This is a really quick easy recipe to throw together that is full of flavour. Be careful with the oyster sauce though I have listed amounts, but if you buy quite a strong brand I would recommend using less, it is a bit like soy sauce with the saltiness of it. 2 lbs ground beef 1 med onion chopped 2 eggs 1/2 cup bread crumbs 1/4 cup oatmeal (quick not instant) 1 1/2 cup Ketchup Preheat oven to 350 degrees. Combine all ingredients reserving 3/4 C Ketchup for topping. Spray a loaf pan or 9 X 13 pan with non-stick cooking spray. Place loaf in pan. If using 9 X 13 pan form into loaf shape about 2 inches thick. Spread remaining Ketchup over top of loaf. Bake at 350 degrees about 1 hour or until juices run clear and ketchup begins to brown. Serves about 6 people.

Serves 82 lb. lean ground beef3/4 C. fresh bread crumbs1/2 C. minced onion2 eggs beaten1 1/2 tsp. salt1 1/2 tsp. ground black pepper3 C. shredded cheddar cheeseketchupprepared mustarddill picklesPreheat oven to 350F. In a large bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper, and mix well. Pat out meat mixture into a 14x18 inch rectangle on a piece of wax paper. Spread cheese and pickles over the meat, leaving a 3/4-inch border around the edges. Roll up jelly roll fashion to enclose the filling and form a pinwheel loaf. Press beef in on both ends to enclose the cheese. Place in a 10x15 inch baking dish. Cover with ketchup and mustard. Bake in the preheated oven 1 hour, or until internal temperature reaches 160F. Let rest for 10 minutes before serving.

Here's a dish I used to make at my last restaurant, Yazoo City, which was located here in Lindenhurst, New York.  Many folks have differing opinions on the subject of meatloaf; the debate on what's the best recipe for meatloaf rages on back and forth between cooks across the land to this very day.  Well, my meatloaf philosophy is as follows--if you feel good about tossing something into the mix then do it!  This is not rcket science, friends, this is the art of self expression through cooking.  When it comes to settling on any particular list of ingredients (other than the meat that is) I feel that experimentation should be the order of the day.  I also have a theory that it is this very devil-may-care attitude that's responsible for every family in America having their own unique recipe for meatloaf!  So throw caution to the wind and join the crowd!  (Whew!)  Here's my favorite recipe for meatloaf!

So, I created this delicious nut-based meatloaf with spinach and tangy sun-dried tomato ketchup to show, you can have comfort food and still eat raw.I'm really proud of this dish because it helped me conquer a fear of mine. I can be a bit of a perfectionist when it comes to just about everything I do. Often I try to reach for the stars, falling short alot, but I keep reaching. I'm not perfect. Some Food For Thought - I thought I would share a recipe with you since the July 4th holiday is over and I gained some new insight on serving it up and making some good meat sandwiches. A new twist to the classic favorite, this easy meatloaf is tasty and fun! Essential Ingredients Ground Beef: 1 lb. Egg: 1 Cheddar Cheese Gold Fish Crackers: 1/2 cup Taco Seasoning: 1 pkg. American Cheese: 4 slices Salsa Okizoo Hamburger Preparation Combine hamburger, egg, cracker crumbs, and taco seasoning and mix well. Place half of the meat mixture into loaf pan. Place 3 slices of cheese then top off with remaining meat mixture. Cover top with generous amount of salsa and bake in 375-degree oven for about 35 min.
