Baja Fresh Mexican Grill is located in downtown Berkeley, California at 2237 Shattuck Avenue at the corner of Kittredge. It's down the block from the California Theater, so it's a great place to grab a bite before a show. The phone number is 510-548-4444.Although this is a chain/franchise Mexican restaurant, it's very good. Everything really is fresh; they cook your food on the spot. And it's inexpensive.The online Baja Fresh menu doesn't show the prices since the menu is for the whole country, but you can see the food items they offer. I can usually get a very filling lunch for less than $5 (without a drink). They also have a nice little salsa bar.This is one of my favorites in the Berkeley Restaurant Guide because the food is good, fresh and inexpensive, and the service is quick.

1 lb. lean ground beef1 (16 ounce) can refried beans3 teaspoons chili powder3 teaspoons oregano1 (8 ounce) package manicotti shells2 1/2 cups water16 ounces picante sauce16 ounces sour cream1 cup shredded monterey jack cheese1/4 cup sliced green onions1/4 cup sliced ripe olivesIn bowl, mix uncooked beef, beans, chili powder, and oregano. 3 cups all−purpose flour2 teaspoons baking powder2 teaspoons salt3/4 cup shortening3/4 cup hot waterCombine the flour, baking powder, and salt. Either by hand or with a pastrycutter, cut in the shortening till the mixture is crumbly. If the mixturelooks more floury than crumbly, be sure to add just one or two moretablespoons of shortening till it is crumbly. Add about 3/4 cup hot water tothe mixture, or just enough to make the ingredients look moist. With yourhand or a large fork, knead the mixture making sure to rub the dough againstthe sides of the large mixing bowl to gather any clinging dough. If thedough still sticks to the side of the bowl, add a couple more tablespoons offlour until the dough forms a soft round shape. The dough is ready to rollout now, but it is best to let it rest. 1 (16 ounce) jar salsa1 (10 ounce) package frozen chopped spinach, thawed and drained2 cups shredded Monterey Jack cheese1 (8 ounce) package cream cheese, diced and softened1 cup evaporated milk1 (2.25 ounce) can chopped black olives, drained1 tablespoon red wine vinegarsalt and pepper to tastePreheat oven to 400F.
