Recipe: Italian Meatballs

Mediterranean Meatballs with Couscous, Chickpeas & Herb Salad
2008-04-03 03:56:00
Sometimes a food blogger feels compelled to post a recipe, even if she does not quite know what else to say, besides ?ta-da!?I planned the last week of meals carefully; not so tonight. By the time the light had gone, the evening was underway and my supper ideas were scarce. I headed to the deep freezer, peered in, and found an excess of frozen ground beef. What to do with that? Something quick, no doubt, but in the best possible taste for a fifteen minute (could I cut it to ten?) preparation. I pulled a pack from the frozen depths and headed to the microwave for a quick defrost.Meatballs suddenly seemed just the thing: undemanding, but a step up from burgers or meatloaf. Once I had gathered what I needed from the pantry and produce drawer?raisins, couscous, a half a container of leftover fresh mint, and a few more bits & pieces?and Nick was playing in another room with Kevin, the kitchen felt transformed to a haven of plain dealing, the tile floor, smooth counters, and utensils ...

Pasta with Turkey Meatballs and...Mozzarella
2008-03-18 04:57:00
OK, so it was really supposed to be Pasta with Turkey Meatballs and Bocconcini, but have you ever heard of bocconcini? Because I haven't, and I consider myself fairly knowledgeable about food. And neither Trader Joe's nor Stop and Shop had heard of it either (nor apparently has Blogger, considering it keeps spell-checking it). So, I figured the next closest thing was mozzarella. And as far as I'm concerned, that worked out just fine. Better than fine actually. It was amazing.I've never made meatballs before, so I wasn't quite sure how difficult they would be. But these were so easy and quick. Just mix the ground turkey, breadcrumbs, parm, garlic, egg, parsley, salt, and pepper in a bowl and then form the mixture into little meatballs. I made mine a little bigger than the recipe said to, but they were still pretty small and cute.Put the meatballs in a skillet with butter over medium-high heat and cook them until they're golden brown all over. Then add 1 1/2 C water and continue...

Spinach Florentine Meatballs
2008-01-17 17:09:00
With its unapologetic green color and earthy flavor, spinach is not a vegetable about which most people are indifferent.Particularly in the frozen spinach category, too many fall into the ?you?ve got to be kidding? category, most likely based on memories of grade school lunches past where the innocent green was boiled to brownish-grey oblivion (I think I can still recall the smell). It?s because of this that I relish the challenge of winning over a larger subset of the population to this healthy, convenient, and, yes, potentially scrumptious, vegetable. If a single recipe can aid in the conversion, it is my Florentine meatballs (the Florentine referring to the spinach and cheese mixed in with the meat). They are tender, delicious, and easy to make?all of my favorite dinner criteria. They work especially well for me and my husband because I can make them in advance, store them in the refriegerator or freezer, and reheat later. You can enjoy the meatballs in multiple ways, too. Experiment time...haha..it's a good thing it worked if not hubby will probably end up spending his time at the "throne" ie; toilet. Well, as I still have the "Kentucky" flour left; this flour is actually for chicken and you are suppose to deep fry it so that it will turn out like the KFC.I made the minced pork into balls and then dipped them in beaten eggs and the flour. Then put them in the oven to bake. Also had grilled sausages, in case, the meatballs ends up in the trash. Anyway, boiled the mange tout, sugarsnap peas, leek and carrots. Then add with gravy. cop sabotaged by wife, she spiked his meatballs with marijuana

Click to enlarge.NY cop says wife spiked meatballs A US counter-terrorism police officer who says he failed a drugs test because his wife spiked his meatballs with marijuana is suing to get his job back. Anthony Chiofalo, of New York Police Department (NYPD), has asked Manhattan Supreme Court to challenge his firing. When interviewed, Anthony Chiofalo made the following statement, "I thought the meatballs tasted funny. I suspected something when I noticed that I was running after imaginary chickens in my backyard in my wife's underwear".That's just funny. Why would he sue the NYPD? He should have sued the wife. It's just not right. This falls into one of things that you should never do. Ever. You don't screw with a man's job. That's what your colleagues at work do, not your own wife. You should not expect that same shit to happen when you at home.He was suspended in 2005 after 22 years of service, for failing a random test. I don't know how these random dope test happen. Are...
KASHMIRI MEATBALLS IN A GRINDLESS GRAVY!

"Red meat is not bad for you. Now blue-green meat, that?s bad for you!" Tommy Smothers Kashmiri Meatballs in GravyKashmiri cuisine or Wazwan has always held a fascination for me by way of how different it tastes. The other day I found an interesting sounding recipe for Mutsch Kashmiri Meatballs at A Mad Tea Party. After browsing the write-up, right up to the last 2 meatballs et al, the mind was made up. This I just had to try, & promptly put it on my agenda of interesting 'must-makes' in the near future! Hesitatingly, with fingers crossed, I even used mustard oil as the recipe suggested. I made this dish a couple of days ago...it was very different & pleasing in taste; surprisingly simple to make . The last 2 meatballs were indeed at a premium!!Love the palette of colours the ingredients made!Must admit that when I read about the 'Grindless Gravies' , SRA's blog event at 'When My Soup Came Alive', I thought, NAH, impossible!! All my cooking life gravies have meant ple...
MEATBALLS
2007-11-16 13:24:00
by Rochelle RatnerIt was what she thought of first when she met her husband. Here's a man with balls. Here's a man fighting to protect their city. Look at those biceps. But he was more than brute strength. And they began a family. Then his firefighter brother was killed at the World Trade Center. Two of his former partners died. He became a detective. He was often late getting home nights. Taxis drove by trailing Cop Shot reward offers. He was more committed to his work than his children, and there would be grandchildren soon. She didn't want to play with them alone. She heard talk about random drug tests. Two or three times a week she cooked him meatballs. And she was a good cook.Rochelle Ratner's latest poetry books include Leads (Otoliths Press, 2007), Balancing Acts (Marsh Hawk Press, 2006), Beggars at the Wall (Ikon, 2006) and House and Home (Marsh Hawk Press, 2003). She is the author of fifteen previous poetry collections and two novels (Bobby’s Girl and The Lion’s ...

:: Italian Meatballs Mood Food Style
2007-10-01 12:48:00
Before I met the lovely Sofie from Sweden, meatballs for me were always associated with Italy. Combined with a thick tomato sauce and soft melt in the mouth pasta, they make a dish which is a staple of the classic Italian mama's recipe repertoire. If I was to name one recipe that is ideal for food therapy its this, there is something strangely yet extremely relaxing about rolling the meat into satisfying little balls and plopping them into boiling hot creamy tomato sauce. Relying solely on the heat of the sauce to cook and infuse the little balls to perfection. The recipe itself is pretty fool proof, and will give you results making you feel like the perfect Italian mama or papa!Mood Food Meat Balls500g of Minced Meat (Pork or Beef)2 Garlic Cloves Minced2 tsp of Dijon Mustard2 tbsp of Tomato Ketchup1 tbsp of OreganoGood pinch of salt and pepperFor the Tomato Sauce:1 Garlic clove chopped finely1 Onion chopped finely2 tins of chopped tomato's1 tsp of Tabasco sauce1 tsp of dried or...

My grandma serves hers a million different ways - with sauce, with bacon and sausage, cut and fried, etc. I decided for my first attempt I would go the easy route and just make it mushy with meatballs and sauce. It turned out great! I think next time I am going to try baking it with some sort of meat and vegetables... stay tuned! To make the polenta, I followed the directions on the back of the Quaker Corn Meal canister:4 cups water1 cup corn meal1 tsp. saltBoil 3 cups of the water (I added chicken bouillon here to create a chicken broth). In a separate bowl mix 1 cup of water, corn meal and salt. Slowly add corn meal mixture to the boiling water, stirring constantly. Once the mixture begins to thicken, turn the heat to low, cover and let cook for 5 minutes.Nick's Grade: A!~Below are recipes for my meatballs and s...

Presto Pasta Nights: Tagliatelle with Mediterranean meatballs in tomato sau
2007-06-02 00:00:00
Yesterday I served the Mediterranean meatballs in tomato sauce with bread, today I served the leftovers with tagliatelle. Pasta offer an important advantage for working mothers: The child bring the water on schedule to the boil, when the mother returns from work. The dish is ready in 10 minutes - including warming up the sauce. Enjoy! I send this to Ruth over at Once Upon a Feast for her Presto Pasta Night. The only rule to participate is to serve any pasta dish, that's what I've done. 14:50: I just discovered that there is a similar recipe from Nigella Lawson Technorati Tags: presto pasta night Save to del.icio.us

Swedish meatballs are one of the best-known Swedish cooking specialties. However, there are so many recipes. Almost all meatball recipes call for some type of extender such as mashed potatoes, rolled oats or breadcrumbs. Less expensive items than meat. My mother ground very well trimmed meat (ab. 300-400 g) in a hand turned meat grinder. She even used to make her own breadcrumbs. She took 4 crisprolls and crushed them with a bottle between two layers of paper. Then the crumbs were soaked in 1 coffeecup of milk for a while to make a crumb paste. Salt, pepper, grated onion and 1 egg yolk were the other ingredients. My meatballs are a lot easier to make. [The recipe can also be used for patties]. Cook and taste one meatball before you bother forming the rest.INGREDIENTS:* 400 g ground meat (ab. 90 % beef + 10% pork)* 2 teaspoons potato starch* ½ dl (50 ml) milk* 1 - 1 ½ teaspoon salt* ½ - 1 teaspoon freshly ground black pepper* 1 egg* butterMETHOD:1.
