind on posting them all. I guess I will start with this zaar members recipe. I tried this one the other night, it was really good, I was very skeptical of how the flavours would come together, I only ended up making this as other reviews had stated it was good. Whilst I am sure it will not be for everybody I thought it was really yummy I did make this with a lamb fillet as this is what I had on hand and I also used less goats cheese as I felt the entire amount would be too overpowering. Anyway if you would like to read the other reviews of this recipe please click here.Ingredients4 (1/2lb) Lamb leg steaks10 Ounces shiitake mushrooms1 lb Chevre cheese (or other goat cheese)4 Ounces maple syrup4 Ounces capers2 Tablespoons olive oil , to saute1 Sprig rosemarySalt and pepper1/4 Cup flour1/4 Cup dry white wine (if you can't drink it don't use it)Method1. Sweet, sticky maple wax
2008-02-20 16:08:00
"Sugar making time was looked forward to with pleasant anticipation by the young people," writes George Benson Kuykendall in a family geneaology published in 1919. His uncle, Isaac Kuykendall, purchased a 670 acre farm near Huttons, Garrett County, MD in 1881. "It came along in the early spring when there were clear days and frosty nights and pretty hard freezing, but the days were warmer, with sunshine that started the sap flowing. In the groves of 'sugar trees' was the sugar camp, where the sugar makers camped and boiled down the sap. When 'sugar weather' came around, the trees were tapped by boring auger holes in them."Tubes or spiles were then inserted to conduct the sap to the sap trough. The sap trough was made by cutting a small green maple log or stick of wood into lengths two feet long and splitting them through the middle, then digging out the wood on the split side with an axe and adze. These troughs were set under the drip of the spiles to catch the 'sugar water....
